DRY RUBBED AND ROASTED LAMB RIBS
Steps:
- For the cure: Combine the salt and pepper in a bowl. Generously cover the ribs with the cure. Place the ribs, uncovered, on a rack set in a baking pan or a tray. Marinate for 24 hours in the refrigerator. Rinse the ribs well under cold water, and pat dry thoroughly.
- For the dry rub: Toast the peppercorns and fennel seeds in a dry saute pan until fragrant, 2 to 3 minutes. Using a mortar and pestle or spice grinder, grind the toasted spices. Combine the ground peppercorns and fennel seeds with the paprika, dried sage, dried thyme, granulated garlic, onion powder, sugar and bay leaf powder in a bowl, stirring to combine thoroughly.
- Preheat the oven to 275 degrees F. Line a baking sheet with foil and scatter the onions on the foil. Sprinkle the dry rub liberally over both sides of the ribs and place them, bone-side down, on top of the onions to prevent sticking. Add the vinegar to the pan and sprinkle the fresh thyme leaves over the ribs. Top with another piece of foil and crimp the edges together with the bottom piece of foil to create a large foil pouch. Roast until the ribs are tender and the meat has shrunk back from the bone, approximately 1 1/2 hours.
- Pour the pan juices through a strainer to remove the onions. Skim the fat and simmer the juices with the chicken stock in a saucepan over high heat until reduced by half.
- Cut the lamb racks into double rib portions, drizzle lightly with olive oil and sprinkle with a little salt. Crisp the exterior of the ribs on a hot grill or under a broiler for 5 minutes (meat-side only), basting occasionally with the reduced pan juices. Serve drizzled with the apricot mint chimichurri.
- Place the apricots and 1 teaspoon honey in a heat-proof bowl and cover with boiling water. Soak the apricots for 10 minutes to plump. Remove the apricots from the hot water and roughly chop.
- In a food processor, combine the mint, parsley, cilantro, vinegar, lemon zest and juice, garlic, adobo sauce, cumin, paprika, salt, black pepper, red pepper, remaining tablespoon honey and olive oil and pulse until finely chopped. Add the rehydrated apricots and pulse until the consistency resembles a thick chunky sauce. Cover and store in the refrigerator to allow flavors to come together and serve with grilled meats.
KALBI (KOREAN BARBEQUED BEEF SHORT RIBS)

- Preparation: Sprinkle brown sugar over beef and mix well to evenly coat. Let sit at room temperature for 10 minutes while preparing marinade. In a bowl, whisk together remaining ingredients. Transfer beef into a large sealable freezer bag (you may need 2). Add marinade, press out excess air from bags, and seal. Turn bag over several times to ensure beef is evenly coated. Refrigerate for at least 4 hours but preferably overnight.
- Heat gas or charcoal grill to medium-hot. Drain excess marinade off beef. Grill short ribs, turning once, to desired doneness, about 3 to 4 minutes per side. Garnish with thinly sliced green onions, if desired. Serve whole pieces as a main course or cut into smaller pieces, using kitchen shears, for a starter or party nibble.
BAR-B-BARN RIBS
We have a restaurant that makes super delicious ribs called Bar-B-Barn. This is a recipe as close to theirs as I could get.

- In a heavy saucepan, mix applesauce, brown sugar, lemon juice, salt, pepper, paprika, garlic powder and cinnamon.
- Over medium high heat, bring the sauce to the boiling point and continue boiling one to two minutes.
- Place parboiled ribs in an oven-proof dish and brush liberally with the sauce. Bake for 45 minutes at 350° or grill over medium heat till browned.
- Turn ribs and brush underside with remaining sauce. Continue baking for 45 minutes. Serves four.
BAR "B" BARN RIBS
This is a copy kat recipe from the famous Bar "B" Barn restaurant in Montreal. Simmer the ribs early in the day and then refrigerate until ready to BBQ. This recipe is for pork but beef ribs can be substituted with no problem.

- In a large saucepan or stock pot, cover ribs with cold water; add thyme, salt, pepper, bay leaf, celery and onion.
- Bring to gentle boil; cover, reduce heat and simmer for about 45 minutes or until ribs are tender.
- Remove ribs place in shallow glass dish.
- Set aside.
- (Strain cooking liquid and refrigerate or freeze to use as soup stock).
- Sauce.
- In small saucepan, combine all the sauce ingredients, bring to gentle boil; reduce heat and simmer for 15 minutes to blend flavors.
- Let cool.
- Cut strips of ribs into serving portions of 3 to 4 ribs.
- Pour sauce all over ribs in dish and marinate for 3 to 4 hours in refrigerator or for 30 minutes at room temperature.
- Remove ribs from sauce, reserving any remaining sauce.
- Cook ribs on greased grill over medium-hot coals or medium setting, turning and brushing occasionally with reserved sauce, for about 20 minutes or until meat is browned.
- NOTE:Double the sauce recipe for lots of basting sauce.
CANADIAN BARN BBQ SAUCE
