BARBECUED PIGGY SCALLOPS

Steps:
- Place the melted butter, lemon juice, pepper and parsley in a large bowl and mix well.
- Add the scallops and turn to coat.
- Cut each bacon rasher in half width wise and then wrap each scallop in half a rasher of bacon, threading them onto skewers as you go and reserving any remaining butter mixture.
- Cook over hot coals for 3-4 minutes each side, basting with the remaining butter mixture, until the bacon is crisp and golden brown.
- To serve- transfer the skewers to a serving platter and drizzle any remaining butter mixture over the top.
- Serve immediately.
GRILLED SEA SCALLOP SKEWERS WITH CREAMY HOT PEPPER AND GARLIC VINAIGRETTE WITH TOASTED BREADCRUMBS

- Put the mayonnaise, cherry peppers, vinegar, 2 tablespoons parsley, mustard, lemon juice, 2 tablespoons olive oil, thyme and garlic in a blender. Season with salt and pepper and puree until fairly smooth. Set aside.
- Heat the remaining 2 tablespoons oil in a medium saute pan over high heat. Add the breadcrumbs and cook until lightly golden brown. Remove from the heat and stir in the remaining 1 tablespoon parsley and the lemon zest. Season with salt and pepper.
- Preheat the grill for high heat direct grilling.
- Skewer 2 or 3 scallops onto 2 skewers so that the scallops lay flat. Brush both sides with oil and sprinkle with salt and pepper. Grill the scallops until well caramelized on one side, about 3 minutes. Flip and cook another 30 seconds or so. Remove to a platter, drizzle with the vinaigrette and sprinkle with the breadcrumbs.
GRILLED SCALLOPS

- Pat dry each scallop and lay them on a tray. Sprinkle on some olive oil, coating scallops on all sides. Season the scallops with salt, black pepper, and lemon pepper, making sure that the seasoning covers all sides. Refrigerate until ready to cook.
- Grill for about 2 to 3 minutes on each side. Serve immediately.
BBQ CURRIED SCALLOPS IN SHELL
A slightly different way to cook curried scallops on a barbecue grill plate. The curry paste can be made before hand so they can be quickly slapped on the BBQ at your next get together. They were quite hot with the home-made curry powder I used but are made for a side dish of only one or two each scallops. Besides you should never be having a BBQ without a cold beer in hand!

- Place curry powder, cumin and coriander into a small saucepan and mix well.
- Add capsicum (bell pepper) and stir in coconut milk.
- Place over medium heat and cook until thickened, stirring often.
- Pour equal amounts of curry paste over each scallop.
- Place scallop shells on a medium BBQ grill plate and cook until curry is starting to bubble.

GRILLED SCALLOPS
Steps:
- Preheat an outdoor grill for medium heat and lightly oil grate.
- Melt butter in a saucepan over medium heat. Cook onion and garlic until soft and translucent, about 5 minutes. Remove from heat, and stir in lemon juice and salt. Place scallops in a large bowl, and toss with butter mixture. Let stand for about 2 minutes.
- Thread scallops onto skewers, or use a wire grill basket. Cook on preheated grill for about 4 minutes per side.
- Return butter mixture to saucepan, and bring to a boil. Reduce heat to low, and keep warm while scallops cook. Toss with grilled scallops and serve.

- Place a cube of butter into each scallop shell and sprinkle lightly with dill and pepper.
- Place a lemon slice over the top of each scallop.
- Cook over in shell on a medium BBQ grill around 10 minutes or until lemon starts to wilt and scallops are cooked.

GRILLED BAY SCALLOPS
Growing up in Florida, our family would take our boat out in Tampa Bay and gather scallops. When we returned home, my father would grill them with butter. I think this is the best way to enjoy bay scallops because grilling really brings out their sweet flavor. Serve with extra butter and a lemon wedge.

- Rinse scallops and pat dry with paper towels.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Melt butter in a frying pan over medium heat. Add onions and garlic; cook until soft and translucent, about 5 minutes. Remove from heat and stir in lemon juice and salt.
- Place scallops in a large bowl and toss with butter mixture. Let stand for about 2 minutes.
- Remove scallops from butter mixture, reserving excess in the bowl. Cook scallops on the preheated grill using a wire grill basket until golden, tossing occasionally for even cooking, 3 to 4 minutes.
- Meanwhile, return butter mixture to the frying pan and bring to a boil over high heat. Reduce heat to low and keep warm while scallops cook. Toss grilled scallops in warm butter mixture and serve.
