BAYOU BREAD (SALLYE)

This is a spicy bread that will get up and dance to the Zydeco music all by itself. Perfect served with red beans and rice, etouffe, gumbo or any other creole dish. Caution: It can become addictive.

BAYOU BREAD (SALLYE) image

Steps:

  • 1. Warm milk in microwave for10-15 seconds until just lukewarm (105º). CAUTION: IF MILK IS TOO HOT, IT WILL KILL YOU YEAST ACTION. If you don't have a thermometer, sprinkle a little on the inside of your wrist; it should just be lukewarm. Stir tomato paste and melted butter or oil into milk and whisk until well blended Pour into bread machine baking pan
  • 2. In separate bowl, with wooden spoon mix flour, brown sugar, salt, creole seasoning and parsley flakes just until blended. ***Or you can use Zatarain's Creole seasoning Pour mixture over milk and oil mixture. Make sure flour entirely covers all the liquid.
  • 3. Make a depression in the center of the flour mixture, add the yeast into the depression. Turn bread machine on to basic (white bread) setting with medium or dark crust. When bread is done, you may brush melted butter over the crust if you wish. Enjoy!!!

2 Tbsp tomato paste (i use hunts)
3 c white bread flour

BREAD CRUMBS OR CROUTONS HOMEMADE (SALLYE)

It is so easy to make your own bread crumbs, and you save a ton of money while you're doing it. Using up all those bits and pieces of bread that you might have thrown out, and the bonus is, there's not additives to wonder about. You control what goes in/on them.

BREAD CRUMBS OR CROUTONS HOMEMADE (SALLYE) image

Steps:

  • 1. Line a large cooking sheet with parchment paper and set aside. Turn oven to 325º
  • 2. ***Any kind of leftover bread will work. I've used hamburger or hot dog buns, white bread wheat bread, homemade bread and other kinds. It's okay to mix kinds of bread in the same batch.
  • 3. Cut or tear bread into 1-1/2" cubes (approximately. Spread the bread pieces out in a single layer.
  • 4. Spray bread generously with cooking spray (again your choice....I always use olive oil), Gently mix the bread so that all surfaces are covered with oil.
  • 5. ***** HERBS AND SPICES. Sometimes I add Kraft Parmesan cheese to the seasoning mix.
  • 6. Place baking sheet in preheated oven and turn timer on to 10 minutes. After 10 minutes, check bread. Stir and continue baking until bread is a toasty brown. (about 10 more minutes)
  • 7. Remove from oven and allow to cool. NOTE: FOR CROUTONS, STOP HERE.
  • 8. FOR BREAD CRUMBS, ADD THE FOLLOWING STEPS: Place bread pieces in food processor and process on medium to high speed until desired coarseness is reached. Dependent on the amount of bread you've toasted, you may need to process more than one batch.
  • 9. You can also reserve some of the bread pieces for croutons. So easy and so much better and cheaper than "store bought" bread crumbs.

BLEND OF THE BAYOU

This recipe is slightly different that the other recipe that is posted for Blend of the Bayou. Here in Louisiana there are several versions of this dish. This is the one that is served at a local restaurant in their plate lunches on Friday. This dish freezes well and everyone I've served it to really enjoys it.

Steps:

  • Preheat oven: 350°F.
  • Melt cream cheese and butter in a double boiler or microwave.
  • In a large skiller, saute onion, bell pepper, celery and shrimp in 2 tablespoons butter.
  • In a large mixing bowl add all other ingredients.
  • Pour into a 13 x 9 inch glass casserole dish.
  • Top with sharp grated cheese and then cracker crumbs (if you would like, you can freeze the dish at this point to serve at a later date).
  • Bake at 350F for 15 to 20 minutes (or until bubbly).
  • Serve warm.

1/2 cup butter
1 lb shrimp, boiled and peeled
1/2 cup onion, diced
1/3 cup bell pepper, diced
1/2 cup celery, chopped
2 tablespoons butter

  • 1. Preheat oven to 375º In shallow bowl, blend parmesan cheese and salt Place pastry sheets on cutting board or waxed paper
  • 2. Cut pastry sheets into approximately 1/2" wide strips Place on baking sheets in a single layer Brush with oil on all sides turning carefully
  • 3. Sprinkle with cheese and salt mixture, turning carefully to cover all sides Place in preheated oven and bake 5-7 minutes until golden brown Serve immediately or transfer to cooling rack If you do not use immediately, allow to cool completely before placing in ziplock container to store in cool dry place

1 pkg puff pastry sheets, thawed
2 Tbsp olive oil
1/2 c grated parmesan cheese
2 Tbsp coarse sea or kosher salt

BOLILLOS (SALLYE)

This is a traditional Mexican bread that is so versatile. It can be used for sandwiches of all varieties, as a bread to accompany meals, or eaten while hot with lots of honey cinnamon butter. There are many recipes out there for this bread, but I like this one for the bread machine best. I hope you will agree.

BOLILLOS (SALLYE) image

Steps:

  • 1. Place all ingredients except egg whites in bread machine pan in the order listed. Make sure liquid is completely covered by the dry ingredients.
  • 2. Select Basic Dough and begin cycle
  • 3. Machine will ding when dough is ready
  • 4. Remove dough from bread machine and place in a lightly greased glass bowl. Cover bowl and let rise in a warm dry place until approximately double in volume (about an hour)
  • 5. Turn dough out onto lightly floured clean flat surface and gently knead for 5-10 minutes until dough is smooth and elastic
  • 6. Divide dough into 10 equal balls. Roll the balls between your palms for about 5 seconds to make a cylindrical shape. Place each roll on a parchment lined baking sheet. NOTE: LEAVE SPACE BETWEEN EACH ROLL TO ALLOW FOR RISING.
  • 7. Allow to rise for about 30 minutes. While waiting, preheat oven to 375º
  • 8. Brush each roll with whisked egg white, and cut a slit horizontally along the top of each roll about 1/4" deep.
  • 9. Place in preheated oven and bake for about 30 minutes until golden brown. Remove to wire rack for cooling.

2 c warm water (105º to 110º)
1 pkg rapid rise yeast (7 grams)
4 c bread flour
1 tsp salt
1 tsp granulated sugar
1 large egg white, whisked

BAYOU BEND BRUNCH CASSEROLE

This recipe is froma local Junior Forum cookbook called "Buffet on the Bayou". I like it because you make it the day ahead and just pop it in the oven the day you want to serve it. Very easy to make.

Bayou Bend Brunch Casserole image

Steps:

  • In a well greased 9x13-inch casserole dish, spread bread pieces over bottom and drizzle with butter. Sprinkle with Montery jack cheese and salami pieces.
  • Beat together eggs,milk,wine,green onions,mustard and black and red pepper until mixture is frothy. Pour mixture over bread mixture. Cover casserole with foil and refrigerate overnight.
  • Remove from refrigerator 30 minutes before baking. Bake covered, at 325 degrees for 1 hour.
  • Uncover, spread with sour cream and sprinkle with parmesan cheese. Bake uncovered an additional 10 minutes, until lightly browned.

Steps:

  • Place sausage in a skillet over medium-high heat. Cook, stirring constantly until evenly browned. Drain grease, and set aside.
  • Spread bread pieces in the bottom of a 9x13 inch baking dish. Drizzle melted butter over the bread pieces, then sprinkle in the cooked sausage. Cover with shredded cheese. In a medium bowl, whisk together the eggs, milk, white wine, Dijon mustard, and green onions. Season with black and red pepper. Pour the egg mixture over everything in the baking dish. Cover, and refrigerate 8 hours to overnight.
  • Remove the dish from the refrigerator 30 minutes prior to baking to allow it to come to room temperature. Preheat the oven to 325 degrees F (165 degrees C).
  • Cover the dish with aluminum foil, and bake for 30 minutes in the preheated oven. Then uncover, and bake for an additional 30 minutes. Remove from the oven, and spread sour cream over the top. Sprinkle with Parmesan cheese. Return to the oven for an additional 10 minutes, or until cheese is starting to brown slightly.
