CHICAGO STEAKHOUSE PEPPERCORN-CRUSTED FILET WITH CRAB AU POIVRE

Steps:
- For the filets: Heat the oven to 250 degrees F. Spray a wire rack fitted into a sheet pan with nonstick cooking spray and set aside.
- In a medium pot, heat the black, green and pink peppercorns and 5 tablespoons of the oil over low heat. Cook, stirring frequently, until you see tiny bubbles, 6 to 7 minutes. Remove from the heat to cool. Stir the salt into the pepper mixture to form a paste.
- Dip each filet all around in the peppercorn paste and place on the prepared sheet pan. Place in the oven to reverse sear until the internal temperature hits 120 degrees F, 25 to 35 minutes.
- Heat the remaining 2 tablespoons oil in a large heavy skillet over medium-high heat. Sear the first side of the filets until a very dark golden crust forms, 2 to 3 minutes. Flip and repeat. Remove from the skillet and let rest on the wire-racked sheet pan, lightly tented with foil, for 5 minutes.
- For the crab au poivre: While the filets are cooking, coarsely crush the black peppercorns with either a mortar and pestle or the bottom of a heavy frying pan. Set aside.
- In a large saute pan, heat the butter and oil over medium heat until the butter melts. Add the shallots and garlic and season with salt; cook, stirring occasionally, until soft but not brown, about 5 minutes. Add the cognac and cook, scraping up any brown bits on the bottom of the pan, until it has almost evaporated, 1 to 2 minutes. Add the stock, chile paste, Dijon, thyme, the reserved crushed peppercorns, 1/4 teaspoon salt and cook until reduced by half, 3 to 5 minutes. Add the cream and simmer until the sauce is reduced by half, thickened and coats the back of a spoon, 3 to 4 minutes. Gently stir in the crabmeat. Fold in the chives and parsley. Serve atop steaks.

- Combine tarragon vinegar and Dijon mustard in a blender.
- Pour in chilled milk.
- With blender on, add oil in a slow, steady stream until well blended.
- Add tarragon, shallot, salt and pepper.
- Blend to combine.
- Preheat oven to 450*F (230*C).
- Pat fillet dry with paper toweling.
- Place thyme, rosemary, peppercorns and salt in a small food processor or blender.
- Whirl to crush.
- Place mixture on waxed paper.
- Roll fillet in mixture until entirely coated.
- Place on a rack in a roasting pan.
- Sprinkle remaining herb mixture over top of fillet.
- Roast fillet in heated 450*F (230*C) oven 40 minutes or until an instant-read thermometer registers an internal temperature of 145*F (60*C).

- Preheat oven to 375°F
- Rub 1 tablespoon oil over each beef piece. Sprinkle with salt and pepper.
- Heat 2 large nonstick skillets over high heat. Add 1 beef piece to each; brown on all sides, about 5 minutes.
- Place beef pieces in large roasting pan. Mix 6 tablespoons oil, garlic, 2 tablespoons thyme and 2 tablespoons rosemary in small bowl.

At Christmas we were visiting home to New Zealand. While there we went to dinner round at my aunty's and she made this splendid dish. I made her fork up the recipe because it was so wonderful.

- For this recipe you will also need tomato relish and 1/2 cup pesto.
- Trim fat and membrane from each steak and season with sea salt and black pepper.
- In a smoking hot pan, add olive oil and sear the meat until it is sealed all over.
- Allow 2 minutes each side.
- Leave to rest while preparing crust.
- In a food processor, make fresh bread crumbs and process the fresh parsley.
- Combine together in a bowl, season with sea salt and pepper, add garlic and melted butter.
- Smear each steak with mustard.
- Place crust on each fillet piling on top.
- Place in 220° oven for 15-20 minutes.
- Rest meat 10 minutes before serving.
- While resting, prepare sauce.
- Gently heat 1 cup of your favourite tomato relish and 1/2 cup pesto.
- If you want to thin, use a little beef stock, this isn't necessary.

- Blend first 5 ingredients in processor until herbs are very finely chopped. Add butter and shortening. Blend until mixture resembles coarse meal. Transfer mixture to large bowl. Using fork, mix enough ice water into flour mixture to form moist clumps. Gather dough into ball; flatten into rectangle. Cover and chill 30 minutes. (Can be made 2 days ahead. Keep chilled. Let dough soften slightly before rolling out.)

An easy, do-ahead, spectacular, and delicious way to serve filet. Easily expanded to serve however many you need. A nice twist on the standard - without the traditional pate de foie gras. This is a big hit with both my family and my guests. Choose flavorful mushrooms like criminis, portobellos or even porcinis or morels. - Heat the olive oil in a heavy skillet over high heat until very hot. Sear the filets until well-browned on both sides, 1 to 2 minutes per side. Remove the filets from the skillet, and chill in refrigerator for at least 1 hour. Filets must be cold.
- In the same skillet over medium heat, melt the butter, and cook and stir the mushrooms, shallot, and garlic until the shallots are tender and translucent and the mushrooms have given off their juice, 6 to 8 minutes. Stir in 2 tablespoons of red wine, scraping and dissolving any browned flavor bits from the pan. Transfer the mushroom mix into a bowl, and chill in refrigerator for about 45 minutes.
- Place 2 pieces of puff pastry on a work surface, and top each with a chilled filet. Spread half the mushroom mixture in a neat layer on top of of each filet, and top each with a piece of puff pastry. Fold and pinch the edges of the pastry together, sealing in the contents, and trim to make a tidy package. Cut a small slit into the top of each package.
- Pour 1 1/2 cups of red wine into a saucepan over medium heat, and simmer until the wine is reduce by half, about 15 minutes. Season wine sauce to taste with salt and pepper. Meanwhile, whisk egg into milk in a bowl, and brush the pasty packages with the egg mixture for a browner crust, if desired. Return the bundles to the refrigerator to keep cold.
- Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
- Place the puff pastry bundles onto the prepared baking sheet, and bake in the preheated oven until the pastry is golden brown and crisp and the filets are the desired degree of doneness (for medium-rare, about 15 minutes; an instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C)). Serve each filet in the pastry shell with spoonfuls of wine sauce on top.

HERBED ROAST BEEF IN SALT CRUST
I make this every year for Christmas eve. I found this in the newspaper in a holiday ad for a local grocery store (I think Fred Meyer).

- Combine oil, garlic salt, basil, marjoram, thyme and pepper in heavy plastic bag. Mix well. Add roast; coat well with marinade. Marinate in refrigerator 2 hours or overnight.
- Line roasting pan with aluminum foil. Combine course kosher salt and the water thoroughly until salt is well moistened. (Do not add more water). Pat 1 cup of moistened salt into a 1/2 inch thick rectangle in pan. Pat roast dry with paper towels. Insert meat thermometer. Place roast on salt layer. Carefully pack remaining salt mixture around meat to encase meat.
- Place roast in a 425 degree oven and roast about 16 - 18 minutes per pound for rare (140 degrees), 20 to 22 minutes per pound for medium (160 degrees), or 25-30 minutes per pound for well done (170 degrees). For best results, use a meat thermometer to check internal temperature.
- Remove roast when thermometer registers 5 degrees below desired doneness. Let roast stand 5 to 10 minutes in salt crust.
- To remove roast from salt, you may need to use a hammer. After removing crust, whisk away any remaining crystals with a stiff pastry or vegetable brush before carving.
- If using an instant-read thermometer (the kind that isn't inserted before roasting), check the estimated cooking time. Take roast out of the oven 10-15 minutes bsefore it should be done. You may have to poke a hole in the salt crust to insert themometer. Continue roasting, if needed, and test temperature again in 5 minutes. Enjoy!

GEFILTE FISH WITH BEET HORSERADISH

- To make the dumplings, cut the fish into 1 1/2-inch chunks and place in the freezer for 10 to 15 minutes to freeze partially. Transfer to a food processor and process to as fine a puree as possible. Add the onion, egg, matzo meal, salt, and pepper and continue processing to a paste. Cover and set aside in the refrigerator until quite firm, at least 1 hour or up to overnight.
- To make the beet horseradish, cook the beet in water to cover until it can barely be pierced, 20 to 30 minutes, depending on the size. Drain and let cool until it can be handled, then peel it while still warm. Grate on the medium-fine holes of a box grater. In a small bowl, combine the grated beet, horseradish, vinegar, sugar, and salt and stir to mix. Set aside at room temperature until ready to use or refrigerate for up to 2 days.
- To make the broth, combine the fish bones and heads, carrot, celery, shallot, salt, and water in a medium saucepan, adding more water if needed to cover the ingredients. Bring to a boil over high heat and skim off any foam that forms on the surface. Decrease the heat to maintain a brisk simmer, cover partially, and cook until slightly reduced, about 30 minutes. Strain through a fine-mesh sieve into a large pot and bring to a simmer over medium-high heat.
- To cook the dumplings, with wet hands, form the fish mixture into ovals the size of a very large egg, using about 1/3 cup for each dumpling. Drop them into the broth and bring just to a boil. Cover the pot and simmer, adding more water if necessary to keep the dumplings afloat, until cooked through, about 1 1/2 hours. Transfer the dumplings and broth to a serving bowl, let cool until no longer steaming, and refrigerate until the broth sets into a loose gelée, 3 hours or so.
- Serve the gefilte fish and gelée cold with the beet horseradish on the side.
