CHEESY FRIED POTATOES
My family loves these fried potatoes and there are never any leftovers! I have also served this as a main dish for dinner as well.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from pan, drain and crumble; leave grease in pan.
- Heat bacon grease over medium heat and stir in butter. Add onion and potatoes. Cover pan and cook, stirring occasionally, until potatoes are golden brown.
- Crack eggs on top of potatoes and stir gently to combine. Sprinkle with salt, pepper, cheese and bacon. Continue cooking until eggs are firm and cheese is melted.

- In a large skillet over medium heat, cook potatoes in oil for 15 minutes, turning occasionally. Sprinkle with salt and pepper. Stir in green pepper and onion; cook 5 minutes longer, stirring occasionally. , In a small bowl, combine the beer, broth and brown sugar. Stir into vegetables. Bring to boil. Reduce heat; cook 2 minutes longer.

PERFECT FRIED POTATOES

- Put the potatoes in a large pot of salted water over medium-high heat, bring to a boil and reduce to a simmer. Cook until just fork-tender, 8 to 10 minutes. Drain and transfer to a baking sheet. Let rest for 10 minutes; this will allow the potatoes to steam and release excess moisture.
- In a small bowl, mix the sea salt, pepper, smoked paprika, cayenne and onion powder.
- Fill a large Dutch oven with 2 inches of oil and heat over medium heat to 375 degrees F. Carefully add half the potatoes and fry until golden brown and crisp, 4 to 5 minutes. Right before removing the potatoes, add a sprig of rosemary and half the sliced garlic to the oil and cook for 15 seconds. With a fine-mesh strainer, remove the batch to a medium bowl. Toss with half of the seasoning mix, then transfer to a paper towel-line baking sheet to drain. Repeat with the remaining potatoes, rosemary, garlic and seasoning mix.
POTATOES WITH ONIONS AND BEER
Big, bold tastes combined. And the beer helps taking the sting out of chopping the onions :) Use a good, full-flavored ale or Belgian beer for this one.

- In a large bowl, toss the potatoes with the beer.
- Melt 2 tablespoons of the butter in a Dutch oven, add the chopped onions and sprinkle with 1/2 teaspoon salt and some freshly ground pepper. Stir. Cover and simmer slowly for 15 minutes, checking that onions do not burn.
- Preheat the oven to 350°F Butter a 2-quart rectangular or oval baking dish 14 inches by 8 inches by 2 inches.
- Overlap one-third of the potato slices in one layer; season with 1/2 teaspoon salt and freshly ground pepper. Sprinkle on one-third of the Gruyere and half the braised onions. Continue with more layers, ending with cheese (do not salt the top layer). There will be only 2 layers of onions. Pour any remaining beer over the onions and dot the top with the remaining tablespoon of butter.
- Bake on the middle shelf of the oven until potatoes are soft, about 1 to 1 1/2 hours.
GERMAN-STYLE FRIED POTATOES

- Cook potatoes in large pot of boiling salted water until just tender when pierced with sharp knife, about 25 minutes. Drain. Refrigerate potatoes overnight.
- Cut potatoes into 1/2-inch cubes (do not peel). Whisk oil, vinegar, and mustard in small bowl to blend for vinaigrette. Heat 3 tablespoons lard in each of 2 large nonstick skillets over medium-high heat. Add half of potatoes to each skillet; sprinkle with coarse salt. Sauté until potatoes begin to brown, stirring frequently, about 7 minutes. Add 3 tablespoons beer, then 1 1/4 cups red onions to potatoes in each skillet; cook until beer evaporates, stirring occasionally, about 1 minute. Reduce heat to medium and sauté until potatoes are brown around edges, about 5 minutes. Pour half of vinaigrette over potatoes in each skillet and toss to coat. Remove from heat. Season to taste with salt and pepper. Transfer all potatoes to large bowl. Sprinkle with chives.
BUTTER FRIED POTATOES
This is not the healthiest dish, although it is delicious. For the people who do not like them, the onion is optional. I make it for my family often and the restaurant I work at changed their recipe to this! Add diced tomatoes alongside the onion and garlic for a tasty addition.

- In 3-quart saucepan, place potatoes and garlic; add enough water (salted if desired) to cover. Heat to boiling. Reduce heat to medium-low; cover loosely and boil gently 15 to 20 minutes or until potatoes are tender. Drain; shake pan with potatoes over low heat to dry.

FRIED POTATOES WITH CHEESE AND HERBS
I make this for myself on quiet mornings as a treat. It's very simple and very good. Use whatever kind of cheese and herbs you like best.

- Soak the sliced potato in cold water for anywhere up to an hour. Drain and dry well.
- Melt butter in medium saute pan over medium heat. Place potato slices in pan in a single layer as soon as contact with the butter creates a sizzle.
- Cover pan and let potatoes sizzle for about 20 minutes. Check potatoes at this time to make sure they are browning. If they are looking golden and crispy, turn the slices over, cover and sizzle for another 20 to 30 minutes.
- At this point, you should be hearing a sound that is somewhere between a sizzle and a balloon with a leak. This is the water cooking out of the potatoes. It is a good thing. Remove the cover. Turn heat down a bit if it looks like the taters are likely to burn.
- It will take about 15 minutes for the potatoes to get rid of their water content.
- Remove from heat and sprinkle cheese over crispy slices. Turn taters and cheese so they mix up together.
- Turn all out onto a plate, sprinkle with herbs and pepper.
- Serve.
