  • Add soy sauce, water, sugar, whole Sichuan peppercorn, star anise, cinnamon stick, and cloves into a small saucepan. Heat over medium low heat until it reaches a simmer. Turn to low heat and let simmer for 15 minutes.
  • Add oil to a medium-sized skillet and heat over medium heat until warm. Add tomato and tomato paste. Chop and stir the tomatoes. Cook until the tomato pieces break down and form a thick sauce, 5 to 7 minutes. Transfer to a bowl.
  • Boil noodles according to instructions. Drain and run tap water over noodles. Drain again and transfer to servings bowls.

  • In a stand mixer fitted with a dough hook, combine the dough ingredients and blend on medium speed until dough comes together, 8 to 10 minutes. You may need to add more water by the teaspoonful to form a firm but uniform dough. Remove dough from mixer and knead on a lightly floured surface until smooth, about 4 minutes. Form the dough into a flat rectangular shape, wrap in plastic, and let dough at room temperature, 1 to 2 hours.
  • On a lightly floured surface, cut dough into five equal pieces. Using a rolling pin, roll out each piece into an oval shape, around 1/4 inch thick. Brush oil onto each piece of dough, stack them, wrap again in plastic, and refrigerate for 30 minutes. Let the dough rest at room temperature for 30 minutes more.
  • Working with one piece of dough at a time and keeping the rest covered, make an indent with a chopstick vertically on dough. Taking both ends, gently pull noodle and swing (like a jump rope), allowing the middle of the noodle to slap the work surface with each rotation. After the noodle is tripled in length, pull apart from center of the noodle to thin out the noodle, but do not pull apart—this should be one connected strand of noodle. Keep bouncing the noodle for a few more seconds. Set the noodle down on a lightly floured work surface; repeat with the rest of the dough.

  • First, make the noodle dough. In the bowl of a stand mixer, add the bread flour, salt and water. Combine the mixture with your hands or a fork until it starts to form a scraggly dough. Once the dough has come together a bit, attach the bowl to the mixer fitted with the dough hook attachment, and turn it on low speed (setting “2” on a KitchenAid). Allow the mixer to knead the dough for 20 minutes. By the end, the dough will have formed a ball that: doesn’t stick to the sides of the bowl, is smooth and elastic, and isn’t too dry.
  • You’ll know the dough is done when you can rip off a piece of it and stretch it slowly by a couple inches without it breaking apart. If the dough breaks, knead for another 3-5 minutes (to allow the dough to absorb more moisture). If it still won’t stretch, try adding a tablespoon of water and kneading by hand to incorporate the water. Then transfer it to the mixer once again and allow the dough hook to do its work for another 5 minutes. You need to give the dough time to absorb the moisture uniformly.
  • If, on the other hand, your kitchen is humid and the dough is a bit sticky, sprinkle in some more flour and knead for another 3-5 minutes.
  • Once the dough has reached the right consistency, cover it with plastic wrap or an overturned bowl (as long as the bowl is not touching the dough) and allow it to rest for 1 to 2 hours.
