- Fill a cocktail shaker with ice. Add tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Place Lime-salt-sugar on a plate. Press the rim of a chilled rocks or wine glass into the mixture to rim the edge. Strain margarita into the glass.
- Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
- Blend together lime, salt and sugar in a small blender or mini food chopper.

- For the puree: Add the blackberries to a medium saucepan with the sugar and lime juice. Cook over low heat, covered, 20 to 25 minutes. Strain using a fine mesh strainer, pressing the berries to extract as much juice/puree as possible. Place in the fridge to cool completely.
- For the lime sugar: Mix together the sugar and lime zest. Use a piece of lime to moisten the rim of each margarita glass, and then dip in the lime sugar.
- For the margaritas: In a blender, add 1 cup of the tequila, 1/4 cup of the triple sec, 1/4 cup of the sugar, and the juice of 1 lime. Fill the blender with ice and blend until smooth. Then add as much blackberry puree as desired, 1/3 to 1/2 cup. Pour into 4 rimmed glasses and serve immediately. Repeat with the rest of the ingredients for the other 4 glasses.
BLACK MARGARITA
This is a good one for Halloween. The Chambord raspberry liqueur and Blue Curacao turn it a grey black color. However, don't be spooked by the color give it a try.

- In a small saucepan, empty the contents of the jar of blackberry jam and 1 ½ c. water. Bring to a boil and whisk until the jam melts down into the water. Simmer 5-8 minutes. Remove from the heat and cool. Transfer to a permanent storage container. (I use a squirt bottle.) The syrup should be kept in the refrigerator. Can be kept 1 month.
- In a cocktail shaker add the tequila, blackberry simple syrup, blue curacao, fresh lime juice, Grand Marnier, pinch of salt, and a splash of water. Add a cup or so of ice and place the lid on the shaker. Shake 40 times.
