BRANDY AND RAISIN CORDIAL - BOERENJONGENS
Pronounced "bor-en-young-us", this traditional recipe is a brandy/raisin cordial served most commonly at holiday time as an aperitif or as a dessert when friends gather to offer "Felicitateer Nieuw Jaar". Can be served after two days, but mellows if made at least 3 months in advance. From the Michigan Dutch chapter of the United States Regional Cookbook, Culinary Institute of Chicago, 1947.

Steps:
- Cover raisins with water and cook for ten minutes.
- Drain and add sugar; stir to dissolve.
- Add brandy and let stand at least two days in a closed container.
- Portion raisins and liqueur into small glasses (small spoons will make eating the raisins easier).

BOERENJONGENS
Pronounced "bor-en-young-us", it simply means (Farm Boy) brandy with raisins. This is a traditional Dutch recipe, and this drink is served most often at Christmas time, as an appetizer with cheese and crackers, or as a dessert drink. Please note that you must make this 3 months in advance!

Steps:
- In large saucepan, combine raisins, water, and cinnamon stick and bring to a boil.
- Turn down heat and simmer for about 20 minutes.
- Add sugar and stir until dissolved.
- Remove from heat and cool.
- Stir in brandy, and remove cinnamon stick.
- Pour into 4 clean pint jars and seal tightly.
- Let stand at least 3 months for the best results.
