POT STICKERS
Wontons that have been browned and steamed or simmered are called pot stickers. Serve them as an appetizer or a main course.

- Make wontons (through step 2).Transfer to an oiled plate, and cover with a damp towel to keep moist.
- In a 12-inch nonstick skillet with a tight-fitting lid, heat 1 tablespoon oil over medium-high heat. Add half the wontons and cook, turning once, until lightly browned, about 1 minute per side. Carefully add 1/2 cup water (oil may sputter), cover, and steam until translucent and just cooked through, 2 to 3 minutes. Repeat with remaining tablespoon oil and wontons. Sprinkle pot stickers with scallions, if using, and serve with soy sauce.
PERFECT POT STICKERS
Homemade pot stickers are so versatile--you can fill them with anything you want and as full as you want. And the play between the crispy, crusty bottom, and the tender parts, makes for a truly unique dumpling. These are filled with ground pork, green onions, ginger, and cabbage.

- Place ground pork, green onions, garlic, ginger, 2 tablespoon plus 1 teaspoon soy sauce, sesame oil, and cayenne in a mixing bowl. Top with chopped green cabbage. Mix with fork until thoroughly combined. Tamp down lightly; cover with plastic. Refrigerate until chilled, about an hour.
- Place flour and kosher salt in a mixing bowl. Slowly pour in hot water. Stir with a wooden spoon until mixture forms a shaggy dough. Flour your hands and transfer dough to a work surface. Knead dough until it becomes smooth and elastic. If dough seems too sticky, sprinkle with a bit more flour, about 3 to 5 minutes. Wrap dough ball in plastic, and let it rest about 30 minutes.
- When dough has rested, divide into 4 equal pieces. Cover 3 pieces with a dish cloth while you work the first piece. Roll into a small log about the thickness of a thumb, about 3/4 inch. Divide each log into 6 equal pieces. Roll each piece into a thin 3 1/2-inch circle on a lightly floured surface to form the pot sticker wrappers. Repeat with the remaining dough pieces.
- Lightly moisten the edges of a wrapper with your wet finger. Place a small scoop of the ground pork mixture onto the center of a wrapper. Fold up the 2 sides and pinch together in the center. Pinch together the remaining edges, forming "pleats" along one side. Tap the pot sticker on the work surface to slightly flatten the bottom; form a slight curve in it so it stands upright in the pan. Transfer to a well-floured plate. Repeat with remaining dough and filling.
- Mix together seasoned rice vinegar and soy sauce in a small mixing bowl for the dipping sauce.
- Heat oil in skillet over medium-high heat. Place about 6 or 7 pot stickers in the hot oil, flat side down. Cook until bottoms are golden brown, about 2 minutes. Drizzle in water and quickly cover the pan; steam for 3 minutes. Uncover; reduce heat to medium. Continue cooking until water evaporates and bottoms are browned and crunchy, 1 or 2 minutes. Transfer to a warm serving dish. Repeat with remaining pot stickers. Serve with dipping sauce.

POT STICKERS

- 1. To make the filling, first water blanch the bok choy. In a pot, bring the water to a boil over high heat. Add the 1 tablespoon salt and the baking soda (if using). When the water returns to a boil, add the bok choy stalks and allow the water to return to a boil. Add the bok choy leaves and blanch for 1 minute, or until the leaves turn bright green. Immediately turn off the heat. Run cold water into the pot, then drain off the water. Repeat.
- 2. In a large bowl, place the bok choy, the 1 teaspoon salt, and all of the remaining filling ingredients. Using a wooden spoon or 2 pairs of wooden chopsticks, mix the ingredients together, stirring them in one direction. Stirring in this way ensures the mixture will become a cohesive filling. Cover and refrigerate for at least 6 hours or up to overnight. The longer it rests, the easier it will be to work with.
- 3. To make the dough: In a large bowl, place the flour and make a well in the center. Gradually add the water to the well, and use your fingers to combine it with the flour until it is absorbed and a firm dough forms. If the dough is too dry, add a little more water. Knead the dough in the bowl for about 15 minutes, or until smooth and elastic. Cover the dough with a damp cloth and allow to rest for 1 1/2 hours.
- 4. Dust a work surface with flour. Divide the dough into 3 equal pieces. Work with 1 piece at a time, and keep the others covered with the damp cloth. Using your palms, roll into a log 12 inches long. Cut crosswise into 12 equal pieces. Using a small rolling pin, roll out each piece into a 3-inch round. Keep the work surface well dusted with flour as you work.
- 5. Place 1 round on the palm of one hand, place 1 tablespoon of the filling on the center, and fold the round into a half-moon. Using the thumb and forefinger of the other hand pleat the seam closed, making from 5 to 7 pleats. Repeat to form more dumplings until all of the rounds are used. Cover the dumplings with plastic wrap to prevent them from drying out, then repeat with the remaining two pieces of dough in two batches to make a total of 36 dumplings.
- 6. In a cast-iron frying pan, heat 3 tablespoons of the peanut oil over high heat. When a wisp of white smoke appears, turn off the heat and place 18 of the dumplings in the pan. Turn on the heat to medium and allow the dumplings to cook for 3 minutes. Pour 1/2 cup of the water into the pan and allow the dumplings to cook for 7 to 10 minutes, or until the water evaporates. Reduce the heat to low and allow the dumplings to cook for about 2 minutes, or until they are golden brown on the bottom and the skins are translucent on top. To ensure the dumplings cook evenly, move the pan back and forth on the burner to distribute the heat evenly and prevent sticking.
- 7. Remove to a heated dish and serve. Because these dumplings are best eaten hot, serve in batches.
BONNIE'S POT STICKER RICE BOWL
This is a favorite stand-by recipe that we have tweaked over time to suit our tastes. Serve the pork fried rice, the pot stickers and the broccoli all in one bowl for a healthy and tasty meal. The leftovers are fantastic the next day, too. Other great rice bowls can be made using this idea, or you can use noodles instead of rice and change the meat. - COOK'S TIP I do as much ahead as possible when planning on making my rice bowls. You can throw a meal together very fast if the prep work is all finished.
- POT STICKERS You can make your own, or use the pre-packaged pot stickers for convenience. Place a couple of tablespoons of oil in a heavy large saucepan with a tight lid, and fry the potstickers on both sides in a little Canola oil until golden brown. Add one can of chicken broth, bring it to a boil and simmer on low for 10 minutes. Keep warm.
- POT STICKER SAUCE In a measuring cup, measure the lite soy sauce, rice vinegar and the sesame oil, stir to combine. Set aside for serving. You are going to pour this sauce over the pot stickers.
- BROCCOLI Steam the broccoli Keep Warm.
- VEGETABLE SAUCE In a small bowl, combine the 4 tablespoons soy sauce, 2 tablespoons peanut butter, 1 tablespoon honey, 2 teaspoons rice vinegar, 1/8 teaspoon black pepper, 1 tablespoon sesame oil, 1 tablespoon crushed garlic, 2 tablespoons grated ginger and 5 drops of hot sauce. Whisk until smooth. Peanut butter will object to combining but keep at it. Add 4 tablespoons to the pork mixture in another small bowl and mix well. (Set aside the remaining sauce for the vegetables.)
- VEGETABLES Scramble two eggs in a little canola oil and cut into strips and set aside. Heat a large skillet on medium heat, and add 1 tablespoon canola oil and 1 tablespoon sesame oil. When the oil is hot, add the green onions, snow peas and carrots, 1 tablespoon crushed garlic, 1 tablespoon ginger zest, and cook for about 3 or 4 minutes, then add the rest of the sauce, stir and add the rice. When the rice is warm, add the egg and toss gently.
- SERVE Serve in a large bowl (or a plate). Serve a helping of the pork fried rice, steamed broccoli and 4 potstickers. I cut each pot stickers into 4 pieces if I make a rice bowl. Pour the potsticker sauce over the pot stickers. When the potstickers are cut, they absorb more sauce. Or leave them whole if you choose. Enjoy!
CHINESE POT STICKERS (CHICKEN, PORK OR VEGETARIAN)
Chinese dumplings. Easy, exotic appetizers. A little time consuming, but worth it. High Protein. Replace meat with 1/2 cup cooked rice mixed with 1/3 cup finely chopped water chestnuts for the vegetarian version.

- In a bowl, combine water and mushrooms, cover and let soak for 5 minutes.
- Drain, discard stems, and mince caps.
- In a large non-stick skillet, heat vegetable oil over medium-high heat until hot; saute mushrooms in oil with onions and ginger.
- Add cabbage and cook until cabbage is lightly browned (9 minutes), stirring frequently; while cabbage is cooking add water 1 tbsp at a time to keep it from sticking to the pan, if needed.
- Spoon cabbage mixture into a medium sized bowl and let it cool.
- Add chicken and next 5 ingredients to the bowl and mix well.
- Working with one wonton wrapper at a time (keep the rest covered so they don't dry out), spoon a tablespoon full of the mixture into the middle of the wrapper; moisten the edges with water.
- Bring two points (diagonal corners) in to the center, and pinch together.
- Bring the other two corners in and pinch together; and pinch the 4 edges together to seal.
- Sprinkle a baking sheet with cornstarch, and place pot stickers on baking sheet as you finish sealing them (keeping finished ones covered with a towel to keep them from drying out).
- In a large non-stick skillet, heat vegetable oil over medium heat until hot.
- Place 15 pot stickers in bottom of skillet and cook until bottoms are lightly browned (3 minutes).
- Add broth to skillet and cook, covered, until liquid is absorbed (3 minutes).
- Set finished pot stickers aside, and keep warm.
- Wipe skillet out with a paper towel, and repeat the process with the other pot stickers.
- Serve with soy sauce or other sauce for dipping.
