Steps:
- Preheat oven to 350°F.
- Boil the four medium yams with skins until tender. Then drain and peel the yams. Either slice or cut them into cubes and place in a buttered casserole dish.
- Boil the brown sugar, water, butter and raisins. Once the sugar is fully melted and the mixture has a good boil add the brandy and remove from heat. Pour mixture over the yams.
- Then add a layer of the small marshmallows on top of the yams (may add sliced almonds to your liking).
- Bake at 350°F for 30 minutes uncovered. Be sure to baste occasionally.

Steps:
- Pour brandy over raisins in a small bowl, cover, and allow to stand for 2 hours.
- Preheat oven to 350 degrees F (175 degrees C). Butter a 2-quart baking dish with the softened butter.
- Place sweet potatoes on a baking sheet, and bake in preheated oven until tender, about 30 minutes. Remove and allow to cool until cool enough to handle, then peel the potatoes and slice them 1/2 inch thick. Arrange the potato slices in the prepared baking dish, and sprinkle with sugar and brandy-soaked raisins.
- Return the sweet potatoes to the oven, and bake 30 to 40 minutes until hot and bubbly.

- Combine brown raisins, golden raisins, and brandy in small bowl; toss to blend. Let soak at least 30 minutes and up to 1 hour.
- Cook yams in large pot of boiling salted water until just barely tender, about 8 minutes. Using large slotted spoon, transfer yams to baking sheet to cool.
- Meanwhile, bring 3/4 cup maple syrup, 1/2 cup brown sugar, and 1/4 cup unsalted butter to boil in heavy medium saucepan over medium heat, stirring until brown sugar dissolves. Boil 2 minutes.
- Butter 15x10x2-inch glass baking dish. Drain raisins (reserve brandy for another use). Place raisins in very large bowl. Add cooked yams, then maple syrup mixture and toasted walnut pieces. Toss gently to coat evenly, being careful to keep yams intact. Transfer yam mixture to prepared baking dish. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature.
- Preheat oven to 350°F. Bake yams uncovered until syrup is thick and bubbling, basting occasionally, about 55 minutes. Let stand 10 minutes and serve.

- Boil potatoes until soft.
- ;peel and put in mixing bowl.
- Beat with electric mixer.
- Add eggs, cream, and spices and sugar to taste.
- Beat until light (should be the consistency of thick batter).
- Stir in liquor.
- Taste, and add more liquor if desired.
- Pour into casserole dish.
- Melt butter for topping and combine all topping ingredients; spread evenly over the top of casserole.
- Bake in moderate oven (350°F) 25-30 minutes, or until warmed through and topping is browned.
SWEET POTATOES WITH BRANDY AND RAISINS

- Preheat oven to 350 degrees. In a small bowl, let the raisins soak in the brandy for 20 minutes. Grease a shallow baking pan with butter and layer sweet potato slices. In a saucepan, combine brown sugar, cinnamon, water and margarine and bring to a boil. Add the raisins and brandy and pour mixture over sweet potatoes. Bake uncovered for 40 minutes, basting with juices.

- Preheat the oven to 350 degrees Fahrenheit.

- 2 tbsp cold butter.
- 2 tbsp all purpose flour.
- 1/4 tsp ground cardamon or ground cinnamon.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the batter just until blended. Fold in the shredded yam. Spread the batter evenly in the greased baking dish.

- Wash yams, boil in a pot for a few minutes. Let them cool and then slide the skins off of them. Cut the yams into silver dollar like disks, a little over 1/8 inch thick. Heat and stir the sugar, zest, juice, butter, Brandy, nutmeg and cinnamon in sauce pan, do not let it get thick. Rub a little butter on the bottom and inside walls of a rectangular pyrex baking dish. Place a layer of the yams in the pyrex dish covering the bottom. Pour a small amount of the heated brandy mixture over this layer and then add a few shavings of the butter over that. Repeat this process of a layer of yams, sauce and butter shavings until the dish is full. Place this in a 375°F preheated oven for about 30 minutes. Be very careful when removing the dish from the oven not to spill any of the extremely hot liquid onto yourself.
