Entered for safe-keeping. From Evelyn Tribole's "More Healthier Homestyle Cooking." This version reduces the amount of brown sugar and brandy, uses egg whites in place of whole eggs, and eliminates butter in the yam mixture. Note that Splenda Brown Sugar Blend for Baking may be substituted for the brown sugar, but you will need only half as much.

Steps:

  • Wash yams, boil in a pot for a few minutes. Let them cool and then slide the skins off of them. Cut the yams into silver dollar like disks, a little over 1/8 inch thick. Heat and stir the sugar, zest, juice, butter, Brandy, nutmeg and cinnamon in sauce pan, do not let it get thick. Rub a little butter on the bottom and inside walls of a rectangular pyrex baking dish. Place a layer of the yams in the pyrex dish covering the bottom. Pour a small amount of the heated brandy mixture over this layer and then add a few shavings of the butter over that. Repeat this process of a layer of yams, sauce and butter shavings until the dish is full. Place this in a 375°F preheated oven for about 30 minutes. Be very careful when removing the dish from the oven not to spill any of the extremely hot liquid onto yourself.

6 Medium cooked yams
1/4 cup brandy (1/2 if you like)
1 cup brown sugar
3 Tablespoons butter
1/4 cup freshly squeezed lemon juice and zest of lemon
or
1/4 cup freshly squeezed Orange Juice and zest of orange (your choice)
1 teaspoon nutmeg
1 stick butter
1 teaspoon cinnamon
