BEEF AND BROCCOLI STIR-FRY

Beef and Broccoli is a favorite of mine. It's important to take your time, mix well and marinate for the full 3 hours. You wont be sorry!

Beef and Broccoli Stir-Fry image

Steps:

  • In a medium mixing bowl add together the beef strips and soy sauce.
  • Mix to be sure all the beef is coated.
  • Add the sugar and pepper, stirring for 3 minutes to be sure each piece is evenly coated and sugar is dissolving.
  • Add the whipped egg white and slowly stir in the cornstarch, again stirring for 3 minutes to make sure the beef is evenly coated.
  • You DO NOT want to see any sugar or cornstarch.
  • Cover and let stand in the fridge for 3 hours, stirring well after 1 and 1/2 hours.
  • Bring a large pot of water to boil.
  • Bring a wok to medium high heat.
  • Par boil the broccoli for 1 minute.
  • Drain in colander in sink.
  • Add 2 T. oil and garlic to wok and quickly"mush" around.
  • Stir fry the broccoli until tender crisp, around 5-6 minutes tops.
  • Remove broccoli to a bowl.
  • Add the remaining oil if needed and stir fry the meat until just under done.
  • Return broccoli to wok and stir.
  • Add the sherry and oyster sauce.
  • Stir fry for 1 minute making sure broccoli and beef is thoroughly coated with sauce.
  • Serve over hot white rice.

  • Mix garlic powder and 2 tablespoons each cornstarch and water; toss with beef. In a small bowl, mix soy sauce, brown sugar, ginger and the remaining cornstarch and water until smooth., In a large skillet, heat 1 tablespoon oil over medium-high heat; stir-fry beef until browned, 2-3 minutes. I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

Steps:

  • In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
  • Add beef and toss.
  • In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
  • Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
  • Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
  • Cook and stir for 2 minutes.

Steps:

  • Microwave the broccoli in a glass bowl covered with plastic wrap (holes poked for ventilation), about 1 to 2 minutes.
  • In a small bowl, whisk together the soy sauce, sesame oil, 1 teaspoon cornstarch and baking soda. Slice the beef against the grain into thin strips and add it to your marinade. Let it sit for at least 20 minutes, or as long as overnight in the refrigerator.
  • In a separate small bowl, stir together the stock, rice wine, oyster sauce and remaining 1 teaspoon cornstarch until the cornstarch is fully dissolved.
  • Heat a wok or large skillet on high heat and add the oil. When a wisp of white smoke appears, toss the marinated beef and garlic into the pan. Cook for about 1 minute, continually moving the beef so it browns on all sides but is still rare. Once the beef is seared, add the broccoli and cook for an additional minute. Stir in the sauce and keep it all moving. Don't be afraid to scrape any bits off the bottom of the pan before they start to burn. Once the sauce has turned into a nice thick glaze, about 1 minute, serve immediately.

Simple Broccoli Stir-fry image

Steps:

  • Trim the florets off the broccoli, and cut into 1- to 1 1/2-inch pieces. Peel the broccoli stalks with a vegetable peeler to remove the tough outer skin, and slice 1/4 inch thick on the diagonal. Set aside.
  • Whisk together 1/2 cup water, soy sauce, cornstarch and sugar in a small bowl. Set aside.
  • Heat a large wok over high heat. Add 2 tablespoons of the vegetable oil, and swirl to coat the wok. Once the oil begins to smoke, add the broccoli florets and stems. Cook, stirring constantly, until browned around the edges, about 2 minutes. Add 2 tablespoons of water to steam the broccoli, and cook, stirring constantly, until tender, about 2 minutes more. Push the broccoli to the edges of the pan, forming an empty well in the center. Add the remaining 1 teaspoon vegetable oil, then the scallions, garlic, ginger and pepper flakes, and stir until aromatic, 30 to 45 seconds. Add the soy mixture, and stir until the sauce has thickened and the broccoli is coated, about 30 seconds. Remove from the heat, add the sesame oil and stir to coat. Serve with rice.

  • Whisk together the oyster sauce, sesame oil, sherry, soy sauce, sugar, and cornstarch in a bowl, and stir until the sugar has dissolved. Place the steak pieces into a shallow bowl, pour the oyster sauce mixture over the meat, stir to coat well, and marinate for at least 30 minutes in refrigerator.

  • Prepare the beef:
  • In a small bowl stir together the soy sauce, the sugar, and the salt, add the beef, and let it marinate for 20 minutes.
  • Make the sauce while the beef is marinating:
  • In a small bowl dissolve the cornstarch in the soy sauce and stir in the Sherry, the broth, the sugar, and the sesame oil.
  • Heat a wok or large heavy skillet over high heat until it is hot, add 2 tablespoons of the vegetable oil, and heat it until it just begins to smoke.   • Place the ramen noodles in a large bowl (discard the seasoning packets or save for another use) and pour the boiling water over them. Let sit for 6 minutes, stirring every now and then to break up the noodle blocks. Drain and rinse under cold water. Set aside.

Steps:

  • Bring a pot of water to a boil and season generously with salt. It should be as salty as the sea. Prepare an ice bath and season generously with salt. Add the broccoli florets to the boiling water and cook for 2 to 3 minutes until bright green and tender, but still slightly crisp. Remove the broccoli and immediately plunge into the ice bath and set aside, but reserve the boiling water for the noodles later.
  • Heat 2 tablespoons of the canola oil in a large saute pan over medium-high heat until it shimmers. Season the steak with salt. Add the steak in batches to the pan and cook, turning occasionally, until brown and crispy, 2 to 3 minutes. Remove the steak from the pan and set aside. Repeat with remaining steak.
  • To the same pan, add the remaining 2 tablespoons canola oil. Add the scallion whites, garlic, ginger, onions and rice wine vinegar. Saute for 1 to 2 minutes. Add the oyster sauce, chicken stock and chili paste and stir to combine.
  • To the same pot of boiling water, add the noodles and cook according to package directions. Using tongs, remove the noodles and add directly into the saute pan with veggies. Steps:

  • Cut the beef across the grain into thin slices. Add the marinade ingredients, adding the cornstarch last (use your fingers to rub it in). Marinate the beef for 30 minutes.
  • While the beef is marinating, prepare the sauce and vegetables: for the sauce, mix together the oyster sauce, light soy, dark soy, and water in a small bowl and set aside. In another small bowl, mix the cornstarch and water thickener and set aside.
  • Wash and drain the broccoli. Cut the stalk diagonally into thin slices. Cut the flowerets into 3 or 4 pieces. Crush the garlic.
  • Heat the wok and add 1 cup oil. When the oil is medium-hot (between 300 and 325 degrees F.), add the beef. Blanch the beef by letting it lay flat for 30 - 40 seconds, and then stirring to separate the pieces. Remove the beef when it changes color and is nearly cooked (the entire process takes 1 - 2 minutes).
  • Remove the beef from the wok and drain on paper towels.
  • Clean out the wok with paper towels.
  • Add 2 tablespoons oil to the wok. When the oil is hot, add the crushed garlic and stir fry briefly until aromatic.
  • Add the broccoli, sprinkle the salt and sugar over, and stir fry briefly, turning down the heat if necessary to make sure it doesn't burn. Add the 1/2 cup water, and cook the broccoli, covered, for 4 - 5 minutes, until it turns a bright green and is tender but still crisp. Remove from the wok and drain.
  • Clean out the wok and add 2 more tablespoons oil. Add the broccoli and the beef. Add the sauce and cornstarch mixture in the middle of the wok and stir quickly to thicken. Mix everything together and serve hot over steamed rice.

My trusty Kikkoman Oriental Cookbook from 1993 has several wonderful recipies that are easy to make with simple ingredients that I usually have on hand. I also often substitue fresh ginger root with powered and always have a jar of pre-chopped garlic on hand. The sauce is a staple for all my beef stirfrys. If I don't have much time, I buy a package of Oriental frozen stir fry vegetables, which has a wonderful assortment and costs about $3.

Steps:

  • Cut beef across grain at a diagonal into thin slices.
  • Combine 1 tablespoon each cornstarch, soy sauce, sugar, ginger, and garlic in a small bowl; stir in beef.

  • Meanwhile, remove flowerets from broccoli; cut in haf lenthwise.
  • Peel stalks; cut croswise into 1/8-ince slices.
  • Combine water, 4 teaspoons cornstarch and remaing soy sauce; set aside.
  • Heat 1 tablespoon oil in hot wok or large skillet over high heat.
  • Add beef and stir-fry for 1 minute; remove.
  • Heat remaining 2 tablespoons oil in same pan.
  • Add broccoli and onion; stir-fry for 4 minutes.
  • Stir in beef and soy sauce mixture.
  • Cook and sitr until mixture boils and tickens.
  • Serve immediately over rice.

Stir Fried Broccoli With Beef image

Steps:

  • With a sharp knife, cut beef across the grain into slices about 3 inches long and 1/4 inch thick. In a bowl, combine the beef, soy sauce, 1 tbls. oil, 1 teaspoons cornstarch, and 1/2 teaspoons sugar; set aside to marinate 15 minutes.
  • Meanwhile, with paring knife, cut a thin slice off the bottom of each broccoli stalk and discard the dried end. Remove any leaves and, from cut end, pull thick, fibrous skin upward toward flowerets to remove. Cut broccoli flowerets off stalks into 2 1/2 inch lengths. Split broccoli flowerets lengthwise into thinner pieces if stalks are thicker than 1/2 inch. Cut remaining peeled stalks diagonally into thin slcies.Cut mushroom caps into 1/4 inch thick slices. Cut onions into 1 inch lengths; set vegetables aside.
  • In cup, combiine 1/2 cup water, the remaining 1 tbls. cornstarch and 1 teaspoons sugar, the sherry, fish sauce, sesame oil, and salt; set aside.
  • Just before serving, heat wok or large skillet over high heat until hot. Add 1 tbls. oil and swirl it around to coat bottom of the wok. Add ginger and, with slotted spoon, stir fry 15 seconds. Add slices of broccoli stalks and stir fry 2 minutes. Add remaining 1/2 cup water and place broccoli flowerets on top of stalks. Cover and reduce heat to simmer broccoli until crisp tender-about 3 minutes. Transfer broccoli and ginger with any remaining water to medium size bowl.
  • Reheat wok over high heat. Add remaining 1 tbls. oil and half of the marinated beef. Stir fry beef until lightly browned on all sides. Remove beef to bowl with broccoli. Add remaining beef and stir fry until browned. Remove to bowl. Set aside. Add mushrooms to wok and stir fry until juices are released and mushrooms are just tender. Remove to bowl.
  • Add garlic and green onions to wok; restir cornstarch mixture and pour into wok. Cook until thickened and bubbly. Return beef and broccoli mixture to wok; stir fry until coated with sauce. Transfer to serving dish and serve immediately. Enjoy!
