HOMEMADE WASABI SAUCE
A quick and simple sauce that can be used with grilled tuna or as a dip for eggrolls. From Food and Wine, December 1995.

Steps:
- In a food processor, combine the wasabi powder, vinegar, and mustard.
- Add 1/4 cup of water and with the machine on, slowly pour in the oil to form a lightly thickened sauce.
- Add the salt and process briefly.
- The sauce can be refrigerated for up to 1 month.
- Shake or stir before using.

My husband and I wanted to come up with a zippy sauce to use with a variety of foods - raw veggies, deep-fried calamari, fish cakes, etc., etc. This is a staple!

- In a small bowl, stir together the sour cream and mayonnaise. Mix in the wasabi powder, jalapeno pepper, vinegar and salt. Refrigerate for about 15 minutes to let the flavors develop. If you want to add more wasabi, add a little bit, and then refrigerate for about 5 minutes. The wasabi will get hotter upon sitting.

WASABI COCKTAIL SAUCE
Steps:
- Whisk 1 cup ketchup, 2 tablespoons horseradish, 1 tablespoon each soy sauce and rice wine vinegar and 2 teaspoons wasabi paste in a bowl until smooth. Serve with cooked shrimp.
WASABI-AE (BROCCOLI WITH WASABI SAUCE )

- Bring the water and salt to a boil. Cook the broccoli until it's crisp-tender and still a bright green in color. Drain, and refresh very briefly with cold running water. (Note: you can skip this step if you're not in a hurry and have time to cool the broccoli.).
- In the meantime, mix together all the remaining ingredients except the wasabi in a small pan, and stir over a low heat until the sugar is melted. Let cool, and add the wasabi, reserving 1/2 tsp or so. Mix well until the wasabi is dissolved.
- Pour the sauce over the broccoli and mix well. Serve at room temperature or chilled, optionally with a little additional wasabi on the side for people to mix into the broccoli as they eat it (if they really like wasabi).

BROCCOLI WITH GARLIC AND SOY SAUCE
Steps:
- Put the garlic cloves and oil in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 to 15 minutes, until the garlic is browned and tender. Turn off the heat and add the red pepper flakes and 1/2 teaspoon salt. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.
- For the salad, blanch the broccoli florets in a large pot of boiling salted water for 2 to 3 minutes, until crisp-tender. Drain well and immerse immediately into a large bowl of ice water until the broccoli is cooled. This process stops the cooking and sets the bright green color. Drain well.
- In a large bowl, toss the broccoli with 1/2 teaspoon salt, 1/4 cup of the oil used to cook the garlic, the soy sauce, and 8 or more cloves of cooked garlic. Taste for seasonings and serve cold or at room temperature.

Steps:
- Cut the broccoli into florets and cook in boiling salted water until tender. Refresh under cold running water and drain well.
- Peel and finely dice the onion.
- Melt the butter in a small frying pan, add the diced onion and cook over a low heat until soft but not coloured.
- Place the drained broccoli, cooked onion and cheese in a food processor. Blend until smooth.
- Add the salt, wasabi powder and lemon juice. Blend until well mixed, then check the seasoning.

- Prepare wok or steamer with boiling water. Blend wasabi with sake in bowl; stir in ginger and juices.
