CANDIED SWEET POTATOES
This recipe is a family favorite and it is the number one requested food at family gatherings. I have no idea where the recipe originally came from, but I know my Mother has been perfecting it for years. Now in our family there are two thoughts on the proper way to eat them. Some like them with butter to cut the sweetness and the others eat them plain. Your choice! Enjoy.

Steps:
- Boil sweet potatoes in skins for 15 minutes, rinse with cool water and remove skins.
- Mix brown sugar and water in sauce pan, and boil together for 5-minutes, stirring frequently forming a syrup.
- Add butter and stir until dissolved. Add salt and remove from heat.
- Cut sweet potatoes in quarters lengthwise with cut side down in a.
- greased 9"x12" baking dish.
- Poor syrup mixture over the sweet potatoes, cover them and bake at a 350° F oven for 60-minutes.
- Baste sweet potatoes with syrup in the pan.
- Turn them over every 10-minutes.
- Remove from oven.
- Optional: serve with or without butter.

- Heat the oven to 350 degrees F. Use 1 tablespoon of the butter to grease a 2 quart flameproof baking dish.
- Peel the sweet potatoes and slice them 1/8-inch thick. Place 1/3 of the potatoes in the bottom of the baking dish. Season with salt and sprinkle over 1/3 of the pecans. Repeat 2 more times. Pour the coffee liqueur and cream over the potatoes. Spread the brown sugar evenly over the top and dot with the remaining butter. Cover the dish with aluminum foil and bake until the sweet potatoes are tender when poked with a sharp knife, about 50 to 60 minutes. Remove the dish from the oven and turn on the broiler. Remove the foil and cover the sweet potatoes evenly with the marshmallows. Put the dish under the broiler until the marshmallows are lightly browned, about 1 minute. Let cool a bit before serving.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish.
- Bring a large pot of water to a boil. Add potatoes and boil until slightly underdone, about 15 minutes. Drain, cool and peel.
- In a large saucepan over medium heat, combine margarine, brown sugar, 2 cups marshmallows, cinnamon and nutmeg. Cook, stirring occasionally, until marshmallows are melted.

- Preheat oven to 350 degrees F (175 degrees C).
- Place whole sweet potatoes in a steamer over a couple of inches of boiling water, and cover. Cook until tender, about 30 minutes. Drain and cool.

Although the flavor might seem unusual for a cupcake, sweet potatoes have long been pureed and baked into desserts, such as sweet potato pie. This playful rendition of a traditional Thanksgiving side dish-complete with mini marshmallows and candied pecans on top-will appeal to anyone who loves the sweet, earthy flavors of root vegetables. - Make topping: Dividing evenly into 24 mounds, place marshmallows on a large baking sheet or nonstick baking mat. Using a small kitchen torch, brown marshmallows all over (or heat under the broiler). With an offset spatula, transfer mounds to cupcakes, and top with candied pecans, dividing evenly. Cupcakes are best served the day they are topped; keep at room temperature.

- Combine the sugar, vegetable oil, water, soy sauce, vinegar, and salt in a skillet just large enough to hold the sweet potato chunks in a single layer. Place over medium-high heat and bring to a simmer. Arrange the sweet potatoes in the pan in a single layer and cover with a circle of parchment paper to keep the surface moist. Lower the heat to maintain a very gentle simmer and cook for 2 minutes. Cover the skillet with a lid (keep the parchment in place) and cook for another 2 to 3 minutes, or until the potatoes are tender. A toothpick inserted into the thickest part of a piece should meet no resistance. If the chunks are not yet tender, add a bit more water and simmer for another minute or two. Check to make sure the sugar doesn't burn.
- Once the potatoes are tender, remove the lid and parchment and jiggle the skillet to allow the potato chunks to roll around in the rapidly reducing glaze (the vinegar, by the way, will keep the sugar from seizing after the glaze has cooled). After 6 minutes or so, the water and oil in the skillet will have separated and most of the water will have evaporated, enabling you to remove the lightly glazed sweet potato chunks with little or no oil clinging to them.
- Transfer the glazed chunks to a plate, spreading them out in a single layer. Sprinkle with the black sesame seeds. Let cool to room temperature before serving. They keep at cool room temperature for 6 to 8 hours. If you will be keeping them longer, place them in a covered container and refrigerate for up to 2 days. For optimal texture, bring the potatoes back to room temperature before serving.
