THE BEST CHILI
There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

Steps:
- Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
- Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
- Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
- Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
- Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
- Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
- Top with sour cream, Cheddar and scallions. Serve with tortilla chips.
PICK A MEAT CHILI

Steps:
- Heat a large pot over medium heat. Mix together the coriander, paprika, cumin, cayenne and some salt and pepper in a small bowl and toss with the cubed meat, ground meat or eggplant.
- Add the oil to the pot and when hot, add the meat or eggplant and cook, turning as necessary, until brown, 3 to 5 minutes. Add the onion, garlic and jalapeno and cook, stirring, until beginning to soften, about 2 minutes.
- Add the beer and water and deglaze the pot, scraping up any brown bits on the bottom with a wooden spoon. Add the tomato and chipotle if using, bring to a simmer and simmer until the meat is tender, 1 to 1 ½ hours. (The cooking time will be less for ground meat, chicken and eggplant.)
- Add the beans and continue to simmer for 10 to 15 minutes to thicken. (If using pre-soaked dried beans, the cooking time may be longer.) Serve the chili garnished with your favorite toppers on hand.
MEATY, MEAT-LESS CHILI

- Stem and seed the ancho chiles and place in a pot with stock, bring the mixture to a boil then reduce the heat and keep warm.
- Heat a Dutch oven over medium-high heat with 1/4 cup extra-virgin olive oil, 4 turns of the pan. Add the mushrooms to the hot oil and brown 12 to 15 minutes, then add the garlic, onions, chile, salt and black pepper and soften 5 to 6 minutes more, season with a spice mixture of paprika, cumin, coriander, and cinnamon.
- Puree the reconstituted chiles and stock in a food processor. Add the chile stock mixture, beans, and tomatoes to the chili, cook 15 minutes until thickened, then turn off the heat, cool, cover and chill for make-ahead meal.
- To reheat: Cover the chili and place over medium to medium-high heat, stirring frequently until the chili bubbles, then uncover and simmer until ready to serve.
- Combine the avocado, sour cream, lime juice, cilantro, and salt in food processor and process into a smooth avocado-sour cream sauce for stirring into the chili. Serve the chili in shallow bowls and garnish with the avocado sauce, pepitas, if using, and a few tortilla chips, if using.
CARRIE'S MEAT CHILI
I found an all meat chili recipe online a couple yeas ago because my family loves the taste of chili minus the beans, however it was a lengthy recipe with many odd ingredients and although it was wonderful it took way too much effort to make. I used that recipe as my base and tweaked it using more easily available items and took out a lot of the unnecessary steps. It makes almost 10 lbs in a 6 QT stock pot but it is always gone before the week is out. After we eat it as chili we use the leftovers for chili dogs and nacho snacks...I have 4 children and they love when I make a nacho bar with all the fixins and they can make their own personal nacho platter with all the things they like on top. Hubby loves it too of course!I hope you enjoy it as much as we do.

Steps:
- Marinate ground beef in burgundy, bay leaves, thyme, garlic and pepper for 2 hours.
- Boil chicken breasts in water and salt until cooked through and tender then remove from water and chop chicken, reserve chicken broth for chili.
- Mix ground pork into the marinated beef mixture.
- Add the Chili pepper, cayenne, oregano and cumin to the beef and pork mixture and mix together well.
- Sauté onions in vegetable oil in a 6 QT or larger stock pot until translucent.
- Add the beef and pork mixture to the pot and cook on medium heat until it is mostly all browned.
- Add the tomato sauce, peeled tomatoes, Rotel, chilies, jalapeños, and Tabasco sauce.
- Add the chopped up chicken, stir well, cover, reduce to a simmer and let cook for 4 hours stirring occasionally.
- If the chili gets dry during the cooking process add some of the reserved chicken broth.
SPICY THREE-MEAT CHILI

- Heat the olive oil in a large Dutch oven over high heat and add the ground pork, ground bison and ground chuck; using the back of a wooden spoon, break up the meat into small pieces and cook until well browned, 10 to 12 minutes.
- Add the garlic, bell peppers, jalapeno, onion, chili powder, cumin, chipotle, cayenne, 1 teaspoon salt and 1 teaspoon pepper, and cook, stirring occasionally, until the vegetables soften, 6 to 8 minutes.
- Stir in the tomato puree, crushed tomatoes and beer, bring to a boil, then reduce the heat and simmer for 1 hour, stirring occasionally. Stir in the kidney beans and cook for 10 more minutes. Serve hot.

- Heat the oil in a very large, deep skillet or stock pot. Saute the onions in the oil for 5 minutes, until soft. Add the garlic and saute 2 minutes more. Remove to a plate.
- Add the beef to the pan and brown, breaking apart the meat with a fork or spatula into small crumbles while it is cooking. Remove to a plate. Brown the pork the same way and remove to a plate. Remove the sausage from the casings and brown it in the pan, in the same manner as with the other meats.
- Put back the onions, beef, and pork to the pan with the browned sausage and give it all a stir. Add the beer and bring up to a simmer. Add the tomatoes, tomato paste (if using) bay leaves, cumins, chili powders, oregano, salt and pepper. Stir well, and bring up to a simmer.
- Turn down the heat, cover the pot, and simmer for an hour. Stir occasionally. After an hour, taste the chili and adjust any of the seasonings. Add the beans and chilies to the pot. Dissolve the masa harina in 1/4 cup of water, and stir it into the chili. Gently simmer for another hour, stirring occasionally.
