- Depending on the size of your salmon, put 1 or 2 cedar grilling planks (about 15 inches each) in a large dish or roasting pan (it?s OK if they overlap). Pour in the wine, then add enough water to cover (if not using wine, just use all water). Weight the plank down with a heavy pot so it is submerged. Let soak at least 2 hours, flipping it over halfway.
- About 30 minutes before cooking, preheat a grill to medium (if your grill has a thermometer, it should register about 375 degrees F). Combine the brown sugar, lemon zest, rosemary, 4 teaspoons salt and 2 teaspoons pepper in a small bowl. Remove any pin bones or belly fat from the salmon. Rub the salt mixture all over the flesh side of the fish. Transfer to a baking sheet, loosely cover and refrigerate 30 minutes.
- Drain the cedar plank and arrange on the grill. Place the salmon skin-side down on the plank (if your salmon is large, you?ll need to put 2 planks side by side); cover and grill until just cooked through, 12 to 18 minutes, depending on the thickness. Transfer the plank to a board and top the salmon with parsley.
CEDAR PLANK SALMON

- Soak cedar plank in salted water for 2 hours, then drain. Remove skin from salmon fillet. Remove any remaining bones. Rinse the salmon under cold running water and pat dry with paper towels. Generously season the salmon with salt and pepper on both sides. Lay the salmon (on what was skin-side down) on the cedar plank and carefully spread the mustard over the top and sides. Place the brown sugar in a bowl and crumble between your fingers, then sprinkle over the mustard.
- Set grill for indirect grilling and heat to medium-high. Place the cedar plank in the center of the hot grate, away from the heat. Cover the grill and cook until cooked through, around 20 to 30 minutes. The internal temperature should read 135 degrees F. Transfer the salmon and plank to a platter and serve right off the plank.
- Cook's Note: A direct method to grill the salmon may be used. Soak the cedar plank well. Spread the mustard and brown sugar on the salmon, but do not place the fish on the plank. Set up the grill for direct grilling on medium-high. When ready to cook, place the plank on the hot grate and leave it until there is a smell of smoke, about 3 to 4 minutes. Turn the plank over and place the fish on top. Cover the grill and cook until the fish is cooked through, reaching an internal temperature of 135 degrees F. Check the plank occasionally. If the edges start to catch fire, mist with water, or move the plank to a cooler part of the grill.
CEDAR PLANKED SALMON
This is a dish my brother prepared for me in Seattle. It is by far the best salmon I've ever eaten. I like to serve it with an Asian-inspired rice and roasted asparagus.

- Soak the cedar planks for at least 1 hour in warm water. Soak longer if you have time.
- In a shallow dish, stir together the vegetable oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic. Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, or up to one hour.
- Preheat an outdoor grill for medium heat. Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
- Place the salmon fillets onto the planks and discard the marinade. Cover, and grill for about 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.

- Preheat the smoker to 250 degrees F (120 degrees C) according to manufacturer's instructions.
- Combine butter, garlic, 3 sprigs dill, and salt in a heat-proof dish. Place in the smoker until butter is melted and infused with flavor, at least 20 minutes. Remove from the smoker.
- Lay salmon on the plank of wood. Brush salmon with the flavored butter. Season with salt and pepper. Place in the smoker and close the door.
- Cook salmon until easily flaked with a fork, about 40 minutes. Check at 10-minute intervals and baste with butter.
- Serve garnished with lemon slices, remaining dill, and remaining flavored butter.

- Soak cedar grilling plank in water to cover 2 hours, keeping it immersed.
- Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas); see Grilling Procedure . Open vents on bottom and lid of charcoal grill.
- Stir together mustard, honey, rosemary, zest, and 1/2 teaspoon each of salt and pepper. Spread mixture on flesh side of salmon and let stand at room temperature 15 minutes.

BARBECUED CEDAR PLANK SALMON
Steps:
- Soak the cedar plank in cold water for 2 hours; the cedar plank should be completely immersed in water, so weigh it down (a heavy bowl works well).
- Combine marinade ingredients in a shallow non-reactive dish large enough to hold the salmon. Place the salmon in the marinade and turn to coat; let marinate at room temperature for 30 minutes.
- Preheat a grill to medium heat.
- Place the cedar plank on the hot grill. Once the cedar plank starts to smoke, place the salmon fillet on top of it, skin side down. Arrange the sliced onions on top of the salmon. Pour the marinade over all. Cover the grill and cook for 15 minutes. If the plank catches on fire, it can be lightly sprayed with water. The cooking time will vary based on the thickness of the salmon; allow 10 minutes per inch of thickness. The salmon may be served on the cedar plank, but be careful not to overcook as the salmon will continue cooking while resting on the hot cedar plank.
GRILLED CEDAR PLANK SALMON
Using a cedar plank to grill salmon is an effortless way to add enormous flavor to your dish. The fish takes on a lovely smokiness, stays wonderfully moist and the skin doesn't stick to the grates. We spiced ours up with a maple-ginger marinade and whipped up a quick side salad for a tasty, incredibly easy weeknight meal.

- Soak a cedar grill plank in water for at least 1 hour and up to 4 hours. Preheat the grill to medium.
- Mix the rice wine vinegar, maple syrup, soy sauce, ginger and garlic in a medium bowl. Slowly drizzle in the olive oil, whisking constantly, until emulsified. Reserve 1/4 cup for the salad dressing and set aside. Pour the remaining mixture over the salmon and let marinate in the refrigerator for 15 minutes.
- Meanwhile, place the soaked cedar plank in the center of the preheated grill. Close the lid and let the plank heat until you hear it start to crack, about 15 minutes. Place the salmon fillets, skin-side down, on the plank. Season with 1/2 teaspoon salt and a few grinds of pepper. Close the lid and cook until the salmon is opaque throughout and large flakes break off when flecked with a fork, 15 to 20 minutes. Remove the plank from the grill and serve the salmon from the plank (the fish will slide right off with a metal spatula, leaving the skin behind). Discard the plank.
- While the salmon is cooking, add the coleslaw mix, almonds, sesame sticks or wonton chips and the reserved dressing to a large bowl and toss until well combined. Serve alongside the salmon.
CEDAR PLANK SALMON
Steps:
- Preheat the grill or barbecue to high heat. Meanwhile, soak the cedar plank in cool water for about 30 minutes.
- Season the salmon with salt and pepper, and then spread a little brown sugar evenly over the top.
- When the grill is hot, place the salmon, skin-side down, on the wet cedar plank and place it on the grill. Close the lid and grill for 15 minutes or until cooked to desired degree of doneness. Remove and serve directly from the burnt cedar board.
CEDAR-PLANKED BBQ SALMON

- Preheat grill to high.
- Sprinkle BBQ seasoning on salmon fillets.
- Combine ingredients for crust mixture and spread generously over the flesh side (not skin side) of each fillet.
- Season soaked cedar planks with sea salt, and place on grill.
- Close lid and heat for 3 to 5 minutes, until they start to crackle and smoke.
- Lift lid carefully and place salmon fillets on hot planks, skinned side down.
- Close lid and bake planked salmon for 12 to 15 minutes for medium doneness.
- Squeeze lemon over fillets.
- Check periodically to ensure the planks are not on fire.
- Use spray bottle to extinguish any flames.

SALMON BBQ'D ON A CEDAR PLANK WITH MAPLE SYRUP
I cooked this recipe for 132 Aboriginals (Native Indians) here in Vancouver, B.C. I received so many compliments from them as they told me that they never ate Salmon that tasted so good.

- Purchase 2 pieces of cedar boards, 3/4 inch thick, 7 1/2 inches wide and 18 inches long, untreated.
- Soak cedar boards in water for at least 12 hours before using.
- Preheat barbecue to HIGH heat.
- Remove cedar boards from the water and sprinkle with coarse salt on one side that will be used for placing the salmon filets.
- Place boards on the NOW HOT barbecue for about 3 minutes, DO NOT BURN CEDAR BOARDS.
- Rub salmon filets with olive oil.
- Sprinkle coarse salt and granulated garlic powder on salmon filets.
- Sprinkle salmon filets heavily with dill weed and green onions.
- Drizzle lemon juice over salmon filets and then sprinkle with black pepper.
- Place the salmon filets on the cedar boards, skin side down and layer the top of filets with thinly sliced lemons.
- Drizzle MAPLE SYRUP over the filets.
- Turn barbecue down to medium heat.
- Place prepared salmon on the barbecue grates.
- Close BBQ cover and cook on medium heat for 10 to 15 minutes or until salmon just starts to flake.
- Remove from the barbecue.
- If you have a heavy duty screen with about 1/4" squares, spray with olive oil and place on the barbecue grates. This will prevent any salmon to drop through the grates.
- Slide the salmon filets off the cedar plank onto the screen, with skin side down.
- Turn barbecue heat to HIGH.
- Sprinkle more MAPLE SYRUP on filets, close BBQ lid and cook for another 2 to 4 minutes or until salmon flakes easy. DO NOT OVERCOOK SALMON.
- Remove salmon to large plates.
- Serve immediately with lemon wedges.
- You may also use dark brown sugar on filets instead of Maple Syrup. After you rub the salmon filets with olive oil, spread about 1 tablespoon of brown sugar on each filet (4 tablespoons).
- You may also use white onions sliced instead of green onions or scallions.
- DO NOT RE-USE THE Cedar Boards a second time.
- Purchase your cedar boards at a lumber yard, but make certain that the boards are not treated. They are also much cheaper at the lumber yard and are just as good as the prepared cedar boards.
CEDAR-PLANKED SALMON
Steps:
- Submerge the cedar planks in cold water and soak for at least 1 hour.
- Preheat the oven to 400°F.
- To make the Pinot Noir reduction, combine the stock and peppercorns in a small saucepan and boil over high heat until reduced by half, about 10 minutes.
- Melt the butter in a medium saucepan over high heat. Add the onion and cook until soft, about 4 minutes. Add the wine, thyme, and 2 tablespoons of the honey and boil until reduced by half, about 7 minutes. Add the reduced stock and boil until reduced by half again, about 5 minutes. Strain the mixture into a clean saucepan and set aside.
- Remove the planks from the water, put them on a baking sheet, and place them in the oven for 15 minutes. Remove and brush the tops of the planks with olive oil.
- Brush both sides of the salmon fillets with oil and season with salt and pepper. Place 2 fillets on each plank, leaving a few inches of space between the pieces of fish. Return the planks to the oven and cook the salmon to medium, 10 to 12 minutes.
- While the salmon is cooking, finish the sauce. Return the saucepan to high heat. Add the remaining 1 tablespoon honey, season with salt and pepper, and cook to a sauce consistency (see page 250); you will have about 1 cup.
- Transfer the fillets to a platter or immediately serve directly from the planks. Top each fillet with some of the Pinot butter and drizzle with the sauce. Garnish with parsley leaves.
- PINOT BUTTER
- Pour the wine into a small saucepan, bring to a boil over high heat, and cook until reduced to 1/4 cup, about 5 minutes. Stir in the maple syrup and let cool.
- Put the butter in a bowl, add the wine reduction, and stir until combined. Season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 2 days to allow the flavors to meld.
CANADIAN CEDAR PLANKED SALMON
My son prepared this wonderful dish for us and it was my first time to taste this method of griiling; what flavour! Planked salmon is a method of cooking salmon that has been used for many years. The salmon is slow cooked, which produces a rich, smoky flavor. Use only untreated cedar; look for planks at the fish counter at your supermarket or ask your fishmonger.

CEDAR-PLANK ROASTED SALMON
Donald Barickman, who developed this crowd-pleasing recipe, cooks the salmon over a homemade barbecue pit, but you can use a large gas or charcoal grill. The longer the salmon cooks, the more pronounced the wood-roasted flavor, so you want to avoid cooking it too close to the heat.

- Build a hot fire. Prepare cedar plank by toasting it over hot coals until it begins to blacken slightly on one side; remove from heat, and let cool completely.
- Place board, toasted side up, with both ends resting on supports. Sprinkle with one-third salt and a few sprigs each thyme and rosemary. Place salmon on plank, skin side down. About 2 inches from each end, tap one nail horizontally into side of plank, leaving head protruding for the wire. Season salmon with remaining salt and pepper, and arrange remaining herbs across the top.
- Starting at the larger end of fish, twist wire around the nail several times to secure. Wrap wire entirely around salmon and plank at 2-inch intervals, making sure that it is tight enough to hold fish in place without slicing through the tender flesh. When you reach the other end of the plank, twist the wire several times around other nail, and trim any excess wire with wire cutters.
- Arrange plank supports near the fire, and rest the plank, fish side down, on top, 15 to 20 inches above the coals. Cook until thicker part of fish is firm to the touch, 25 to 35 minutes, depending on the heat of the fire, the distance from the heat during cooking, and the thickness of the fish. Roll the plank several times during cooking to check for doneness, and spritz fish and plank with water if they begin to smolder.
- Remove plank from heat, and let cool slightly. Remove wire and herbs, and discard. Cut fish on the diagonal, or flake the flesh with a fork into large pieces, and serve it directly from the plank.
