CHEDDAR AND BACON PINWHEELS

Steps:
- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
- In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
- Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square. Spread the cream cheese mixture over the entire surface of each piece of pastry, leaving a slight border around the edges. Sprinkle the Cheddar and bacon in an even layer over the top of the cream cheese mixture. Tightly roll each pastry sheet into a log (jelly roll style), then pinch the seam closed and place seam-side down on the work surface.
- Using a sharp knife, cut both logs crosswise into 12 pinwheels each, approximately 1 inch thick. Transfer 12 pinwheels to each prepared baking sheet, spiral-side up. In a small bowl, whisk the egg and 1 tablespoon water until combined to make an egg wash. Brush the tops and sides of the pinwheels with the egg wash.
- Bake the pinwheels until puffed and golden, 25 to 30 minutes. Serve warm.
CHEDDAR CHEESE GOUGERES WITH BACON

- Preheat the oven to 425 degrees F. Line a baking sheet with a silicone baking mat or parchment paper.
- In a medium saucepan, add 1 cup water, the butter and salt, and bring to a boil over high heat. Lower the heat to medium and add the flour all at once. Stir rapidly with a wooden spoon; the mixture will form a dough ball that will pull away from the sides of the pan. Continue to cook for a couple minutes.
- Remove the pan from the heat and let cool for a couple of minutes. Stir so that the dough cools more evenly; you want the dough to be warm, but not so hot that when you start adding the eggs they cook as they hit the dough. In a mixer or by hand with a wooden spoon, add the eggs one at a time, stirring after each addition until the eggs are incorporated. The dough should become rather creamy. Stir in the grated cheese, bacon, thyme and a few grinds of pepper.
- Spoon out small balls (about a heaping tablespoon) of the dough onto the baking sheet, with at least an inch separating the spoonfuls. Cook for 10 minutes; lower the heat to 350 degrees F and cook until puffed up and lightly golden, another 15 to 20 minutes.

- Beat cream cheese, mayonnaise, Worcestershire sauce and hot pepper sauce in large bowl on medium speed, scraping bowl often, until smooth (1 to 2 minutes).
- Stir in cheese, bacon and green onions by hand.
- Cover; refrigerate at least 2 hours.
- Form cheese mixture into log shape or cheese ball; roll in pecans to coat.
- Wrap in plastic food wrap; refrigerate until serving time.
- Serve with crackers.

- Mix all items together except the additional 1 cup of cheddar cheese that you will use to roll the ball inches.
- With a spoon pull mixture toward middle of the bowl and try to form a ball.
- Then cover and place in refrigerator until chilled and firm.
- After it has chilled, it will be easier to work with.
- Roll the cheese mixture into a ball and roll in additional cup of grated cheddar cheese.
- Roll until all sides are coated and press the cheese into the ball.

- Preheat oven to 400°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Allow drippings to cool slightly (about 30 minutes). Reserve 1/3 cup drippings (discard remaining or save for another use). , Sift flour, sugar, baking powder and salt together. In a large bowl of a KitchenAid stand mixer using paddle attachment, combine milk and egg. Gradually add warm (not hot) bacon drippings. Mix in flour mixture just until moistened.
