GORGONZOLA-PEAR TOASTS

Gorgonzola-Pear Toasts image

Steps:

  • Preheat the oven to 400 degrees F. Lightly brush 1 side of each baguette slice with olive oil. Place the slices on a baking sheet and toast 5 to 7 minutes, or just until beginning to brown. Let cool.
  • Meanwhile, in a small bowl, combine the cream cheese and gorgonzola cheese, stirring until well mixed. Spread the toasts with the cheese mixture. Top with the pear slices and chopped candied pecans. Sprinkle with the parsley.

1 baguette, cut into 1/4-inch-thick slices
2 tablespoons extra-virgin olive oil
1 8-ounce package cream cheese
4 ounces crumbled gorgonzola cheese
2 15-ounce cans sliced pears in juice, drained
1/2 cup candied pecans, chopped
2 tablespoons finely chopped fresh parsley

Slices of Bartlett pear and a tangy Roquefort-cheese mixture top toasted white sandwich bread. Cutting the bread into fingers makes each the perfect size to hold the fruit.

Pear Pecan Toasts image

Steps:

  • Preheat oven to 350 degrees. In a small bowl, combine cheese and heavy cream. Using a fork or wooden spoon, combine until mixture is soft enough to spread but not too runny; set aside.
  • Cut bread in half crosswise, making fingers that are about 3 by 1 1/2 inches. Transfer bread fingers to a baking sheet; toast in oven until light golden on each side, 10 to 15 minutes. Remove from oven.
  • Spread 1 heaping teaspoon cheese mixture on each bread finger. Top with a pear slice; garnish with pecan slices. Serve at room temperature.

10 ounces Roquefort cheese
5 tablespoons heavy cream
15 slices white sandwich bread, crusts removed
2 Bartlett pears, thinly sliced into wedges
1/3 cup pecan halves, thinly sliced crosswise

Steps:

  • Peel and core the pear, and cut into thin slices. Slice the cheese thinly. Toast the bread lightly on both sides under the grill and spread with butter. Arrange the pear slices on the toast, and top with the slices of the cheese. Put back under the hot grill for a few minutes, until the cheese is golden and melted. Serve at once.

French Toast With Pears, Brie, and Cinnamon image

Steps:

  • Grease a 9x13 baking dish; set aside. In a large skillet cook pears, brown sugar, and rosemary in 2 T butter over medium heat for 4-5 mins or until pears are tender.
  • Arrange 7 or 8 bread slices in a single layer in prepared dish. Spoon pear mixture and arrange Brie on bread slices. Top each stack with a bread slice. Brush bread with melted butter.
  • Combine sugar and cinnamon. Sprinkle evenly over bread. In a medium bowl whisk together milk, eggs, vanilla, and salt. Slowly pour over bread slices. Cover and chill for 1-24 hours.
  • Preheat oven to 375°F Bake, uncovered, for 40-45 mins or until edges are puffed and golden. Let stand for 10 minutes. Serve warm with maple syrup, berries, and honey, or cranberry conserve.
