Steps:

  • Toss shrimp with ginger and garlic. Refrigerate 1 hour. Meanwhile, mix teriyaki sauce, broth and crushed pepper until blended.
  • Heat oil in large skillet. Add shrimp mixture; cook and stir 3 to 5 min. or until shrimp turn pink. Add teriyaki mixture, broccoli and carrots; stir. Cook until vegetables are crisp-tender, stirring frequently.
  • Add nuts; mix lightly.

Shrimp and Vegetable Saute, Chinese Style image

Steps:

  • Whisk anchovy paste, soy sauce, sugar, broth and season with red pepper flakes. In a large skillet or wok, heat the vegetable and sesame oils. Add peppers and scallion whites and stir fry or saute, stirring continuously for one minute. Add shrimp and saute for another minute. Add garlic and saute for 15 seconds until you get a good whiff of its aroma.
  • Add liquid ingredients and peas, half of mint and basil leaves and simmer for a minute or two just until the shrimp are cooked through and the vegetables are tender but still crisp.
  • Taste and season and transfer to a bowl; serve over rice, garnish with remaining mint, basil and green scallions rounds.

Steps:

  • In a small bowl, combine cornstarch, curry and sugar. Mix in soy sauce, vinegar and chicken broth. Set aside.
  • In wok or heavy skillet, heat 1 teaspoon oil over high heat. Add carrots, pepper, peas, ginger and garlic. Stir-fry until vegetables are brightly colored, about 1 minute. Transfer onto plate with slotted spoon.
  • Place remaining oil in pan and set over high heat. Add shrimp and stir-fry until pink, about 1 minute.
  • Return vegetables to pan. Stir sauce mixture and pour into pan. Simmer gently until shrimp are white in center, 2-3 minutes. Serve immediately over rice.
  • Makes 4 servings.

  • Heat oil in wok or large skillet until very hot. Cook and stir garlic and ginger in the hot oil until fragrant, about 30 seconds. Add the water chestnuts, snow peas, mushrooms, red pepper flakes, salt, pepper, and shrimp to the pan. Cook, stirring, until shrimp turns pink, 2 to 3 minutes.

This was my mother's favorite way to use up leftover white rice. It really doesn't taste like the fried rice you get at a restaurant, but it still a great meal. I typically throw in whatever vegetables I have in my kitchen, and leave out the shrimp or chicken. I also cut this down to accommodate the amount of rice I have. Cooking time does not include making rice, chicken or shrimp since this is usually made out of leftovers.

Chinese Fried Rice with Shrimp image

Steps:

  • Make rice in advance and refrigerate.
  • Heat the oil in a skillet. Stir in the rice until lightly browned, pressing out any lumps.
  • Mix in the scallions, salt, pepper and shrimp or chicken. Saute for 1 minute.
  • Make a well in the center of the rice and pour the egg into it, stirring until barely set.
  • Stir egg into the rice mixture.
  • Add the parsley and soy sauce and stir. Cook 1 more minute and serve immediately.
  • For Vegetarian omit both the chicken and the shrimp.
