GRILLED CHOCOLATE SANDWICHES
This is decadent French-toast sandwich makes a sweet breakfast.

- In a large, shallow dish, whisk together eggs and milk; set aside.
- Form two sandwiches with the bread and chocolate (break chocolate as necessary to cover bread without extending over edges); dip both sides of sandwiches in egg mixture to coat.
- Heat butter in a large skillet over medium heat; transfer sandwiches to skillet. Cook, pressing occasionally with a spatula, until golden, 1 to 2 minutes per side. Transfer to a paper towel-lined plate. Cut in half, and dust with confectioners' sugar before serving.

- Heat a skillet over medium-low heat. Spread half the butter on one piece of French bread; place butter-side down into warm skillet. Sprinkle bread with chocolate chips; cook until chocolate begins to melt and bread is lightly browned, 2 to 3 minutes.
- Spread remaining butter on second piece of bread. Place bread butter-side up on top of melted chocolate. Flip the sandwich and cook until bread is browned on other side, 2 to 3 minutes. Remove from heat; sprinkle with sugar and cinnamon.

- Heat a large frying pan over moderate heat. You should be able to hold your hand a few inches from the surface of the pan for 10 seconds without it feeling painfully hot.
- While you're waiting for the pan to heat, butter one side of each bread slice. Set your oven to warm for holding your grilled sandwiches, if needed. Once the pan is hot, place two slices of bread into the pan- buttered-side down. Nestle the bottoms of the slices together so they are touching one another. This helps to avoid losing too much cheese or chocolate when covering the unbuttered sides of the bread.
- Sprinkle a generous handful (about a 1/4-1/2 cup) of cheese onto both slices of bread. Follow that with 2 tablespoons-1/4 cup of chocolate. The more chocolate you add, the sweeter the sandwich will taste. Be sure to disperse the chocolate shards amongst the cheese shreds. The cheese will assist in melting the chocolate completely. Top the cheese and chocolate sprinkles with a second slice of bread- making sure to place the buttered-sides up.
- Grill the sandwiches for 4-5 minutes per side, carefully flipping when the bottom is golden brown.

- In the bowl of a stand mixer, mix the stick of butter and ½ of the candy bar( the pulverized part) until well blended on a medium speed. You will need to stop the mixer several times and scrape down the sides. A hand mixer is fine to use too. If you are a zealot and have strong arms - then by all means, mix this by hand.
- In a heavy duty frying pan on the stovetop over medium low heat (I used my grill pan), melt 2 Tbs unsalted butter.
- While pan is preheating, spread the butter onto one side each of the four pieces of bread. (You will have about ¼ left over - or heck, use it all! Live a little). Then sprinkle well with the kosher salt and cayenne - this part is important - it imparts flavor.
- Once the pan is heated, place two of the pieces of bread, butter side down onto the pan. Then place the pieces of cheese onto the bread. Then sprinkle the chocolate that is chopped into small pieces onto the cheese. Then cover this with the other two pieces of bread (making two sandwiches) - with the butter side up. Then cover the whole affair with the lid of a pan so that the cheese will steam and melt well.
