Steps:

  • Combine 1/2 cup milk and cornstarch in a small bowl. Whisk or stir with a fork until smooth and all lumps have been incorporated.
  • Combine remaining milk with sugar in a medium saucepan over low heat. Slowly whisk in the cornstarch mixture. Cook, whisking as needed to prevent lumps from forming, until mixture begins to thicken, 8 to 10 minutes. Add chocolate chips and salt. Continue stirring until chips are completely melted and pudding is smooth and thickened, about 7 minutes more.
  • Pour pudding into 1 large bowl or 6 individual bowls. Place plastic wrap directly on top of the pudding to prevent a skin from forming; smooth it gently against the surface. Refrigerate for at least 3 to 4 hours before serving.

Dangerously Delicious Microwave Chocolate Pudding for One! image

Steps:

  • Mix together milk, salt and cornstarch in microwave safe bowl.
  • Stir in chocolate chips.
  • Put in microwave uncovered for 40 seconds on HIGH.
  • Stir until chips are well melted& blended.
  • Heat another 30 seconds.
  • Keep a close eye on it so it doesn't bubble over.
  • At this point if it has not thickened, (will depend on wattage of microwave) keep going for 20 seconds intervals, stirring between each one until thickened.
  • Do keep an eye on it at all times.
  • Eat it right away (which is the way I like it) or let it cool.

I found the basic recipe in the TOH 's 2001 Annual recipes, it was sent in to them by Anne Boesiger of Meridian, Idaho. Since I like a thicker and more intense chocolate flavor, the amounts of cornstarch and chocolate were changed.The database wouldn't let me add just a pinch of salt, so I had to put 1/8 teaspoon. Also, the way that the ingredients were added was changed too. Chill time is included in cook time. The longer you let this chill, the more intense the chocolate flavor will be.   • Bring 1 1/2 cups of the milk, the sugar and cocoa to a simmer in a medium saucepan over medium-high heat, stirring occasionally to dissolve the sugar. Meanwhile, whisk the remaining 1/2 cup of milk with the cornstarch, vanilla, egg yolks, and salt in a medium bowl. Gradually whisk the hot milk mixture into the egg mixture.

  • Put 1 1/2 cups of the milk, the sugar, and the cocoa in a nonreactive saucepan. Bring to a simmer, over medium-high heat. Remove from the heat.

Self-saucing sticky toffee chocolate pudding image

Steps:

  • Put the dates in a bowl and pour in 300ml boiling water. Leave to soak for 30 mins. Meanwhile, make the sauce by tipping all the ingredients, a big pinch of salt and 300ml boiling water into a pan, then whisk over a medium heat and simmer for 2 mins. Pour into a jug and leave to cool slightly. Once the dates are soaked, use a hand blender to blitz the dates and water until you have smooth paste. Leave to cool slightly. Butter a deep 35 x 25cm dish.
  • Heat oven to 180C/160C fan/gas 4. Beat together the butter and sugar for 3 mins until smooth. Add the eggs, one at a time, beating between each addition. Fold in the flour, bicarb and baking powder along with a pinch of salt. Once combined, mix in the date purée, then fold in the dark chocolate. Pour the sponge batter into the prepared dish and spread out evenly using the back of a spoon. Pour the chocolate sauce evenly over the top of the batter.

  • Preheat oven to 350 degrees and grease an 8x8 pan.
  • Sift together flour, baking powder, salt, 1 1/2 tbsp cocoa, 3/4 c sugar.

  • Ask your grown-up helper to switch the oven on to 180C/160C fan/gas 4. Use a pastry brush to brush the muffin tin or pudding moulds with oil.
