- To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce.
- Preheat the oven to 450 degrees F.
- Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend.
- Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking.
- Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread a large spoonful (about 3 tablespoons worth) of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamel sauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.

- Preheat the oven to 375°F. To prepare the lasagna, start by making the meat sauce. Combine the sausage and ground beef in a large skillet and sauté over medium-high heat until brown. Add one jar of the marinara to the skillet and bring to a simmer. Remove from heat. Next, prepare the cheese mixture and combine the ricotta cheese, eggs, Parmesan cheese, salt, pepper, basil, and oregano in a medium-size mixing bowl. Spread half of the remaining jar of marinara on the bottom of a 13'' x 9'' pan. Lay four of the lasagna noodles over the marinara and spread half of the cheese mixture over the noodles. Next, spread half of the meat sauce over the cheese mixture and sprinkle 1 cup of the mozzarella cheese over the meat sauce. Repeat the layers one more time. Lay the four remaining lasagna noodles over the final layer and spread the rest of the marinara over the noodles. Top with the remaining 1 cup of cheese. Cover the dish with foil and bake for 1 hour. Then, remove the foil and bake for another 15 minutes. Remove the lasagna from the oven. While the lasagna stands (for at least 15 minutes), prepare the garlic rolls. Increase the oven temperature to 400°F and lightly spray your Temp-tations® Lid-It (or a cookie sheet) with cooking spray. Melt the butter in small saucepan over medium heat. Mix in the olive oil, garlic powder, salt, and oregano. Flatten each piece of dough into a 2'' circle on a lightly floured surface. Place a mozzarella cube near the edge of the circle and roll the dough around the cheese. Fold and tuck in the edges. Place each roll seam-side down on the lid or cookie sheet. Then, brush the rolls with the butter mixture. Sprinkle the Parmesan cheese on top and bake for approximately 20 minutes, or until golden brown. Serve hot.

- 1. Preheat Oven to 350F. Coat a 13X9 inch baking dish with cooking spray.
- 2. Prepare noodles according to package directions, drains noodles. Rinse with cool water; drain again. Lay noodles flat on waxed paper.
- 3. Cook Ground beef , onion and garlic in a medium skillet over medium high heat until meat is browned and crumbly ,about 8 minutes.Drain fat from skillet. Add Pasta sauce; heat to boiling. Spread 2 cups of meat sauce into prepared baking dish.
- 4. Mix ricotta and 1 cup mozzarella in a large bowl. Spread cheese mixture over each noodle.
- 5. Roll up noodles tightly; place seam sides down on top of meat sauce in dish. Spoon remaining sauce over rolls; sprinkle with Parmesan. Bake rolls until heated through about 30 minutes. Sprinkle with remaining mozzarella. Let stand 5 minutes before serving.
- 6. HELPFUL HINT: For a richer flavor; drizzled drained noodles with a touch of olive oil instead of rinsing them. Mix and Match: Use 1 pound of bulk-style Italian Sausage, ground pork or ground turkey instead of ground beef to make the sauce.
CLASSIC LASAGNA
While not a 30-minute meal, this lasagna is quicker and more straightforward than most. If you're in a real time crunch, use your favorite jarred red sauce. For greater success with the lasagna noodles, which have a tendency to stick together, boil them in the largest pot possible or work in batches - they need as much water as possible to move freely so they don't clump. This lasagna can be assembled, baked and refrigerated up to five days ahead, or frozen up to a month ahead if wrapped tightly.

- Make the sauce: Heat oil in a large, heavy bottomed pot over medium heat. Add sausage, if using, and cook, stirring occasionally, until it's starting to brown but not yet crisp, about 5 minutes.
- Add onion and garlic and season with salt and pepper. Cook, stirring occasionally, until the onion is totally softened and translucent (without letting it brown), 8 to 10 minutes. Add tomato paste and continue to cook, stirring until the tomato paste has turned a deeper brick red color, tinting the oil and onions a fiery orange color, about 2 minutes.
- Using your hands, crush the whole tomatoes into smaller, bite-size pieces and add them and the crushed tomatoes, stirring to scrape up any bits from the bottom of the pot. Fill one of the tomato cans halfway with water and add it to the pot. Season with salt and pepper. Bring to a simmer and cook, stirring occasionally, until the tomato sauce has thickened and flavors have come together, 20 to 30 minutes.
- Make the lasagna: Heat oven to 375 degrees and set a large pot of salted water to boil.
- Set aside 1 cup mozzarella. In a medium bowl, combine remaining mozzarella, ricotta, 1 cup Parmesan and cream; season with salt and pepper and set aside.
- Cook lasagna noodles in the large pot of salted boiling water until just softened (before they are even aldente), about 4 minutes. Drain and separate any noodles that are trying to stick together, slicking them with a bit of olive oil to prevent them from sticking further.
- Spoon a bit of sauce on the bottom of a 3-quart baking dish and top with a layer of noodles, avoiding any heavy overlap.
- Top with about 1 ¼ cups of sauce, and dollop ¼ of the cheese mixture over. Top with another layer of noodles and repeat three more times, ending with the last of the noodles (depending on size of the noodle/shape of the baking dish, you may have a few extra noodles) and the last of the sauce. Top with reserved 1 cup mozzarella and more Parmesan, if you like.
- Cover loosely with aluminum foil and place baking dish on a foil-lined rimmed baking sheet (to prevent any overflow from burning on the bottom of your oven).
- Bake until pasta is completely tender and cooked through and sauce is bubbling up around the edges, 30 to 40 minutes. Remove foil and increase temperature to 450 degrees. Continue to bake until lasagna is golden brown on top with frilly, crispy edges and corners, another 15 to 20 minutes. Let cool slightly before eating.

- Cook and stir ground beef, onion, garlic powder, and oregano in a large skillet over medium heat until onion is tender and beef is browned, about 10 minutes. Add tomato sauce and sugar; simmer until sauce is heated through, about 10 minutes.
- Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add the lasagna noodles and olive oil; cook until al dente, 8 to 10 minutes; drain.
- Cook the ground beef and sausage in a large pot over medium heat; drain. Stir in the mushrooms, garlic salt, oregano, thyme, basil, and tomato sauce. Season with salt and pepper; simmer 30 minutes.
- Meanwhile, mix together the ricotta cheese, eggs, and Parmesan cheese in a bowl.
- Ladle enough of the meat sauce into a 9x13 inch baking dish to cover the bottom in a thin layer. Form a layer atop the sauce with 3 of the lasagna noodles. - In a large saucepan, cook the sausage, beef, onion, carrot and pepper flakes over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer.
