Cocoa-Rubbed Steak With Bacon-Whiskey Gravy image

Steps:

  • Make the steak: Mix the cocoa powder, both paprikas, brown sugar, cayenne and 2 teaspoons salt; rub on the steak and bring to room temperature, 30 minutes.
  • Make the gravy: Cook the bacon in a large skillet over medium heat, stirring, until crisp, about 5 minutes. Remove to paper towels with a slotted spoon; set aside. Add the leek to the drippings and cook until soft, about 3 minutes. Add the flour and cook, stirring, 1 minute.
  • Remove the skillet from the heat. Add the whiskey, then return to medium heat; if the alcohol ignites, let the flames die out. Bring to a simmer and cook, stirring occasionally, until slightly thickened, about 2 minutes. Add the chicken broth and bay leaves. Bring to a boil over medium-high heat and cook until the mixture is reduced by one-quarter, about 8 minutes. Whisk in the heavy cream and simmer, stirring occasionally, until the gravy coats a spoon, about 7 minutes. Stir in the butter, reserved bacon and parsley; season with salt and pepper. Keep warm.
  • Heat a large cast-iron skillet over high heat, about 3 minutes. Add 1 tablespoon butter; when it melts, add the steak and sear until a dark crust forms, about 8 minutes per side. Transfer to a cutting board and let rest 5 minutes. Season with salt. Slice and serve with the gravy.

Steps:

  • Begin by preheating a cast iron skillet on high heat. While the pan is heating, wrap each filet with bacon and secure with a toothpick. Dry off both sides of the filets and season with a heavy pinch of salt and pepper. The pan is ready to cook when you can barely hold a hand 3" above the surface for more than a few seconds. Add 1 tablespoon of the butter and allow to melt. Sear the steaks on one side for 1-2 minutes (watch for burning). Flip the steaks and sear for another 1-2 minutes. This takes extra effort, but I think it's worth it: hold each steak with a pair of tongs to sear the bacon on the edge of the steak. When done, turn off the heat (but keep the pan on the burner) and tent the pan with aluminum foil. Meanwhile, mash together the butter and blue cheese in a small bowl. Add a big pinch of pepper. After the steaks have been resting in the pan for 5-7 minutes, move them to a plate and recover with foil. Turn the heat back on the pan and sear the asparagus very quickly, 3 minutes should produce char spots and a perfect crisp-tender texture. Remove the toothpicks, and serve the steaks and asparagus spears topped with dollops of the bleu cheese butter.

  • preheat oven to 420 degrees F.
  • wrap each steak with a strip of bacon.
  • put the olive oil in a large pan and heat the pan until you can move the olive oil around easily.
  • put your steaks in the pan and if you hear a sizzling noise that is good if not take the steaks out and heat it longer.
  • cook the steaks for 1 min on each side.
  • place the rosemary (or thyme) sprigs, garlic, and butter in the pan with the steaks.
  • flip steaks and continue to cook them 1 minute on each side until they have cooked a total of 3 minutes on each side.
  • put the steaks in the oven for 8 mins .
  • remove steaks from the oven and let them rest for 2 minutes.
  • remove the rosemary (or thyme) sprigs and the garlic from the pan, leaving all of the liquid.
  • pour red wine into the liquid left over in the pan.
  • cook the juices and red wine over low heat until boiling.
  • add the juice from the meat resting pan into the mix of liquids left over in the pan and it makes an amazing sauce.
  • plate the steak and pour the sauce over it. ENJOY!

  • Season the steaks on both sides with salt and pepper. In a small bowl, mix together the garlic and all but 2 teaspoons of the mustard. Place the steaks on a plate, and spread half of the garlic mustard mixture over one side of them. Let stand for 30 minutes.
  • Heat a large skillet over medium-high heat. Fry bacon until crisp, then remove from the pan, leaving the grease. Crumble the bacon and set aside.
  • Heat the bacon grease in the skillet over medium-high heat, and add olive oil if necessary to cover the bottom of the pan. Fry steaks mustard side down for about 5 minutes, until golden brown. While the steaks are frying, spread the remaining garlic and mustard over the top. Flip the steaks over, and fry for about 2 minutes, until browned. Remove steaks to a serving platter, and keep warm.
  • Keep the skillet over medium-high heat, and stir in the rosemary, whiskey, reserved mustard, Worcestershire sauce, brown sugar, and lemon juice. Simmer for about 2 minutes. Top steaks with crumbled bacon and the sauce, and serve.

True Texas grub! Should be the 'official' state food of Texas! There is not a restaurant that I know of that does not have their version of CFS on the menu! At least around here! Now, you will notice that there are lots of places where you add salt and pepper so use a light hand so that the finished product is not over salty or peppery. This is my tried and true version I have made since dh and I were just dating. Now, be ready cuz this makes a lot of gravy! Dh loves to drown his steak and potatoes with it! If you want to be truly Texan, serve this with mashed potatoes or french fries and some kind of bread like biscuits or Texas toast. Any leftover gravy can be used to top biscuits for breakfast! You may even want to make extra bacon and crumble that into the gravy in the morning- two meals in one! My kind of multi-tasking!

Chicken Fried Steak and Cream Gravy image

Steps:

  • Grab two dishes large enough to accommodate the steak. Combine the milk and egg in one and the flour and season salt in the other. I like to use plates with a turned up rim to keep things on the plate.
  • Trim fat from steak and cut it into 4 pieces. Sprinkle garlic powder, onion powder and a little salt and pepper over the steaks. Rub the seasonings into the meat and allow it to rest for a few minutes. Now pound the meat using a meat tenderizer if possible or anything heavy if not. Pound until meat is thin, about 1/4 inch, yes even if it already tenderized. You want this to melt in your mouth.
  • Heat enough shortening or oil in a large skillet- preferably cast iron- until the oil reaches 350 degrees. If you don't have a thermometer drop a little bit of flour in, the oil should sizzle nicely just like for fried chicken.
  • Meanwhile, turn the steak in the flour one at a time and shake to remove any extra flour. Now dunk the meat into the egg wash and let the extra drip off. Now put the meat back in the flour and turn it well to coat the whole piece really good. Place the meat on a cooling rack and repeat til each piece is coated.
  • When the oil reaches 350 degrees add the steak but do not overcrowd the pan. You may need to do this in two batches. Cook until golden brown and then turn to brown other side, again just like frying chicken. Remove to a cooling rack with a plate underneath to catch the oil and keep warm in the oven until all the meat is done.
  • Cut the bacon into pieces about an inch in size and add to skillet that still has all the oil and drippings from the steaks. Fry until bacon is cooked and starts to brown but is not really crispy. Remove all but 2 tablespoons of oil and all the drippings you can in the pan for the gravy.
  • Stir in the chopped green onion and the reserved bacon pieces. Sprinkle the flour over top and cook until the flour just starts to turn color a little. You want it to stay creamy in color so do not brown it. (I usually just use what is leftover from turning the meat)
  • Meanwhile, pour milk in a glass measuring cup and microwave to warm it.
  • Whisk milk into the flour in the pan stir often, cooking until gravy is as thick as you like it. Please adjust the amount of milk if you like so that it is the right consistency for you. Add salt coarse ground black pepper to taste.
  • To serve: Place one piece of meat on plate and spoon gravy over meat. Add more salt and coarse ground black pepper on top if desired.
  • You can garnish with a little extra chopped green onion and crumbled bacon if you wanna git fancy!
