Steps:

  • Preheat the oven to 350°.
  • Butter and flour the tube pan (10-inch).
  • Make the cake: Put the butter and sugar in a bowl and cream together using the electric mixer on medium speed until fluffy, about 5 minutes.
  • Scrape down the bowl.
  • Add the vanilla and eggs, 1 at a time, beating for 20 seconds after each addition.
  • Scrape down the bowl again.
  • In another bowl, whisk together the flour, baking powder, baking soda and salt.
  • Add this mixture to the butter mixture in thirds, alternating with the sour cream.
  • Beat for 45 seconds after each addition, and begin and end with the flour mixture.
  • Pour the batter into the prepared tube pan.
  • Make the syrup: In a small bowl, stir together the melted butter, sugar, and cinnamon.
  • Drizzle the syrup over the batter and with the blade of a knife or a skewer, swirl the syrup through the batter.
  • Make the streusel: In a bowl, combine the sugar, cinnamon, and pecans.
  • With a pastry cutter, cut in the butter, a few pieces at a time, until the mixture resembles coarse crumbs.
  • Scatter the streusel over the batter in the pan.
  • Bake for 50 to 55 minutes, or until a cake tester inserted in the center comes out clean.
  • Remove the pan from the oven to a wire rack to cool for 15 minutes.
  • Serve warm or at room temperature.

  • Heat oven to 350°F. Grease 12-cup fluted tube cake pan or 10-inch angel food (tube) cake pan with shortening; lightly flour. In small bowl, mix coffee and hot water; cool 10 minutes.
  • In medium bowl, mix flour, baking powder and salt; set aside. In large bowl, beat butter, sugar and eggs with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Beat in flour mixture, milk and sour cream on low speed until blended.
  • Remove 1 cup of the batter; stir into cooled coffee. Pour remaining batter into pan. Drop coffee batter by about 12 tablespoonfuls onto batter in pan. Cut through batters with knife for marbled design.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes in pan on wire rack; remove from pan to wire rack. Cool at least 1 hour 30 minutes. Serve warm or cool.

  • Preheat oven to 400 degrees F (205 degrees C). Grease a 10-inch bundt pan.
  • Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Mix in vanilla.

  • Streusel
  • Whisk pecans, spice mixture, brown sugar, flour, and salt in a small bowl to combine. Drizzle in butter and mix until clumps form. Set aside.
  • Cake and Assembly
  • Preheat an oven to 325°F. Lightly coat an 8½x4½" loaf pan with nonstick spray. Line with parchment paper, leaving overhang on long sides. Press paper into pan, then turn over, so greased side is facing up. Whisk flour, baking soda, baking powder, and ½ tsp. salt in a medium bowl to combine.
  • Beat sugar and butter in the bowl of a stand mixer fitted with paddle attachment on medium-high speed, scraping down sides of bowl halfway through, until very light and fluffy, 6-8 minutes. Reduce speed to medium. With motor running, add eggs one at a time, beating to incorporate and scraping down sides of bowl after each addition. Reduce speed to low; add half of dry ingredients and mix just to combine. Add sour cream and vanilla and beat to combine. Add remaining dry ingredients and beat until incorporated.
  • Scrape half of batter into prepared pan. Top with streusel (yes, it will look like a lot, but use all of it!), then scrape remaining batter over.   • Bake cake until a tester inserted into the center comes out clean, 80-90 minutes. Transfer pan to a wire rack and let cake cool in pan 15 minutes. Run a small knife around edges of cake to loosen if needed, then, using parchment paper, lift out of pan onto rack. Peel away parchment. Let cake cool completely.
  • Combine powdered sugar and a pinch of salt in a small bowl, then mix in orange juice, adding up to a teaspoonful more if needed, until you have a thick but pourable icing. Drizzle over cake and let sit until icing is set before serving, about 15 minutes.

  • MAKE FILLING AND TOPPING:.
  • Place sugar, pecans and cinnamon in food processor.
  • Cover and pulse until nuts are coarsely chopped.
  • Transfer 3/4 cup of mixture to small bowl and stir in chocolate for filling.
  • To remaining mixture in food processor add flour, cocoa powder and butter and pulse until mixture is crumbly for topping.
  • MAKE CAKE:
  • Preheat oven to 325°F
  • Butter bottom and sides of 9-inch springform pan & dust pan with flour, tapping out excess.
  • Sift flour, baking powder, baking soda and salt into medium bowl; whisk to combine and set aside.

  • For crust:
  • Position rack in center of oven and preheat to 400°F. Grind cookies in processor. Add butter and process using on/off turns until crumbs are moist. Press crumbs on bottom and 1 1/2 inches up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Wrap outside of pan with aluminum foil.
  • For filling:
  • In small bowl, dissolve instant espresso in 1 tablespoon water. Using electric mix, beat cream cheese in large bowl until smooth. Add sugar and continue beating until mixture is light and fluffy. Add eggs 1 at a time, beating well after each addition. Mix in espresso mixture, butter and ground coffee beans.
  • Combine chocolate and cream in heavy small saucepan. Stir over low heat until chocolate melts. Pour half of cheese filling (about 2 1/2 cups) into prepared crust. Drop 5 tablespoons melted chocolate mixture by tablespoons around edge of filling, spacing evenly. Use small sharp knife to swirl chocolate into filling. Carefully pour remaining cheese filling over. Drop remaining chocolate mixture by tablespoons into center 6 inches of filling, spacing evenly. Swirl mixtures together using tip of knife.
  • Bake cheesecake until edges are puffed and beginning to crack and top is golden brown, about 40 minutes (center will not be set). Cool on rack. Chill overnight. (Can be prepared 3 days ahead.)

  • Preheat oven to 350 degrees.
  • Grease and flour a 10" tube pan.
  • In a small bowl, mix chopped nuts, 2 T. sugar, and cinnamon; set aside.
  • In another small bowl, combine cream cheese, powdered sugar, and lemon juice and mix until smooth. Set aside.
  • Sift flour, baking powder, baking soda, and salt into a medium bowl.
  • In a large bowl, mix butter and 1 cup sugar until smooth.
  • Add eggs and vanilla; mix well.
  • Add sour cream alternately with flour mixture; mix well.
  • Pour half of the butter into prepared pan. Spoon cream cheese mixture on batter to within 1/2" of pan edge. Carefully pour remaining batter over cream cheese mixture. Sprinkle with nut topping.

Steps:

  • Preheat oven to 350°F. Butter 10-inch-diameter by 4-inch-deep angel food cake pan; dust with flour. Mix 1/2 cup sugar, walnuts, cinnamon and cocoa in small bowl. Sift flour, baking powder and salt into medium bowl.
  • Beat butter in large bowl until smooth. Gradually beat in remaining 1 1/4 cups sugar. Beat in eggs 1 at a time, then vanilla. Mix in dry ingredients in 3 additions alternately with milk in 2 additions. Spoon 1/3 of batter into prepared pan. Sprinkle with half of walnut mixture. Top with half of remaining batter, then remaining walnut mixture and remaining batter. Using knife, cut through batter to swirl walnut mixture.
  • Bake cake until tester inserted near center comes out clean, about 55 minutes. Cool cake in pan on rack. (Can be made 1 day ahead. Cover pan with foil; store at room temperature.)

Coffee Cake With Cranberry Swirl image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • (Decrease the temperature by 25 degrees if using dark pan).
  • Grease and flour a 9 or 10 inch tube pan. Tap out the excess flour.
  • Cream together the butter and sugar until light and fluffy.
  • Beat in the eggs just until well blended.
  • Mix together the flour, baking powder, baking soda and salt.
  • Lower the mixer speed, and add the flour mixture alternately with the sour cream or yogurt until just blended. DO NOT OVERMIX!
  • Stir in the almond extract and mix only until just combined.
  • Pour 1/3 of the batter into the pan.
  • Swirl 1/2 of the cranberry sauce into the batter.
  • Add another 1/3 of the batter, then swirl in the remaining cranberry sauce. Top with remaining batter.
  • Bake about 55 minutes or until toothpick inserted in the center comes out clean.
  • Let cool in pan on wire rack about 10 minutes. Cut around edge of the cake to loosen, then turn out and let cool completely on wire rack.
