COTTAGE BLUE CHEESE DIP
This is a recipe I have used for quite awhile- everyone seems to enjoy the mingling of the two cheese flavors and seasonings. Although there are always 2 or three other dips to choose -this goes the fastest- other ingredients may be added if you like, such as pimento, diced sweet peppers, chopped dill pickles, mushrooms....

- 1. Blend the cottage with an electric mixer until smooth. Add the remaining ingredients and mix well. If you feel it needs to be thinner , add a little more cream. Serve chilled, with vegetables or crackers or chips..great spread on toasted pumpernickel squares too.

CHUNKY BLUE CHEESE DIP
Every time I make this quick blue cheese dip, someone asks for the recipe. It only requires a few items, so its a snap to put together. I often prepare the thick spread with Gorgonzola cheese and serve it with toasted pecans. -Sandy Schneider Naperville, Illinois

FAMOUS COTTAGE CHEESE DIP
This is a recipe I developed to copy a tasty dip that came from our favorite local mexican restaurant when my husband and I were in college at Michigan State University. It's pretty close to the real thing! A very simple and easy dip to serve with tortilla chips and salsa.

SIMPLE BLUE CHEESE DIP FOR THE BLUE CHEESE LOVER
My grandmom used to serve this tangy yummy dip with celery. It makes a huge difference to use a high quality, strong blue cheese - if you use the cheap supermarket stuff this can be on the mild (I'd say bland) side. I like to use the strongest Spanish blue I can find. If you let it sit a couple of days in the fridge the blue flavor will intensify; you can also get stronger flavor by increasing the ratio of blue cheese to cottage cheese. Good with crackers or crudites; my husband uses it as a sandwich spread (try making one with turkey and tart apple slices); my toddler loves it straight out of a bowl (ever notice there's an "odd" in toddler?). You can use lower fat versions of the cottage cheese or milk without compromising taste, I think.

Steps:
- Remove rind from the cheese.
- In a medium size deep bowl (I use a 4 cup pyrex measuring cup) break the cheese into pieces.
- Add milk and cottage cheese.
- Blend with a hand blender until smooth (you can blend in a real blender too, but it's more annoying and harder to clean up).
- If consistency is too dense, add more milk and blend again.
- If it's too runny, add more cheese- the proportions are not rigid.
BLUE CHEESE DIP II
Blue cheese crumbles kindly lend their distinctive flavor to this simple, smooth mixture. Serve with corn chips. This dip tastes better the longer it chills before serving.
