CHUNKY CRANBERRY SALAD
I found this recipe while taking a cooking class. Full of mixed fruit, celery and nuts, it's a lively alternative to jellied cranberry sauce. When cranberries are in season, I buy extra and freeze them so I can make this salad year-round.

- In a large saucepan, combine the cranberries and pineapple juice. Cook over medium heat until berries pop, about 15 minutes. , Meanwhile, in a small bowl, sprinkle gelatin over cold water; let stand for 5 minutes. In a large bowl, combine the berry mixture, sugar and softened gelatin. Chill until partially set. , Fold in the pineapple, pecans, grapes, celery and orange zest. Pour into individual serving dishes. Chill until firm.

CRANBERRY SALAD
Steps:
- Dissolve gelatin in hot water, then add cold water. Cool mixture and set aside.
- Wash and grind cranberries. Pare and chop apples (and oranges, if using) into small chunks.
- Stir together the ground cranberries, chopped apples and oranges (or pineapple) nuts, and sugar.
- Add to slightly thickened gelatin mixture; then pour into a mold and chill until salad is firm and holds its shape. Unmold onto salad greens.

"CRANBERRIES seem to be traditional with everyone's Thanksgiving meal in one form or another. This salad is our favorite way to serve them, either as an attractive mold or for individual salads. The nuts and other fruit give it a refreshing crunch."

- In a large saucepan, bring sugar and water to a boil, stirring constantly. Remove from the heat; immediately stir in gelatin until dissolved. Chill until mixture is the consistency of unbeaten egg whites. , Fold in the cranberries, apples, orange and pecans. Spoon into greased individual salad molds, a 6-1/2-cup ring mold or an 11x7-in. dish. Chill until firm. If desired, serve on lettuce leaves and top with a dollop of mayonnaise.

- Chop cranberries and orange after washing first. The orange can be chopped with the peel on and seads in -- really! Cover the chopped fruit with sugar and let set overnight.
- Drain and save the juice from the cranberry/orange mixture. Add enough water to the juice to make two cups of liquid (1 hot to dissolve the gelatin and 1 cold). Mix the two pkgs of Jello with the the two cups of liquid. Let partially set.
- Dump in everything -- cranberries, orange, celery, and nuts. Stir well. Chill (that's the salad -- not you).
- Serve with the meal. Then hide the rest for you. =).

- Heat a small cast-iron skillet over medium heat. Toast pecans and celery seed, stirring constantly, until fragrant, 1 to 2 minutes. By replacing the Jell-O® with sugar-free Jello-O®, using no-sugar-added pineapple, and your choice of sugar substitute, this turns into a reduced-carb recipe. If you don't have a grinder, use a blender and water to grind the cranberries, then drain.

CLASSIC CRANBERRY SALAD
My husband's family has been using this traditional and delicious salad for holiday dinners for five generations. The women used to grind the cranberries and the orange in a food grinder, which was a messy job! Thank goodness for food processors! It can be made up to three days before serving, which is always a help when we are cooking for those holiday meals. Keep covered in refrigerator. Cook time is for chilling.

- Dissolve gelatin in boiling water; set aside.
- In food processor, chop the cranberries while still frozen.
- Add to the gelatin with 1 1/2 cup of sugar, stir to combine.
- In food processor, chop orange chunks until finely chopped; add to cranberry mixture.
- Stir in grape halves and pecans.
- Pour into decorative bowl or mold and chill overnight.
- Adjust sugar, if necessary.
BEST EVER CRANBERRY SALAD
This recipes was orginally my DH's Grandmothers and has been tweaked by my MIL. I didn't care for cranberry salad ever till I tried this. I have been making this for years now. Its more of a Jello than a salad. Great to get kids to eat something different. It's definitely something I look forward to eating every Thanksgiving and Christmas. Great on biscuits and rolls. I make this in a large glass decorative bowl because it doesn't look good if you try to transfer it to another dish for the meals. ** Note this is best if made the night before to give time for proper set. I have a lower sugar version posted also. Suggested serving size is about 3 tablespoons.

- In the blender puree cranberries and oranges. Add sugar to cranberry mixture and blend.
- In a large bowl dissolve jell-o into boiling water. When dissolved add ice to begin the setting process. Remove what few ice cubes that are remaining.
- Add cranberry mixture to jell-o. Mix well.
- Cover with saran wrap and set in fridge to set.
