  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 25 minutes. Drain and mash.

Creamy, Rich Ranch Potatoes With Cheese image

Steps:

  • In large bowl, blend soups and cream cheese.
  • Microwave til creamy and cheese is melted, stirring occasionally.
  • Stir in well, the dressing mix, then fold in 1 cup (half) the shredded cheese, then the potatoes.
  • Fold well til all potatoes are coated.
  • Pour/spoon into lightly greased 13x9 glass baking dish, mashing down a little, and spreading in pan evenly.
  • Sprinkle top with rest of shredded cheese.
  • COVER and bake at 350º for 50-55 minutes.
  • Uncover, top with onions.
  • Bake UNCOVERED for another 5 minutes or til onions are lightly browned.
  • *Nice additions:.
  • 1 cup diced, fully-cooked ham.
  • Cooked, crumbled bacon (4-6 slices).
  • Saute'd onions.
  • Saute'd mushrooms.

Steps:

  • Peel and cut the potatoes into 2-inch chunks. Put them into an Instant Pot® along with 3/4 cup water and 1 teaspoon salt.
  • Lock the lid and set the lever to seal. Press "manual" and set for 10 minutes. When done, manually release the steam.
  • Remove the lid, leaving the pot in "keep warm" mode. Start mashing the potatoes. Add the butter, cream cheese, milk and ranch powder. Mash again until the potatoes are smooth. Taste and adjust the seasoning with salt, pepper or more ranch. Thin with more milk if needed. Serve hot garnished with chopped chives. The potatoes will keep warm in the pot for up to 30 minutes.

Steps:

  • Wash and pierce potatoes in several places with a fork. Microwave on high 10 minutes until tender. Set aside to cool slightly.
  • Preheat oven to 350 degrees. Grease an 11 x 7 inch baking pan.
  • Combine cream cheese and sour cream in a large bowl; beat until smooth.
  • Add yellow onion, half of the cheese, half of the bacon bits and salt. Mix well.
  • When potatoes are cool enough to handle, cut in half. Scoop out pulp and mash potatoes.
  • Then add to the cream cheese mixture. Beat with a mixer. Stir in milk, dry ranch dressing mix, and mix well.
  • Spread potato mixture in prepared pan. Bake uncovered 30 minutes. Remove from oven, sprinkle with remaining cheese, bacon pieces, and green onions.
  • Bake 5 minutes longer, or until cheese melts.

  • Preheat oven to 350 degrees F. Mix together (in a large bowl) the ranch dressing, dill, cheese and bacon. Add in the potatoes. Sprinkle in a pinch of salt and pepper. Toss to coat potatoes. Spoon into a greased 9 x 13 baking dish. Cover with foil. Bake for 60 minutes. Stir gently halfway through to get the bottom potatoes rotated so they don't become burnt and to ensure that the middle and top potatoes get a chance to brown. Remove foil. Raise oven temperature to 400 degrees. Gently stir again, as necessary. Bake for an additional 15 minutes, then sprinkle on a little more cheese, if desired. Bake a few more minutes or until everything is gooey, browned and bubbly on top. Serve with scallions sprinkled on top for garnish. Great with a dollop of sour cream.
