SWEET POTATO BAKED OATMEAL
A wonderful breakfast treat using oats and sweet potatoes!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking pan.
- Mix rolled oats, brown sugar, baking powder, salt, cinnamon, and nutmeg together in a mixing bowl until ingredients are evenly distributed.
- Mix mashed sweet potatoes, milk, eggs, and vegetable oil together in a separate bowl until well blended. Pour sweet potato mixture into oats mixture and mix well. Spread mixture evenly into prepared baking dish.
- Bake in preheated oven until oatmeal has set and the top is golden brown, about 30 minutes.

- In a large bowl, mash sweet potatoes. Add eggs, orange juice, butter, sugar, vanilla, nutmeg and salt; mix well. Transfer to a greased 3-qt. baking dish. , Bake at 350° until set, 35-40 minutes. Top with marshmallows; return to oven until they just begin to puff and melt, 5-10 minutes.

- When sweet potato is close to finish, prepare oatmeal by mixing with water and simmering on stovetop for about five minutes, or microwaving for about two, until fully cooked. Add a bit more water during cooking as needed.
- When sweet potato is finished, cut it open and scoop out the soft insides. Add your sweet potato to oatmeal and stir with a fork to break up any chunks and get a smooth consistency.
