CREAMY BASIL DRESSING OR DIP!
The thin version of this recipe makes a great salad dressing. When thickened after refrigeration it makes a good vegetable dip, topping for a baked potato, or mayonnaise replacement for sandwiches. Can be made vegan by using tofu instead of yogurt. This recipe tastes best after marinating in the refrigerator for 24 hours (not in the cooking time). - In a food processor or blender, combine the lemon juice, basil, mustard, and garlic. Process until smooth. Then, with machine running, gradually ad oil. When oil has been completely blended in, add tofu (if making nondairy option). If using yogurt, remove the dressing from the food processor and place in small bowl and gently stir in yogurt.
- Season to taste with salt. Cover and refrigerate. Stir well before each serving. The tofu version will especially thicken when chilled. Thin with a teaspoon or so of water if needed.

I offer you here a blueprint dressing you can use for endless variations. The three that follow are classic combos, but I hope you'll be inspired to put your own spin on them. A few more ideas off the top of my head: stir in a spoonful of pesto or a spice blend; swirl in some chili oil or blend with a spoonful of herb sauce. Play around with different combinations and don't feel limited to use them on lettuce alone. - Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place peppers with cut sides down onto the prepared baking sheet.
- Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 20 minutes. Remove and discard skins.
- Combine roasted peppers, canola oil, pepitas, red wine vinegar, lime juice, cotija cheese, garlic, salt, and pepper in a blender or food processor. Blend to combine, about 10 seconds. Add cilantro a little at a time and blend until smooth.
- Combine mayonnaise and water in a large bowl and whisk until smooth. Add the blended pepper mixture to the mayonnaise mixture and mix thoroughly.

- With a fork, mash the cheese and buttermilk together until it resembled the consistency of cottage cheese.
- Add the remaining ingredients and blend well.
- Add salt and pepper to taste.
- Let sit, covered, in the refrigerator at least a few hours to blend flavors.
- If it's too thick, just add a little milk until it's the texture you desire.
- This is sooo good on a salad with fresh greens, tomatoes, cucumbers, slices of red onions, and kalamata or ripe olives.
