RED SNAPPER WITH MEDITERRANEAN RAGOUT
Steps:
- Preheat the oven to 400 degrees F.
- In a large oven proof skillet heat the olive oil over medium heat, add the potatoes and cook until tender, about 8 minutes. Add the onions, season with salt and pepper, cover and cook for 5 minutes. Add the white wine, simmer for 1 minute. Add the fish stock and bring to a boil and reduce the liquid by 1/2. Taste and adjust seasoning, if required. Portion the potatoes and onions into 6 stacks in the skillet.
- Season the red snapper with salt.
- Place one fillet, skin side up, on each stack of the potato onion mixture. Scatter the roasted garlic, cherry tomatoes, black olives, thyme, and rosemary around the stacks. Cover the skillet with a lid or foil. Bake for 25 to 30 minutes.
- Serve in shallow bowls with the cooking juices. Garnish with chopped parsley.
- Rinse the fish bones thoroughly in several changes of cold water. In a large stock pot place the fish bones and add the cold water. Bring to a slow simmer over medium heat.
- Skim the surface of foam and impurities to produce a clear, clean, fresh tasting stock.
- Add the leek, fennel, onion, celery, parsley, thyme, peppercorns, and bay leaves. Reduce the heat to medium-low and simmer for 20 minutes.
- Strain the stock and cool. Store the stock in the refrigerator for up to 4 days or in the freezer for up to 1 month.
OVEN ROASTED RED SNAPPER FILLETS WITH TOMATOES AND ONIONS
Steps:
- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
- Combine the tomatoes, basil, onions, and olives in a bowl. Season with salt and pepper, to taste. Season both sides of the fillets with 1 teaspoon salt, 1/2 teaspoon pepper, and Essence. Arrange the fish on the baking sheet, followed by the tomato mixture and then the lemon slices. Drizzle 1 tablespoon of olive oil over each fillet.
- Bake for 15 to 20 minutes, or until the snapper is cooked through. To serve, place a portion of Rice Pilaf on an entree plate. Use a spatula to remove the fish, along with the tomatoes, onions and lemons from the baking sheet and place over the Rice Pilaf. Drizzle with tomato water, if desired, and garnish each fillet with a chiffonade of fresh basil.

- Preheat the oven to 350 degrees F.
- Melt the butter in a large ovenproof saucepan or Dutch oven over medium-high heat. Add the onions and cook, stirring, until soft, 3 to 4 minutes. Add the rice and cook, stirring, until opaque and nutty in aroma, 2 to 3 minutes. Add the chicken broth and salt, stir well, and bring to a boil. Cover with a tight-fitting lid and transfer to the oven. Bake until the rice is tender and the liquid is absorbed, 25 to 30 minutes.
- Remove the rice from the oven and let stand, undisturbed, for 5 to 10 minutes. Fluff the rice with a fork and stir in the green onions, if desired. Serve hot.
- Combine all ingredients in a blender or food processor. Add just enough olive oil for flavor and season with salt and pepper, to taste.
RED SNAPPER "ART DECO": FLORIDA RED SNAPPER, PURPLE POTATOES, AND PICKLED PINK ONIONS IN A KEY LIME SAUCE

- In a shallow pan, over high heat, combine all the ingredients for the court bouillon and bring to a simmer. Season generously with salt.
- Place 4 of the snapper fillets into the court bouillon, making sure that they are fully submerged. The liquid should remain just below a simmer. Cook the fish for about 8 minutes until cooked through and remove to a plate. Repeat this with the rest of the fillets. Serve with the purple potatoes, pickled pink onions and the key lime sauce.
- Place the potatoes in a medium pot and fill with cold water to cover. Season the water with salt and bring to a boil. Cook until the potatoes are tender but not falling apart, about 15 minutes. Drain the potatoes and toss lightly with 2 tablespoons butter.
- Meanwhile, bring another pot of water to a boil and season with salt.
- In a medium saute pan, over medium heat, add 1 tablespoon of butter and shallots. Cook the shallots until soft but not brown. Season with pepper.
- Place the tatsoi or other leafy green into the boiling water and cook for about 20 seconds. Drain well. Add the tatsoi to the shallots and butter and toss.
- In a saute pan, over medium heat, add the oil. Add the onions and toss to coat with oil. Reduce heat to medium and cook for 2 minutes. Add the sugar and cook for 2 more minutes. Add the orange juice, zest, and red wine vinegar and cook until nearly all the liquid has reduced. Season with salt and white pepper. Set aside until ready to serve.
- In a small saucepan, away from the heat, add rum, limes, shallots, and garlic. Place the saucepan over medium heat and allow the rum to flame until it self extinguishes. Add the wine and reduce by half. Add the turmeric, annatto seeds, sriracha and cream and simmer to reduce, about 5 minutes. Season with salt. Strain the sauce and keep warm. If the sauce is too thin, it can be thickened with a little cornstarch before straining.
ROASTED SNAPPER WITH ARTICHOKES AND LEMON
Steps:
- Put oven rack in middle position and preheat oven to 425°F.
- Stir 2 tablespoons lemon juice into a large bowl half filled with cool water, then drop in juiced lemons. Cut 1 inch off top of 1 artichoke with a knife. Bend back outer leaves until they snap off close to base, then discard several more layers of leaves in same manner until you reach pale yellow leaves with pale green tips. (Dip artichoke in lemon water occasionally to limit discoloration.)
- Cut remaining leaves flush with top of artichoke bottom using a sharp knife, then remove choke by pulling out purple leaves and scraping out fuzzy layer with a spoon or melon-ball cutter. Trim 1/4 inch from end of stem, then trim base and side of stem with a vegetable peeler or sharp knife. Drop artichoke into lemon water. Trim remaining 3 artichokes in same manner.
- Drain artichokes, pat dry, and cut each into 6 wedges. Arrange artichokes in 1 layer in a 13- by 9-inch glass or ceramic baking dish. Stir together 3 tablespoons oil, 2 tablespoons lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a small bowl and pour over artichokes, turning to coat. Cover dish with foil and roast, turning artichokes over once or twice, until just tender, 20 to 25 minutes. Leave oven on.
- While artichokes are roasting, rub fish with 1 tablespoon oil and sprinkle all over with 3/4 teaspoon salt and 1/4 teaspoon black pepper. Remove foil from baking dish and arrange fillets, skin sides up, in 1 layer on top of artichokes. Roast, uncovered, until fillets are just cooked through, about 9 minutes. Divide fish and artichokes among 4 plates using a spatula, reserving pan juices. Stir together remaining 2 tablespoons oil, remaining tablespoon lemon juice, tarragon, and reserved pan juices and drizzle over fish.

- Heat oven to 400°. In a 10" ovensafe skillet over medium heat, heat oil. Add potatoes; cover and cook until tender, 10 minutes. Add onion, garlic, thyme and rosemary; season with salt and freshly ground black pepper. Cover and cook until vegetables soften, 5 minutes. In skillet, form potato mixture into four mounds. Season fish with salt and black pepper; place a fillet on each mound and top with lemon slices. Increase heat to high; when pan sizzles, add wine and cook until liquid reduces by half, 2 minutes. Add broth; bring sauce to a boil. Cover and bake, 8 minutes. Remove fish and vegetables and transfer to 4 plates; reserve broth in pan. Return pan to stove top over high heat and reduce broth, 1 to 2 minutes. Add tomatoes, olives, parsley and juice to taste; cook until sauce is thick, 10 minutes. Drizzle over fillets.
