  • Slowly pour in the wine and blend until mixture is a spreadable consistency.
  • Transfer mixture to a small crock or bowl; cover and refrigerate.
  • Bring to room temperature and serve with crackers.

1 cup grated sharp cheddar cheese
1 cup grated monterey jack cheese
3 ounces cream cheese, cut into chunks
2 tablespoons grated parmesan cheese
1 -2 garlic clove, minced
1/2 teaspoon dry mustard
1 teaspoon Worcestershire sauce
Tabasco sauce
1/4-1/3 cup dry white wine

  • In a large saucepan, combine the first seven ingredients; bring to a boil. Reduce heat; cover and simmer until the vegetables are tender. Add ham. , In another saucepan, melt the butter; stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cheese until melted; add to the soup.

Years ago, at a fancy dinner party featuring Prime Rib, this was the first course and the star of the party. The host was a little embarrassed to give out the recipe, but I managed to get it from him. Very easy and one of the best cheese soups I've ever had.
