Cucumber Sake-Tini image

Steps:

  • Combine the gin, sake, lime juice, cucumber, grapes, mint, agave nectar, and salt in a blender. Blend until frothy and smooth.

3/4 cup/180 ml gin
1/4 cup/60 ml premium sake
1/4 cup/60 ml fresh lime juice
2 cups/280 g peeled, seeded, and diced cucumber, frozen
1/2 cup/85 g green grapes, frozen
1/4 cup/10 g firmly packed fresh mint leaves
2 tbsp agave nectar
Pinch of sea salt

Steps:

  • Fill each shot glass with 1/2 tablespoon cucumber. Top with oyster and its liquor. Top that with 1 tablespoon chilled sake and garnish with zest. Serve in a bed of crushed ice.

Cucumber Lychee Sake image

Steps:

  • Make ginger simple syrup by combining ginger, and 1 cup water and 1 cup sugar in a small saucepan and simmer until sugar has dissolved. Set aside to cool. Peel cucumbers and cut half of 1 into thin slices. Puree the remaining 1 1/2 cucumbers in a blender. In a shaker, combine sake, pureed cucumber, ginger simple syrup and lychee juice. Shake to combine and serve in ice filled glasses garnished with lychee fruit.

1 cup sugar
2 English cucumbers, plus extra slices for garnish
1/2 cup sake
1/4 cup lychee juice, plus lychees for garnish

Cucumber, Ginger, and Sake Sangria image

Steps:

  • Cut cucumber crosswise into three equal pieces. Peel and chop 2 pieces, then put into a blender. Peel 4 lengthwise strips from remaining piece, leaving stripes of green, then halve piece lengthwise and core. Thinly slice crosswise.
  • Add water, sugar, fresh ginger, and lemon juice to blender and purée until smooth. Pour through a medium-mesh sieve into a pitcher, then stir in sake, crystallized ginger if using, and cucumber slices. Chill, covered, until ready to serve, up to 2 hours. Serve over ice.

1 large (1-lb) seedless cucumber (usually plastic-wrapped)
2 cups water
2/3 cup sugar
1 tablespoon finely grated peeled fresh ginger
2 tablespoons fresh lemon juice, or to taste
1 (720-ml) bottle chilled dry sake
2 tablespoons finely chopped crystallized ginger (optional)
