This cake is so yummy and easy to make! Perfect with a nice hot cuppa! I originally found this in Quick Cooking Magazine.

Steps:
- In a large mixing bowl, beat cream cheese, butter and sugar.
- Add eggs, one at a time, beating well after each addition.
- Beat in bananas and vanilla.
- Combine the flour, baking powder and baking soda, and add gradually to the creamed mixture.
- Mix the topping ingredients together; add half to the batter.
- Pour batter into a greased 13" x 9" x 2" baking pan, and sprinkle with the remaining topping.
- Bake at 350F for 25-30 minutes, or until a toothpick inserted in center comes out clean.
- Cool, then cut into slices.

- Set oven to 350 degrees.
- Grease a 13" x 9" baking pan.
- Cream 3/4 cup butter and sugar until light and fluffy.
- Add eggs and vanilla, beating well.
- Stir in cream; mix well.
- Sift together dry ingredients; add to creamed batter; mixing well.
- Then fold in sliced bananas.
- Spread mixture into prepared baking pan.
- FOR STREUSEL: Mix together brown sugar, flour and cinnamon; cut in butter, until mixture is crumbly.
- Sprinkle on top of coffeecake.
- Bake for 45-50 minutes, or until cake tests done.

- Beat butter and sugar with an electric mixer in a large bowl until light and fluffy; beat in eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Stir bananas into butter mixture.

GREEK YOGURT BANANA COFFEE CAKE
This banana coffee cake is what happens when you take the best elements of banana bread and combine them with the best elements of traditional coffee cake. - Preheat the oven to 350º Fahrenheit and butter a 9 inch by 13 inch baking pan.
- Begin with the streusel. Melt the butter in a small bowl and set aside to cool.
- Combine the sugar, flour, cinnamon, salt, and vanilla in a small bowl, and pour the cooled butter on top.
- Mix with a fork until thoroughly combined, and large chunks remain. Set aside while you work on the cake.
- Sift together the flours, baking powder, cinnamon, and salt in a medium sized bowl and set aside.
- In another medium sized bowl, add the bananas, eggs, Greek yogurt, and vanilla. Set aside.
- Using a hand mixer set to the highest speed, cream the butter and sugars in a large bowl until very light in both color and texture, about two to three minutes.
- Using the same blades, use the hand mixer to beat all of the wet ingredients together until homogenous. It may be a little chunky!
- Add the banana mixture to the butter mixture, beating until smooth and fluffy, another two minutes.
- Add half of the dry ingredients and beat until no ribbons of flour remain. Add in the other half and beat until completely combined. The batter will be thick!
- Pour the batter into your greased pan. Bake on the middle rack for 20 minutes.
- Pull the cake from the oven and sprinkle your reserved streusel on top, gently pressing it into the very top of the cake. Return the cake to the oven and continue baking until a toothpick comes out clean and the cake springs back when touched, about another 22 to 25 minutes.
- Move the cake to the top rack of the oven and set the oven setting to broil. If your oven doesn't have this setting, turn up the temperature to 450º Fahrenheit. Broil for 30 seconds to a minute. This gives the coffee cake a crunchy streusel topping.
- Remove from the oven and let cool completely. Cut into 16 servings and dust with powdered sugar.

My own creation, born of the love of all things cinnamon and banana...Easy and soooo satisfying! Lovely, sweet bits of banana in a tender cream cheese and cinnamon coffee cake with a bit of streusel. It is definitely not for those without a sweet-tooth! **You can easily double this recipe and put it in a 9x13 inch pan, increasing baking time to 50-60 minutes. If you do double, add eggs one at a time, beating after each addition until well combined. You can also use a blueberry-banana combo (1 cup blueberries, 1 banana for a double recipe), though you might want to increase the sugar in the batter by 1/4 cup.

- Preheat oven to 350 degrees. Lightly grease a 8x8 inch baking pan; set aside.
- In small bowl stir together 1 cup flour, 1 teaspoon baking powder, 1/4 teaspoon salt, 1/2 teaspoon cinnamon, and nutmeg; set aside.
- In a large bowl beat cream cheese and melted butter with an electric mixer on medium speed for 3 minutes or until creamy. Add 3/4 cup sugar; beat until combined. Add egg, beating well. Add flour mixture; beat until just combined. Stir in vanilla. Gradually fold in diced bananas.
- Batter will be very thick. Pour into prepared pan and smooth the top.
- In small bowl stir together 3 tablespoons brown sugar, 2 tablespoons sugar, 1 1/2 teaspoons cinnamon and flour. Cut in butter until mixture resembles coarse crumbs using pastry blender, two knives or your fingers (this is what I do). Stir in walnuts and sprinkle over batter.
- Bake for 45-50 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack.
MOM'S DIVINE COFFEE CAKE
I got this recipe from mom, who got it out of an old cookbook, and decided to rename it "Mom's coffee cake" . In fact, she renamed everything "moms" if it was good! Anyways, it is a great basic coffee cake, and can be made with or without the nuts. Impress your work friends, church group, or house guests. It is yummy, and tastes better the next day.

- Preheat oven to 325°.
- Grease a 3 quart Bundt pan.
- Puree bananas (1 cup).
- Combine banana, cake mix, pudding, oil, eggs and vanilla extract in large mixing bowl.
- Mix well, beat on medium speed 8 minutes, scraping sides of bowl occasionally.
- Mix almonds, brown sugar, cinnamon and nutmeg; pour one-half cake batter into pan.
- Sprinkle with sugar mixture, cover with remaining batter.
- Stick a knife in the batter, swirl in figure 8 patterns through the layers (Be careful, don't over mix layers).
- Bake 60-65 minutes. Cool in pan on rack 10 minutes, then invert on rack to cool completely.
- Dust with powdered sugar.
- You may garnish cake with sliced bananas if desired.
BANANA COFFEE CAKE DIAMOND
Steps:
- Preheat oven to 350°F. and grease and flour a 10-inch (3-quart) bundt pan, knocking out excess flour.
- Into a large bowl sift together flour, cocoa powder, baking soda, and salt. In a small bowl stir together bananas and sour cream. In another large bowl with an electric mixer beat together butter and sugars until light and fluffy and add eggs, 1 at a time, beating well after each addition. Beat in coffee extract (or espresso) and vanilla. Beat in flour mixture in batches alternately with banana mixture, beginning and ending with flour mixture, until batter is just combined.
- Spoon batter into pan and bake in middle of oven 50 minutes, or until a cake tester comes out clean and cake pulls away from side of pan. Cool cake in pan 10 minutes and invert onto a rack to cool completely. Let cake stand, wrapped tightly, at room temperature overnight.
- Dust cake with confectioners' sugar.
