ELEGANT CHICKEN
This is so easy! I use it when I'm having people over for dinner because it can easily be doubled to feed a large gathering or dinner party. Once you put it in the oven, you can forget about it for 2 hours and move on to something else. It's always a huge hit with our guests! Serve over rice and enjoy!

Steps:
- Preheat oven to 275 degrees F (135 degrees C).
- Line the bottom of a 9x13 inch baking dish with slices of chipped beef. Wrap bacon slices around chicken breasts, and place on top of chipped beef. In a medium bowl, mix together condensed soup and sour cream. Pour sour cream mixture over chicken breasts, and sprinkle with paprika.
- Bake in preheated oven for 2 hours.

Steps:
- Stir 1 teaspoon salt, 1/4 teaspoon black pepper, and cayenne pepper together in a small bowl; rub evenly into the chicken breasts.
- Heat the olive oil in a skillet over medium heat; cook the chicken in the heated oil until no longer pink in the center and the juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Stir the onion, lime juice, and avocado together in a bowl; season with salt and pepper. Spoon over the chicken breasts to serve.

ELEGANT CHICKEN AVOCADO
When I first came across this recipe, I didn't think I would like it, but I decided to give it a try. Boy, am I glad I did! The seasonings meld together and make a wonderful sauce. This is a great choice when you want something a little extra special or for company. If you only need 4 servings, make less cooked rice and only use 4 breast halves. I have also prepared this recipe using turkey tenderloins.

Steps:
- Using a large heavy skillet, heat the oil over medium heat.
- Add the ginger, cinnamon, paprika, curry, salt and pepper to the oil.
- Stir and cook the spices in the oil for 2 minutes.
- Add the chicken pieces and cook over medium heat on each side for approximately 5 minutes or till lightly browned.
- Remove chicken from pan.
- Pour off any excess oil from the skillet.
- Add wine to the skillet and deglaze for about 1 minute.
- Add broth, carrots and celery and return chicken to the skillet, bringing all to a boil.
- Reduce heat to low.
- Cover and simmer for 30 minutes or until chicken pieces are tender.
- Remove chicken from skillet; keep warm.
- Add half and half to skillet, stirring until incorporated, over low heat.
- Place rice on platter and distribute chicken pieces on top of rice.
- Place avocado slices on top then pour sauce mixture over all.
- Sprinkle top with slivered almonds.

This is one of my partner's favourite dishes & one of my specialties. It has lots of calories, but it's so delicious -- they are worth it! Great served with chips & a green salad.

Steps:
- Remove the skin from the chicken breasts& pound the fillets to flatten them slightly.
- Grill or fry the fillets until they are cooked, set aside.
- Heat the butter in a frying pan& add the garlic& saute.
- Add the cream, chicken powder& chives, stir over low heat until thickened.
- Top the fillets with slices of avocado& brie or camembert& heat under a grill so cheese melts.
- Place fillets on serving plate& pour the cream sauce over the top.

CHICKEN UNDER A BRICK WITH AVOCADOS AND CHILES
This technique encourages even cooking with the crispiest skin imaginable. The key to success is to cook the chicken over medium-low coals so the skin slowly renders out the fat. As for those grilled avocados, you're in for a treat. They're already our go-to side this summer.

- Open chicken and place on a work surface, skin side up. Using your palms, firmly press on breastbone to flatten the breast. Season chicken all over with 1 tablespoon salt, 1/2 teaspoon black pepper, and cayenne. Place in a baking dish; rub with 1 tablespoon oil, sprinkle with lemon zest, and scatter rosemary over. Let stand at room temperature for 1 hour.
- Build a medium-low fire in a charcoal grill, or heat a gas grill to medium. Place chicken, skin side down, on grill and place a brick or heavy skillet on top of chicken to weigh it down. (This will expose more skin to direct heat, making it crispy; the chicken will also cook faster.) Cook until skin is crispy and golden brown, about 15 minutes.
- Using tongs, set brick aside. Turn chicken, cover grill, and cook for 10 more minutes. Continue cooking and turning chicken every 10 minutes, covering grill between turns, until an instant-read thermometer inserted into the thickest part of the thigh registers 165°F, about 50 minutes total. Transfer to a carving board; let chicken rest for 10-20 minutes. (Resting will make for juicier meat.)
- While chicken rests, add more coals to fire if necessary to increase heat to medium, or heat gas grill to medium-high. Season chile, bell pepper, and onion with salt and pepper. Grill (or use a grill basket) over medium heat, turning occasionally, until softened and charred in spots, about 12 minutes. Transfer onion to a medium bowl. Transfer chiles and peppers to a work surface and cut lengthwise into 1" slices. Add to bowl with onion. Add 1/4 cup vinegar to vegetables and toss to coat.
- Heat 2 tablespoons oil in a small skillet over medium-low heat. Add garlic and cook until soft but not browned, about 4 minutes. Add basil and stir to wilt. Add basil mixture to bowl with onion. Season vegetables to taste with salt and more vinegar, if desired.
- Rub cut side of avocados with remaining 1 tablespoon oil, season with salt, and sprinkle with chili powder. Grill, cut side down, until avocado is gently warmed and flesh is golden brown, about 3 minutes. Serve chicken with vegetables and avocados.
