CUBAN-STYLE YELLOW RICE

Yellow rice is a staple in the Caribbean because of its beautiful color and flavor. Being Cuban, our household often served yellow rice. It's traditional to garnish yellow rice with pimentos, but I don't like them so I don't. Serve yellow rice with Cuban-style roast pork, or add cooked chicken pieces while cooking the rice to make Arroz con Pollo.

SOUTH AFRICAN YELLOW RICE

This is a traditional South African recipe, which comes from the great culinary tradition of the Cape Malays -- originally brought in as slaves in the 17th century. It's easy and plain, but great with meats like venison, corned beef tongue or any meat with gravy. Also usually served with Bobotie: There is a good recipe by Caryn on this site.

BRAZILIAN YELLOW RICE

This dish is a staple that was brought to Brazil in the 1500s by Portuguese colonizers. Saffron was originally used to season and color the rice, but turmeric became more popular due to its greater abundance and lower price. This version is based on a college friend's recipe. Her family in Brazil usually served it alongside black beans stewed with similar ingredients to compliment the flavor and make a complete meal. For special occasions, they added chicken, peppers and peas, transforming the rice into a popular dish called galinhada.

Steps:

  • Add the oil to a medium saucepan and heat over medium-high heat until shimmering. Add the onions, turmeric, coriander, cumin, garlic powder and 1 teaspoon salt and reduce the heat to medium. Cook, stirring occasionally, until the onions are softened and the spices are toasted, 3 to 4 minutes.
  • Add the rice and stir until the grains are completely incorporated into the onion mixture. Add the broth and bring to a boil over medium-high heat. Reduce the heat to low, cover tightly and simmer for 15 minutes.
  • Remove the pot from the heat and let sit, covered, for 10 minutes more; the rice will continue to steam. Uncover the pot. All the broth should be absorbed and the onions will be on top. Fluff the rice with a fork before serving.

2 tablespoons olive oil
1 small onion, cut into small dice (about 1/2 cup)
1/2 teaspoon ground turmeric
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon garlic powder
Kosher salt
1 cup long-grain white rice

CENTRAL AMERICAN YELLOW RICE AND CHICKEN

Delicious AUTHENTIC rice recipe from an experienced AUTHENTIC central american cook! I use this side dish for family gatherings and special occasions. This recipe was handed down to me from my grandmother and hope you enjoy it as much as I do! It calls for PARBROILED rice not regular long grain rice. It is better to use parbroiled as it will not become all mushy and pasty as regular rice does when you make the mistake of adding too much water (as many of us rice cooks do!). I reccomend using chicken breast and not any other dark chicken meat because when you shred dark meat, you get really ugly dark parts and it looks kinda disgusting when served with rice (or any other side dish for that matter). Chicken breast comes out white and clean. When it comes to adding the curry powder, I usually add about 3 tablespoons because I like my rice to come out a nice darker yellow color and I enjoy the taste of curry but it may not suit your palate. You should taste the rice broth as you add the curry to determine if you have added enough curry to suit your taste buds. Don't forget to salt your rice DURING cooking time! If you notice that the water that you added to cook the rice has absorbed and the rice is still a little hard then don't worry and add another 1/4 cup water and extend cooking time about 10 min or until water has been absorbed. You can also add small shrimp to this recipe to give it a little seafood twist (it also tastes great!).

EMIRATI CHICKEN AND RICE (MACHBOOS OR FOGGA)

We really enjoy this, masha Allah (praise be to God). This is a traditional dish of the United Arab Emirates. It can be made with meat, fish and shrimp as well, cooking times adjusted. It says it is always served with radishes, freshly sliced onion, sliced limes and dates though I can't testify to the authenticity of that I added raisins to the dish and did not serve dates but with sliced limes and sometimes a radish salad and Recipe #387327. I modified this off of http://www.fahad.com/Dishes which is said to be originally from The Complete United Arab Emirates Cookbook by Celia Ann Brock- Al Ansari. I really did have to figure out the original recipe on my own though as it was poorly written.

Steps:

  • If using the oven method heat to 350°F.
  • Rince chicken and remove skin.
  • Rub with sea salt and bahrat.
  • Gently fry in 1 1/2 tbs butter until browned on both sides.
  • Transfer to a pot, add light olive oil, stock, crushed garlic, loomi, cinnamon, cardamom, curry leaves and tomato. Cover and simmer for 30 minutes.
  • Meanwhile fry slices of onion in remaining butter until soft and browned, remove from heat and add dark raisins to onions.
  • Taste stock pot for salt.
  • Rice white Basmati rice until the water runs clear.
  • Remove chicken pieces from pot and add rice then set them on top of the rice with the onion/raisin mixture.
  • Bring to a boil and then cover pot and reduce heat to low for 15 minutes.
  • Once the liquid has been absorbed, arrange the 4 sheets of paper towel around the pot's rim and tightly cover. (This makes for fluffier rice). Also you may bake it in the oven until done from this point which I prefer as I find it cooks the rice more evenly in a greased pan.
  • Remove from heat and leave to steam, unopened, for 15-20 minutes.
  • Let stand for 10 minutes before serving. Serve hot on a platter with lime wedges or halves and plain yogurt.

There are two benefits to rinsing rice. Firstly, it removes any debris. Secondly, and most importantly, it is to remove surface starch.
