MICROWAVE BREAKFAST CAKE FOR ONE
You've heard that breakfast is the most-important meal of the day. After fasting overnight, it is important to refuel and jump-start the body with wholesome foods. This breakfast cake can be prepared the night before so that in the morning (or any time of day), you can fuel your body in just minutes with a healthy dose of carbs, protein and fat!

- For the cake: Combine the milk, chia seeds, vanilla, egg yolk and banana in a small microwave-proof jar or container (I prefer half-pint Mason jars). Add the flour and baking powder and stir until well incorporated and the batter thickens. Store in the fridge until ready to serve.
- Microwave the jar on high for 1 to 1 1/2 minutes, then serve.
- For the peanut butter cake: To the cake recipe, add the peanut butter and 1/2 teaspoon cinnamon and give everything a good stir. Once the cake is microwaved, drizzle some honey and sprinkle more cinnamon, if desired.
- For the chocolate chip cake: To the basic recipe, add the chocolate chips and 1 tablespoon chopped walnuts. Once the cake is microwaved, top with the orange zest, more walnuts and honey, if using.
- For the fig oatmeal cake: Omit the flour in the cake recipe, and substitute with the oats. Add the figs and cinnamon. Once the cake is microwaved, add the almonds, coconut flakes and a drizzle of maple syrup, if using.

MICROWAVE COFFEE & WALNUT CAKE

Steps:
- In a medium bowl, beat the butter and sugar together until light and fluffy. Gradually add the eggs followed by the flour and instant coffee. Stir most of the walnuts (if using) into the batter, reserving a few for decoration. Transfer to a microwave-proof dish and cook in the microwave on full power for 2 mins. Reduce the power to medium and cook for 2 mins.
- After 4 mins, check to see if the cake is cooked - it should be risen and spring back when touched. If it needs a bit longer, cook on medium for 1 min more at a time, checking after each minute until the cake is cooked. Remove and allow to cool.
- Meanwhile, make the coffee butter cream. Dissolve the coffee in the milk, then add the butter and icing sugar. Beat until smooth, spread over the cake and top with the reserved walnuts.

5-MINUTE MICROWAVE CHEESECAKE RECIPE BY TASTY
Here's what you need: butter, graham cracker, cream cheese, sugar, vanilla extract, fresh raspberries

Steps:
- Melt the butter in a small microwaveable ramekin. Tilt the ramekin to coat the sides.
- Crush the graham crackers into fine crumbs, then add to the ramekin with the butter and mix well. With a spoon, press the crust evenly against the bottom of the dish.
- In a small bowl, combine the cream cheese, sugar, and vanilla, stirring until there are no lumps.
- Spread the filling on top of the graham cracker crust.
- Microwave for at least 4 minutes, 45 seconds at a time, at half power. Make sure the cheesecake does not bubble over the sides of the ramekin.
- Chill in the freezer for at least 30 minutes, until completely cool to the touch.
- With a knife, loosen the edges of the cheesecake, then invert onto a plate, or eat straight from the dish.
- Top with a few raspberries.
- Enjoy!

- Stir 1 tablespoon softened butter and white sugar together in a coffee mug until fluffy; stir egg, sour cream, and vanilla extract into the butter mixture. Add 1/4 cup flour and baking powder into the mixture; stir until smooth.
- Mix 2 tablespoons flour, brown sugar, and cinnamon together in a bowl. Mash 1 tablespoon butter into the flour mixture with a fork or pastry cutter until mixture is crumbly; sprinkle over the cake batter in the mug.
- Cook in microwave oven on high for 1 minute. Continue cooking in 10-second intervals until a toothpick inserted into the middle comes out clean.

EVERYDAY COFFEE CAKE (MICROWAVE)
This is a delicious and easy coffee cake that my mom used to make frequently when I was younger! It's so simple to whip it up and toss it in the microwave! I've also made this using reduced fat Bisquick, applesauce in place of the oil, and Egg Beaters in the batter to make it a little healthier, and it still tasted fabulous.

- In mixing bowl, stir together 1 1/2 cups biscuit mix and white sugar.
- Add 1/2 cup milk, egg, and oil.
- Beat by hand, mixing well.
- Pour into greased 8-inch round dish.
- Blend 1/3 cup biscuit mix, brown sugar, butter, and cinnamon until crumbly.
- Sprinkle over batter and sprinkle with nuts.
- Microwave on HIGH for 5-7 minutes. (6 minutes always works perfectly in my microwave.).
- Cool 15 minutes; drizzle with fine glaze.
- Serve warm.
- Glaze: Stir together confectioner's sugar and 1 Tbsp milk.

ONE-MINUTE MICROWAVE MUG COFFEE CAKE
I've tried this once; but I forgot to add the vanilla. It ended up being pretty good anyway and reminded me of my mom's cinnamon "rolls" (which are actually made of biscuits).
