- Chop the egg whites. Combine the chopped egg whites, celery, scallion, green pepper, mayonnaise, yogurt, black pepper and Dijon mustard in a bowl.
- Spread four slices rye bread with the egg salad mixture. Top with romaine lettuce leaves and the remaining four slices of rye bread.
- 3 Points per serving (1 sandwich).

Four Cups & One Apple Salad is my favorite salad to serve with Shish Kabobs in the summertime. It is very easy to stir up and chill for dinner tonight or tomorrow night. I always use the fat free sour cream! This dish is a favorite with guests and my family. We prefer the apple to be a Granny Smith green one.
