FRESH TOMATO PASTA

This is an extremely simple pasta recipe that I love to make when I don't really feel like cooking! I use rigatoni, but you can use whatever pasta you prefer. This is especially delicious with tomatoes fresh from your garden. Serve with garlic bread and a simple lettuce salad with Italian dressing.

Fresh Tomato Pasta image

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat.
  • Coarsely chop the tomato and transfer to a small bowl. Sprinkle the tomato chunks with basil, olive oil, and salt. Set aside.
  • Once the water is boiling, stir in the rigatoni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander, and then return the pasta to the pot.
  • Pour the tomato mixture over the pasta and toss to mix.

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook onions, garlic and dressing in large skillet on medium-high heat 2 min. or until onions are tender, stirring occasionally. Stir in tomatoes; cook 2 min.
  • Drain pasta. Add vegetable mixture and remaining ingredients; mix lightly.

  • Prepare pasta as directed on package; drain.
  • Keep warm.
  • Cook garlic and onion in dressing in large non-stick fry pan for 2 minutes or until softened.
  • Add tomatoes; cook an additional 2 minutes.
  • Toss with pasta and remaining ingredients.
  • Serve warm.
  • Serve with grilled Chicken,if desired.
  • I added Prawns to mine.
  • Substitute Kraft Signature Sundried Tomato and Oregano Dressing (which is what I used) and different pastas such as Penne for different variations.

Fresh Garden Tomato Sauce image

Steps:

  • Heat olive oil in a saucepan over medium heat and add sliced garlic. Cook and stir for about 30 seconds before adding basil leaves. Sizzle garlic and basil in olive oil until the thinnest slices of garlic just start to turn golden. Quickly transfer in tomatoes. Add salt and pepper flakes and increase heat to medium-high.
  • Cook, stirring occasionally, until the mixture simmers and the tomatoes have completely collapsed and liquefied. Turn off the heat.
  • Using a strainer or colander, strain the sauce into another pot, pressing everything through with the back of a ladle or spatula, until nothing is left in the colander except the skins and seeds.
  • Place strained sauce back over medium heat and reduce to about 5 cups, or until desired thickness. Taste for seasoning and use immediately, or store in an airtight container until needed.

  • blanch and peal the tomotoes. I leave the seeds in as they are small in this type of tomato.
  • 1/2 and run the tomatoes through a food processor or blender.
  • Saute onion and galic in the olive out.

  • Add oregano, basil, salt and pepper.
  • Let simmer. The length of time will depend on how thick you want the sauce.

Steps:

  • Bring a large pot of salted water to the boil. Drop in the tomatoes, cook for 15 seconds, and then transfer them to a large bowl of cool water. Slip off the skins and cut them in half through the middle. Poke out the seeds with your finger, and roughly dice the flesh. Warm a large ceramic or glass mixing bowl by rinsing it with hot water. Toss the tomatoes in the bowl with the olive oil, mixed herbs, parsley, and ricotta cheese.
  • Bring the large pot of water back to a rolling boil, add the spaghetti, and cook until tender but still firm. Drain and add it immediately to the tomato mixture in the bowl. Sprinkle with the Parmigiano. Toss with tongs or two wooden spoons until the pasta is evenly coated. Add salt and freshly ground pepper to taste. Pass extra Parmigiano cheese at the table.
