- Place the shucked oysters on linen or paper towels and pat dry.
- Combine the almond meal, flour, thyme and pepper in a flat dish. Blend well. Toss the oysters in the mixture until thoroughly coated. Pat them lightly to make the coating adhere.
- Heat the oil and butter in a skillet large enough to hold the oysters without crowding. Cook the oysters until they are golden brown on one side, about 45 seconds to a minute. Turn each oyster and cook on the opposite side until golden brown.
- Fill each oyster shell with an equal and ample portion of the salsa. Top each serving with a fried hot oyster. Serve two oysters to each person.

FRIED OYSTERS WITH HORSERADISH CREAM AND TOMATO CORN SALSA

- Combine the corn, tomatoes, onions, jalapenos, cilantro, lime juice, and lemon juice. Mix well. Season the salsa with salt and pepper. Set the salsa aside. In a saucepan, combine the horseradish, shallots, garlic, mustard, white pepper and cream. Season with salt and pepper. Bring the liquid to a boil, whisking gently. Reduce the heat and simmer, stirring occasionally, until the sauce is thick enough to coat the back of a spoon, for about 12 minutes. Remove from the heat and keep warm.
- In a small bowl, season the flour with Essence. In another bowl, season the masa with Essence. In a third bowl, beat the eggs with the milk. Season the oysters with Essence. Dredge the oysters in the seasoned flour. Dip the oysters in the egg wash, letting the excess drip off. Dredge the oysters in the seasoned masa, coating each side completely. In a large saute pan, heat the olive oil. When the oil is hot, but not smoking, carefully lay the oysters in the hot oil. Pan-fry the oysters for about 1 1/2 minutes on each side or until golden brown. Remove the oysters form the pan and drain on a paper-lined plate. Season the oysters with Essence. Serve the oysters with the horseradish cream and salsa.

FRIED OYSTERS

- Heat oil in a deep fryer to 350 degrees F.
- Whisk together the buttermilk, garlic powder, paprika and hot sauce in a casserole dish. Whisk together the flour, cornmeal, salt and pepper together in a separate casserole dish.
- Add the oysters to the buttermilk and let soak. Then remove, letting the excess drip off, and dredge through the cornmeal mixture, tapping off the excess. Fry in the hot oil in batches, until golden and crisp, about 2 minutes. Remove to a paper towel-lined plate and sprinkle with salt and pepper. Serve hot with the Remoulade Sauce.
- Mix together the mayonnaise, mustard, paprika, vinegar, Worcestershire sauce and hot sauce in a small bowl until well combined. Season with salt and pepper. Serve immediately or cover with plastic wrap and refrigerate until serving.

- Boil 4 cups water in pot and add oysters for 10-15 seconds .
- Remove with slotten spoon to paper towels to drain.
- Blend cornstarch with 4 Tbs water and add oyster and soy sauce.
- Heat oil in wok, add wine, oysters, green onion& ginger.
- Stir fry 15 seconds.
- Add cornstarch mixture and stir fry 1 minute.
- Enjoy.

FRIED OYSTERS WITH TARTAR SAUCE
Getting fried oysters from your summer seafood shack is fun, but making them yourself yields something crispy, light and, most significantly, tender. Shuck carefully, bread delicately and fry to golden perfection, then serve with this bright, lively tartar sauce, which gets its spark from cornichons, capers and lemon juice. Eat while hot - whether you're wearing flip flops or polished oxfords, that's up to you.

- Prepare the oysters: Season flour with salt and pepper. Dredge each oyster in the flour, then dip in the beaten egg, then coat evenly in the panko.
- Set breaded oysters on a baking cooling rack, leaving a little room between the oysters so they can dry and set. Refrigerate until ready to fry and serve.
- Make the sauce: Finely mince garlic with a pinch of salt until sticky and pasty. Mince shallots, cornichons and capers as finely as possible. Add all to a small bowl. Stir in mayonnaise, sour cream, lemon juice, caper brine and cornichon vinegar, and stir well. Add chopped parsley, stir well and season to taste with salt. Refrigerate until ready to serve.
- Fry the oysters: Melt enough shortening in a deep medium skillet (we love cast iron) over medium for 1 1/2 inches of liquified fat once hot. Increase heat to medium-high. It's ready to fry in when a few crumbs of panko or the tip of a wooden chopstick sizzles actively in the fat.
- Add the oysters cold from the refrigerator, working in batches of 6 to 8 or as you have room. Fry, making sure to turn them to get both sides, until golden brown, 1 to 2 minutes, depending on size. Remove with a slotted spoon or spider, and let rest on a clean rack while you fry the rest. Season each batch with a little salt while still piping hot, as soon as you pull them from the fat. Serve with tartar sauce.

- In a medium bowl, mix together buttermilk and 1 tablespoon Emeril's Original Essence. Add oysters and turn to coat; let stand for 5 minutes. Meanwhile, in a shallow dish, mix together masa harina, flour, and remaining tablespoon essence; set aside.
- In a medium heavy-bottomed saucepan with high sides, heat oil to 350 degrees on a deep-fry thermometer.
- Dredge oysters in masa harina mixture, shaking off any excess. Working in batches, carefully add oysters to hot oil and cook, turning, until golden, 2 to 3 minutes. Using a slotted spoon, transfer oysters to a paper towel-lined plate; season with salt and pepper. Serve immediately.
FRIED OYSTERS
Fried oysters are a staple of izakaya, the eating pubs that can be found in every Japanese neighborhood. These kinds of establishments are much more popular than bars, because we typically like to nibble on something while we enjoy a drink. In fact, this dish is one of my favorite complements to a frosty mug of draught beer. You'll see that I don't season the cabbage slaw in this recipe. In Japan, we typically create our own impromptu dressing with the two sauces for the oysters.

- To make the slaw, place the cabbage, red onion, carrots, and cucumber in a bowl under running water for 10 minutes. Drain well. Remove the cucumber slices and reserve. Mix the vegetables and refrigerate the slaw until ready to use.
- To make the tartar sauce, combine the mayonnaise, capers, cornichons, chives, and egg in a bowl and mix well. Season to taste with lemon juice and salt.
- To make the oysters, heat a deep fryer or pan filled with oil 4 inches deep to 325°F. Line a tray with paper towels.
- Season the oysters with salt and white pepper. Set up a breading station in the following order: oysters, bowl of flour, beaten egg, bowl of panko, plate. With one hand, lightly coat an oyster in flour and drop it into the egg. Then, with the other hand, make sure the oyster is coated in egg and wipe off any excess. Transfer the oyster to the panko, making sure it is coated well, and move to the plate with the "flour" hand. Repeat with the remaining oysters.
- Carefully place 4 or 5 oysters in the hot oil and cook, flipping halfway through, until the crust turns golden brown, about 6 minutes. Set the oysters on the paper towel-lined tray and lightly sprinkle with salt. Repeat with the remaining oysters.
- To serve, place 1/2 cup of slaw in the corner of a plate and place 3 reserved cucumber slices, 1 lemon wedge, and 1 tomato quarter along one side. Set 4 or 5 fried oysters along the other side, and add 2 tablespoons of the tartar sauce in the corner. Serve with 2 tablespoons of the tonkatsu sauce on the side.
- Tonkatsu sauce, a popular dipping sauce for fried foods, is to Japanese what ketchup is to Americans. It is produced from vinegar, apples, tomatoes, and dates, and every home has a bottle in the fridge.
DEEP FRIED OYSTERS
This is a very simple recipe for fried oysters. You can use the same recipe for shrimp and scallops too.
