FRUIT SALAD WITH PORT

A healthy recipe that can be served as a nice summer dessert (topped off with some whipped cream), or served atop some cottage cheese for a great summer meal. Recipe from The No Salt Cookbook.

Fruit Salad With Port image

Steps:

  • Place all fruit in a bowl, pour wine/brandy over the top and toss ingredients together gently. Chill prior to serving.

2 peaches, peeled and sliced
1 bunch seedless grapes, stems removed
2 bananas, sliced
1 pint fresh strawberries, halved
2 tablespoons port wine
1 tablespoon brandy (optional)

Dried Fruit Compote with Port, Cinnamon, and Ginger image

Steps:

  • Combine 1 cup water, Port, sugar, cinnamon sticks, and ginger in heavy medium saucepan. Bring to boil over high heat, stirring until sugar dissolves. Add fruit. Reduce heat to medium. Simmer until fruit is tender and syrup thickens slightly, stirring occasionally, about 10 minutes. Transfer compote to bowl. Cover and chill at least 4 hours and up to 1 day.

1 cup water
1 cup ruby Port
1/2 cup sugar
2 cinnamon sticks
2 tablespoons finely chopped crystallized ginger
2 8-ounce bags mixed dried fruits, large pieces quartered

CHUNKY FRUIT SALAD IN WINE

This is a very simple and elegant salad. Serve this salad in a clear glass bowl for an elegant dinner or in mason jars for picnics or outdoor entertainment. There are only 2 points for 1 cup. For the wine, I used a very cheap Boone's Farm Fruit flavor.

Chunky Fruit Salad in Wine image

Steps:

  • Heat Wine in Sauce Pan.
  • Add Splenda to heated wine.
  • Heat until desolved and then take off heat.
  • Cap fresh strawberries and cut into chunks.
  • Peel fresh pineaplle and cut into chunks.
  • Use seedless grapes and leave whole.
  • Combine the fruit in a large glass bowl.
  • Poor wine and Splenda mixture over the chunked fruit.
  • Serve Chilled.
  • Serve immedately.
  • If storing leftovers or storing over several hourse before the meal, you MUST drain the juice. Otherwise, the juice makes the fruit too soggy.
