Garlic and Herb Broiled Tomatoes image

Steps:

  • Preheat broiler to medium high.
  • Cut plum tomatoes in 1/2 lengthwise. Squeeze or scoop out most of the pulp and seeds. Place the tomatoes flesh side up in a heat safe dish and season them with salt and pepper. In a bowl combine the bread crumbs, Parmigiano, thyme, garlic and olive oil. Season mixture with pepper and sprinkle over the tomatoes. Place tomatoes under the broiler for 5 minutes or until golden brown

4 plum tomatoes
1 cup plain bread crumbs
1/3 cup grated Parmigiano-Reggiano
1 teaspoon chopped fresh thyme leaves
1 clove garlic, finely minced
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 400° F.
  • Halve tomatoes lengthwise and scoop out seeds with a small spoon. Arrange tomatoes in one layer, cut sides up, on a non-stick or lightly oiled jelly-roll pan.
  • In a small food processor blend basil, garlic, oil, salt, and pepper until mixture forms a paste and spread about 1/2 teaspoon in each tomato half.
  • Bake tomatoes 30 to 40 minutes, or until tender and juicy but intact, and cool slightly before serving.

Steps:

  • Melt 1 tablespoon of the butter in large skillet over medium heat.
  • Add cherry tomatoes, salt and pepper; saute, tossing occasionally, until some of the tomato skins just begin to split, for about 3 minutes.
  • Stir in basil, parsley, green onion and garlic.
  • Cook, stirring occasionally, 2 minutes longer.
  • Reduce heat to low.
  • Add remaining 1 tablespoon butter.
  • Cook, swirling pan, until butter is just creamy and the cherry tomatoes are coated.
  • Serve immediately.

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Place a piece of aluminum foil over a baking sheet.
  • Place the tomatoes and garlic into a mixing bowl. Drizzle with olive oil, and toss until evenly coated. Season to taste with salt and pepper, then spread evenly onto the prepared baking sheet.
