Garlic Mashed Potatoes image

Steps:

  • In a small saucepan, bring the garlic and oil to a boil, then turn the heat to low and cook uncovered for 5 minutes, or until the garlic is lightly browned. Turn off the heat and set aside. The garlic will continue to cook in the oil.
  • Meanwhile, place the potatoes in a large pot of salted water, bring to a boil, and cook for 15 to 20 minutes, until the potatoes are very tender. With a slotted spoon, remove the potatoes from the water, reserving the cooking water, and remove the garlic from the oil, reserving the oil.
  • Process the potatoes and garlic through a food mill fitted with the medium disk. Add the reserved olive oil, 2 teaspoons of salt, the pepper, cream, and 3/4 cup of the cooking water to the potatoes and mix with a wooden spoon. Add more cooking water, if necessary, until the potatoes are creamy but still firm. Season, to taste, and serve hot.

Steps:

  • Cook potatoes until fork tender (about 30 min).
  • While potatoes are cooking, heat olive oil in a medium skillet over medium heat.
  • Add garlic and onions, cook, stirring frequently until soft and golden (about 10 min).
  • Drain potatoes, reserve 1/4 cup liquid.
  • Cool potatoes until you can handle them to slip off the skins.
  • Cut potatoes into quarters and return to the saucepan.
  • Add 1/4 cup potato water, milk, salt & pepper.
  • Heat mixture until heated through (about 5 min).
  • Mash potato mixture until smooth.
  • Stir in onion/garlic & thyme.
  • Spoon potatoes into a serving dish; drizzle with butter and serve.

Steps:

  • Peel potatoes, cut into large chunks and place in a pot of boiling water.
  • (Cook potatoes until they can be mashed with a spoon).
  • Meanwhile brown the onion and the garlic in a small amount of butter.
  • Strain the potatoes and place back into pot.
  • (Leave the burner on a low heat).
  • Add the browned onions and garlic.
  • Add the sour cream, milk, butter, garlic salt, garlic powder and salt.
  • Mash all together.
  • Mash the potatoes until desired"thickness.
  • "NOTE***Please feel free to use more or less of any of the ingredients to attain desired taste.
  • NOTE***Using more milk will result in"creamier" mashed potatoes and less milk will result in"chunkier" mashed potatoes.

Steps:

  • Put the potatoes in a medium saucepan and add just enough water to cover them. Add 1 teaspoon salt and bring to a simmer over medium heat. Do not boil. Cook for 12 to 15 minutes or until the potatoes are just tender enough to slide off a paring knife when pierced. Drain well and return to the pan. Set the pan over low heat and cook for 1 to 2 minutes to dry the potatoes out.
  • Remove from the heat and lightly mash the potatoes with a fork just to break them up. Stir in the milk, mashed garlic and olive oil. Run the potatoes through a food mill or mash them with a potato masher to the desired consistency. Season with salt and pepper, to taste, and serve immediately.
  • Put the cloves in a dry cast iron skillet and cook over low heat for 20 to 30 minutes, or until softened. Turn frequently so that the cloves soften but do not brown. Slide the cloves from the skillet onto a plate to cool to the touch. Squeeze the softened garlic pulp from the individual cloves.

  • Peel potatoes and quarter lengthwise; cut crosswise 1/2 inch thick. In a 5-quart saucepan, combine potatoes and garlic cloves; cover with water (about 8 cups) by 1 inch. Add 1 tablespoon salt.

I decided to use her technique and seriously increase the garlic content to come up with the flavor that I thought a Garlic Mashed Potato dish should have. Simmering the garlic with the potatoes smooths out the harsh garlic taste while perfuming the potatoes with an abundance of garlic. I also wanted the dish to be very easy to size upwards for company. You can do this very easily for every two additional potatoes you use. By the way... My husband told me I had errors in my recipe. Steps:

  • Peel potatoes and cut into 1/2 inch thick slices.
  • Peel garlic into individual cloves.
  • Simmer potato slices and garlic cloves in a sauce pan with enough water to barely cover.
  • Once the potatoes are tender, drain the water from the pan, reserving 1/2 cup of water.
  • Mash the potatoes with the evaporated milk and butter.
  • Depending upon the size of the potatoes you may need more liquid.

Steps:

  • In a large soup pot combine the potatoes and garlic with enough water to cover them by several inches.
  • Bring the water to a boil, cover the pan, and lower the heat.
  • Let the pototoes simmer steadily for 20 minutes or until they are tender when pierced with a skewer.
  • Set the oven at 450 degrees.
  • Have on hand a 12-inch baking dish.
  • Rub the dish with a thin film of oil.
  • Drain the potatoes and garlic and set them aside until they are cool enough to handle- do not let the potatoes become cold.
  • Cut the potatoes into quarters and squeeze each one with your fingers or set the potatoes on a board and tap them lightly with a mallet.
  • Transfer the potatoes to the baking dish, packing them tightly into the dish.
  • Chop the garlic and scatter it on the potatoes.
  • Drizzle the oil on top of the potatoes and sprinkle them with salt and pepper.
  • Transfer the dish to the hot oven.
