GERMAN FILLED HOERNCHEN

German Filled Hoernchen image

Steps:

  • In a medium bowl, stir together the flour, salt, sugar and almonds.
  • Cut in the 2/3 cup butter until the mixture is crumbly.
  • Add egg, wine, rum and lemon zest. Mix gently until well blended. Adjust the flour if necessary to make a stiff dough.
  • On a lightly floured surface, knead the dough briefly, shape into a ball, wrap and chill for at least one hour or until firm.
  • Preheat oven to 350 degrees F (175 degrees C).
  • On a floured surface, roll the dough out to less than 1/4 inch in thickness. Brush with melted butter and cut into triangles about three inches across.
  • Place a dab of jam along one side of each triangle and roll up from the jam end to the point. Seal with a dab of water if necessary.
  • Place pastry horn onto an ungreased cookie sheet and brush with beaten egg yolk.
  • Bake for 20 to 25 minutes in the preheated oven, until crisp and golden. Dust with confectioners' sugar if desired.

This recipe has been handed down from my great grandmother in Germany. We've had these every Christmas since I can remember and I now make them every year with my kids. They are so delicious.

Vanille Hoernchen (German Christmas Cookies) image

Steps:

  • Mix all ingredients except powdered sugar together in a medium mixing bowl.
  • Knead by hand until dough comes together.
  • Don't over knead it.
  • Seperate dough into about 30 segments.
  • Form each segment into a half moon or cresent shape.
  • Place on ungreased cookie sheet.
  • Preheat oven to 350 degrees.
  • Bake 10-12 minutes until they're golden colored.
  • Roll the cookies in the powdered sugar while they're still hot or dust them with the powdered sugar while still on the cookie sheet.
  • It is important that you do this while they're still warm or the sugar won't stick.
  • Put on wire rack to cool.

If you like rolls with a tough crust, this is your roll. These are exactly like the rolls I ate when I lived in Germany. My brother found this recipe and had me test it out. Turns out really yummy.

Brotchen (German Rolls) image

Steps:

  • Preheat oven to 450°F.
  • Pour 2 1/2 cups flour into a large bowl and form a well in the center.
  • In a separate container, mix yeast, sugar, and two tablespoons water (water comes from the 1 cup above).
  • Pour yeast mixture into the well but do not mix with the flour at this time.
  • Cover bowl with a cloth and set it in a warm place for 15 minutes to rise.
  • Add remaining water and oil and beat until mixed. Add SALT.
  • Turn dough out onto counter and knead until smooth. Adding remaining 1/2 cup flour as needed.
  • Put dough in bowl, cover and let rise until double in size. (about 30-40 minutes).
  • Punch down and divide dough into 12 parts.
  • Shape into oval rolls and place 3" apart on greased and floured cookie sheet.
  • Cover and let rise until double in size.
  • Beat egg white and 1 tsp water with a fork until frothy and brush onto rolls.
  • Bake for 15-20 minutes or until golden brown.
  • The time is an estimate, depending on how fast your dough rises.
