- Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
- Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.

- Streusel
- Whisk pecans, spice mixture, brown sugar, flour, and salt in a small bowl to combine. Drizzle in butter and mix until clumps form. Set aside.
- Cake and Assembly
- Preheat an oven to 325°F. Lightly coat an 8½x4½" loaf pan with nonstick spray. Line with parchment paper, leaving overhang on long sides. Press paper into pan, then turn over, so greased side is facing up. Whisk flour, baking soda, baking powder, and ½ tsp. salt in a medium bowl to combine.
- Beat sugar and butter in the bowl of a stand mixer fitted with paddle attachment on medium-high speed, scraping down sides of bowl halfway through, until very light and fluffy, 6-8 minutes. Reduce speed to medium. With motor running, add eggs one at a time, beating to incorporate and scraping down sides of bowl after each addition. Reduce speed to low; add half of dry ingredients and mix just to combine. Add sour cream and vanilla and beat to combine. Add remaining dry ingredients and beat until incorporated.
- Scrape half of batter into prepared pan. Top with streusel (yes, it will look like a lot, but use all of it!), then scrape remaining batter over. Starting at a short side of the pan and working your way to the other short side, drag a butter knife back and forth from one long side to the other through batter to marble streusel; smooth surface.
- Bake cake until a tester inserted into the center comes out clean, 80-90 minutes. Transfer pan to a wire rack and let cake cool in pan 15 minutes. Run a small knife around edges of cake to loosen if needed, then, using parchment paper, lift out of pan onto rack. Peel away parchment. Let cake cool completely.
- Combine powdered sugar and a pinch of salt in a small bowl, then mix in orange juice, adding up to a teaspoonful more if needed, until you have a thick but pourable icing. Drizzle over cake and let sit until icing is set before serving, about 15 minutes.
- Do ahead: Cake can be baked 3 days ahead. Store airtight at room temperature.

FRESH APPLE SPICE CAKE

- Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
- Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.

This recipe comes from the Caribbean Island of Grenada, known the world over as "The Spice Island." Use freshly grated nutmeg which has a lemon sweet delicacy that does not exist in the commercially ground. Although Grenadians sometimes spread a vanilla or chocolate butter cream icing over the cake, the cake is best left unfrosted. This cake is especially good with fresh sliced peaches, nectarines, plums or sectioned navel oranges. It's even better with any of these fruits spooned on top.

- Sift the flour, baking powder and salt together onto a piece of wax paper and set aside. Cream together the butter, sugar, lime rind, nutmeg, cinnamon and allspice until silvery and light-no sugar grains should be discernible on the tongue when the mixture has been properly creamed. (This may take as long as 5 minutes at high mixer speed.) Beat the eggs in, one at a time. Now add the sifted dry ingredients alternately with the milk, beginning and ending with the dry. (I usually mix the flour in - in about five separate additions and the milk in - in three.).
- Spoon the batter into a well buttered and floured 9 x 5 x 3-inch loaf pan, pushing the batter well to the corners and smoothing the surface as much as possible. Bake in a slow oven 300 F for 1 to 1 1/2 hours or until the cake begins to pull from the sides of the pan and leaves an imprint that vanishes slowly when you press the top with your fingers.
- Remove the cake from the oven, stand the pan upright on a wire rack and allow the cake to cool in the pan for 10 minutes. Loosen the cake around the edges with a thin-blade spatula, turn out on a wire rack and cool to room temperature. To serve, slice just as you would pound cake.

GINGER SPICE CAKE

- Preheat the oven to 350°F. Coat a 9-inch round cake pan with nonstick cooking spray. Cut a circle of parchment paper to fit the pan bottom and place it inside; then spray the paper. Set aside.
- Sift the dry ingredients into a large bowl. In the bowl of an electric mixer, beat the egg, molasses, sugar, and melted butter until thick. - Make cake:
- Place oven rack in middle position and preheat oven to 350°F. Butter pan and set aside.
- Whisk together flour, baking soda, spices, and salt in a bowl.
- Beat together sugar, butter, and rum with an electric mixer at medium-high speed until combined well, then add egg and beat until pale and fluffy, 2 to 3 minutes with a stand mixer or 5 to 6 minutes with a handheld. MINNA CANTH'S SPICE CAKE
A lovely, soft spice cake with a surprise ingredient - whipped cream! Minna Canth (1844-1897) was a Finnish playwright, novelist and essayist as well as an energetic fighter for women's rights and social justice. This recipe comes from the Canth family recipe collection and was printed in the Perinnemakuja maakunnista cookbook. I've modified it slightly - the original recipe called for 1 tbls of ground bitter orange peel, which I don't like at all, so substituted cinnamon instead. You can of course experiment and find your favourite spice combination, too!

- Grease and flour a 2 litre cake pan (I use a Bundt pan).
- Whip eggs with sugar until light and fluffy.
- Add the whipped cream to the egg mixture, mix to combine.
- In a separate bowl, combine the flour with baking soda and the spices.
- Add dry ingredient mixture alternately with the molasses, mixing well after each addition.
- Finally, add the melted butter, mix to combine.
- Pour the batter into the prepared pan and bake at 175 C for 30 minutes.
- After the first 30 minutes, lower the oven temperature to 150 C and bake for further 20-30 minutes, or until cake tests done.

- Beat oil and sugar together. Add eggs and half of the yogurt. Mix well.
- Mix baking soda into orange juice and add to batter.
