GOOEY OLD-FASHIONED STEAMED MOLASSES BREAD
When I was growing up, the smell of this bread greeted me as I walked in the door from school. I thought everyone baked bread in a slow cooker. Like my grandmother and mother, my daughters and I now bake this glorious comfort food. -Bonnie Geavaras, Scottsdale, Arizona

Steps:
- Layer two 24-in. pieces of foil. Starting with a long side, roll up foil to make a 1-in.-wide strip; shape into a coil. Place on bottom of a 5-qt. slow cooker to make a rack., Combine bran, flours, cranberries, baking powder, baking soda, salt and cinnamon. In another bowl, beat egg, buttermilk, molasses and honey. Stir into flour mixture just until blended (do not overbeat). Pour into a greased and floured 2-qt. baking dish. Tightly cover with lightly greased foil. Place in prepared slow cooker. Cook, covered, on high about 3 hours, until a thermometer reads 190-200°., Remove dish to a wire rack; cool 10 minutes before inverting loaf onto the rack. Serve warm or cold.

Steps:
- Preheat oven to 325 degrees.
- Spray 9X4 inch loaf pan with non stick spray.
- Sift dry ingredients together.
- Mix liquid ingredients together, then add to dry mixture.
- Blend well with electric mixer.
- Pour into prepared loaf pan.
- Bake for 1 and 1/2 hours.
- Cool for 10 minutes in pan, then turn out and cool completely.
- Delicious with cream cheese.
- Freezes well.

OLD-FASHIONED PORRIDGE AND MOLASSES BREAD
I have had this recipe for over 40 years and it has never failed. The aroma of it baking is wonderful, and it also makes great toast. Also a great addition to have with baked brown beans. This freezes very well; I cut the loaf up before I freeze, that way I take out just the slices I need.

Steps:
- Pour boiling water over oats and shortening in a bowl. Stir until shortening melts; let stand for 20 minutes, giving it a stir once in a while.
- Meanwhile, dissolve sugar in lukewarm water. Add yeast and let stand for 10 minutes. Stir briskly with a fork.
- Stir yeast mixture into the partially cooled oat mixture with molasses and salt. Let cool to lukewarm, 5 to 10 minutes. Beat in 2 1/2 cups of flour, gradually adding remaining flour as needed.
- Turn dough onto a floured surface and knead, 8 to 10 minutes. Shape into a smooth ball and place in a greased bowl, rolling the dough so the top is greased. Cover and let double in size, about 1 1/2 hours.
- Punch dough down and shape into 4 loaves. Place into greased 8 1/2x4 1/2-inch bread pans. Cover and let rise until doubled in size, about 1 hour.
- Preheat the oven to 400 degrees F (200 degrees C).
- Bake in preheated oven until tops are golden brown, 30 to 35 minutes.

OLD FASHION MOLASSES BREAD
Old fashioned New England flavor using a bread machine! You can mix the bread in the machine then bake it in the regular oven using your favorite pans, I do.

Steps:
- Place ingredients in the bread machine pan in the order suggested by the manufacturer. Select Dough or White Bread setting, and then Start.
- If the dough does not form a ball on the paddle, add 1 tablespoon of flour at a time until the ball forms. Allow machine to complete selected cycle.
- To bake conventionally, remove the dough from the bread machine pan after the Dough cycle has completed. Shape into a loaf, and place in a greased 9 x 5 inch loaf pan. Let rise until doubled. Bake at 350 degrees F (175 degrees C) for about 40 minutes.

OATMEAL MOLASSES BREAD I
This recipe came from a really fun cookbook, the Dairy Hollow Hill House Soup & Bread Book. It is my husband's favorite bread of all the bread I make. Perfect toasting bread, and makes great PB&J sandwiches, according to my son.

Steps:
- Mix the boiling water, butter and oatmeal.
- Let stand 30 minutes or until cool.
- Mix the yeast and warm water in the bowl of your mixer and let stand until proofed.
- Add the oatmeal mixture and the molasses.
- Mix the salt with one cup of the flour and add to the mix.
- Mix until combined.
- With the dough hook attachment on the mixer, keep adding flour until the dough comes together and is no longer sticky.
- Then let it knead on low speed about 10 minutes.
- Take the dough out of the bowl and finish kneading by hand until somewhat smooth- this dough is a little rough textured.
- Turn into a buttered bowl, cover with plastic wrap, then a towel and let stand to rise until doubled (about 2 hours).
- Punch down, divide and shape into 2 loaves, place in greased loaf pans, set aside to rise again.
- Preheat the oven to 375°F.
- Bake the loaves until done, about 35- 45 minutes.
