GREAT GRANDMA PEARL'S ANGEL FOOD CAKE WITH PEACHES AND CREAM
My great-grandmother Pearl was famous for her angel food cake. She would enter baking contests with this recipe and always took home the blue ribbon. Among her bounty of prizes? A KitchenAid stand mixer (which came in very handy for this recipe, considering she used to beat the egg whites by hand) and a new stove! Not to mention a mighty fine sash and a ribbon proclaiming her the queen of cakes.

Steps:
- Preheat the oven to 325 degrees F.
- In a standing electric mixer, beat the egg whites at medium speed until foamy. Add the cream of tartar and salt and beat until stiff peaks form. Beat in the sugar, a few tablespoons at a time, until smooth and glossy, about 4 minutes.
- Transfer the egg whites to a large, wide bowl. Using a fine sieve, gradually sift the flour over the egg whites, gently folding in the flour with a spatula. Fold in the vanilla and almond extracts.
- Scrape the batter into a 10-inch angel food cake pan. Using a table knife, slice through the cake batter several times to release any large air bubbles. Tap the cake pan once or twice on a flat surface. Bake in the center of the oven for 20 minutes. Increase the oven temperature to 350 degrees F and bake for about 35 minutes longer, until a toothpick inserted in the center comes out clean. Invert the pan onto the neck of a wine bottle and let cool completely.
- To loosen the cake, run a thin-bladed knife around the side and tube of the pan. Unmold the cake and transfer to a platter. Cut the cake into wedges and drizzle with some of the reserved syrup. Serve with the sliced peaches and whipped cream.

Steps:
- Preheat the oven to 350 degrees F.
- Butter the bottom of two 8-inch cake pans. Then line them with parchment paper and butter and flour the lined pans.
- Cream the butter and sugar on high speed in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy. On medium speed, add the eggs, 1 at a time, then the sour cream, zests, and vanilla, scraping down the bowl as needed. Mix well. Sift together the flour, cornstarch, salt, and baking soda. On low speed, slowly add the flour mixture to the butter mixture and combine just until smooth.
- Pour the batter evenly into the pans, smooth the tops, and bake in the center of the oven for 40 to 45 minutes, until a toothpick comes out clean. Let cool in the pans for 30 minutes, then remove to wire racks and let cool to room temperature. If using 1 cake, wrap the second well and freeze.
- To make the filling for one cake, whip the cream, sugar, and vanilla in a mixer fitted with the whisk attachment until firm. Slice one of the cakes in half with a long, sharp knife. Place the bottom slice of the cake on a serving platter, spread with 1/2 the whipped cream and scatter with sliced strawberries. Cover with the top slice of the cake and spread with the remaining cream. Decorate with strawberries.

GRANDMOTHER'S POUND CAKE II
This recipe is over 100 years old and is the original kind of pound cake: it contains 1 pound each of butter, sugar, eggs and flour and contains no salt, baking powder or flavoring (but flavoring such as vanilla extract or almond extract can be added if desired!)

Steps:
- 1 In a medium saucepan, heat the milk over low heat until bubbles form around the edges. Remove from the heat. 2 In a medium bowl, whisk the egg yolks, sugar, and vanilla until pale yellow, about 5 minutes. Whisk in the flour. Gradually add the hot milk, whisking constantly. Transfer the mixture to the saucepan and cook over medium heat, stirring constantly, until boiling. Reduce the heat and simmer for 1 minute. Scrape the mixture into a bowl. Stir in the liqueur. Place a piece of plastic wrap directly on the surface of the custard to prevent a skin from forming. Refrigerate 1 hour up to overnight. 3 Place the rack in the center of the oven. Preheat the oven to 350°F. Grease a 9 × 2-inch round cake pan. 4 Prepare the dough: In a large bowl, stir together the flour, sugar, baking powder, and salt. With a pastry blender, cut in the butter until the mixture resembles coarse crumbs. Add the egg and vanilla and stir until a dough forms. Divide the dough in half. 5 Scatter half of the dough evenly in the bottom of the prepared pan. Press the dough into the bottom of the pan and 1/2 inch up the sides. Spread the chilled custard over the center of the dough, leaving a 1-inch border around the edge. 6 On a lightly floured surface, roll out the remaining dough to a 9 1/2-inch circle. Place the dough over the filling. Press the edges of the dough together to seal. Brush the egg wash over the top of the cake. Sprinkle with the pine nuts. With a small knife, make several slits in the top to allow steam to escape. 7 Bake 35 to 40 minutes, or until golden brown on top. Let cool in the pan on a rack for 10 minutes. 8 Invert the cake onto the rack, then invert onto another rack to cool completely. Sprinkle with confectioner's sugar before serving. Serve immediately, or wrap the cake in plastic wrap and refrigerate up to 8 hours. Wrap and store in the refrigerator. From "1,000 Italian Recipes." Copyright 2004 by Michele Scicolone. GRANDMOTHER'S POUND CAKE
The recipe is from Fannie Farmer Cookbook (1972 edition). It is a buttery dense cake. I have been making it for years. My family loves this cake. My daughter is especially fond of the ends. I have made it to serve plain or as an ice cream cake topped with a frozen fruit mixture. You must use an electric mixer to get the batter light and fluffy.

GRANDMOTHER'S OLD-TIME TEA CAKES
My grandmother would always have a plastic tub of these cookies waiting for us when we would come to visit. This is a very old Southern recipe--my grandmother cooked for many years with a wood-burning stove, so the baking temperature is approximate. You may need to adjust the temperature up or down, depending upon your oven. Of all the wonderful things that she made, these were the best! They are great with milk or coffee, and they are a much-loved family favorite.

- Combine eggs, buttermilk, and vanilla. Stir wet ingredients into shortening/sugar mixture.
- Sift flour, baking soda, and baking powder together.

- Place dough on lightly floured board or pastry cloth and roll out to approximately 1/4 inch thick.
- Cut cookies with round cookie cutter (my grandmother used a 2-inch biscuit cutter) and place onto an ungreased cookie sheet.
- Bake at 350 degrees for 10 to 15 minutes until just beginning to brown. Don't overcook!
- Store in a covered tin or plastic container.

NOT YOUR GRANDMOTHER'S FRUITCAKE
Fruit cake gets a bad rap. And normally, rightfully so. Most fruitcakes are best suited as doorstops, or substitutes for dumbbells. The only bicep curl you will do with this recipe is bringing another piece to your mouth. The combination of dried fruits, bourbon and spice results in a delectable cake that also makes a great holiday present.

Steps:
- FOR THE CAKE:.
- Heat oven to 350°F.
- In a medium pot, cook the dried fruits, bourbon and orange juice just until the fruits are plump - about four to five minutes. There will be some liquid left.
- In the bowl of a stand mixer, cream the butter and sugar on medium speed until light and fluffy. Add the eggs one at a time. On low speed, add the dry ingredients and mix until combined. Add the orange juice bourbon and fruit mixture. Stir to combine.
- Pour batter into a bundt pan sprayed with non-stick spray. Bake at 350F for about 45 minutes until a tooth pick inserted into the cake comes out clean. Let cool.
- When cake is completely cooled, seal in an airtight container. Every two to three days, feel the cake and if dry, brush with more bourbon. Continue to baste for two weeks for maximum flavor, or eat whenever you want.
- FOR THE GLAZE:.
- Mix all glaze ingredients together and drizzle over the top of the cake.
- OPTIONAL:.
- Feel Free to use any and all dried fruits in this: chopped dried peaches, dried apples, dried pears, dates - if it's dried, it will work!
- For a chocolatey twist, add ¾ cup chopped semisweet chocolate to the batter.
- Get nutty: add pecans or hazelnuts to the batter or the top of the cake for a nutty, crunchy variation.
- Garnish the top of the cake in festive holiday style. Dried fruit slices, cinnamon sticks, red and green cherries are all seasonally appropriate.
- Traditionally, fruitcake is boozy, but feel free to use apple cider in place of the bourbon.
- I like to use a bundt pan for this but you can use a loaf pan, a 9-inch cake pan or even make fruit cake cupcakes!
