EASY CORN AND GREEN ONION SALAD
This quick and easy recipe is a great side dish to add to any meal. Great for meals that have a heavy/ big main dish but you want to serve a little something extra on the side. Can be made up to 1 day in advance! Add Old Bay® for a little extra spice (great if being served along side seafood).

CUCUMBER TOMATO AND GREEN ONION SALAD
My mother always made this salad, so I tried it on my future husband when we were courting. I discovered later that he didn't like vinegar in his foods, but he learned to enjoy this salad and called it piccalilli. -Jan Peterson Mesa, Arizona

GRANDMA'S CUCUMBER AND ONION SALAD
Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

SALAD WITH RADISH AND GREEN ONIONS
Small red mild radish are a favorite salad ingredient with many Germans. One of the many salad variations we usually eat. We prefer the mild nutty flavor of a medium-priced walnut oil to the fruity flavor of olive oil, the grainy texture of the country-style mustard and some tang from the vinegar, but feel free to use what you like best. I often sub the onions with 1 tablespoon chives.

- Note: Country-style mustard gets hotter when you prepare the dressing in advance. If you do so, you should consider reducing the amount of mustard used.

- Place a pizza stone in the oven and preheat to 475°F. OR preheat your pizza oven (here’s the pizza oven we use).
- Slice the green parts off of the scallions so they form long ribbons. In a small skillet, heat 1/2 tablespoon olive oil. Add the scallions and sauté until slightly tender, stirring, for 1 minute. Remove from the heat.
- When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don’t have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see How to Stretch Pizza Dough for instructions. Then gently place the dough onto the pizza peel.
