Steps:
- In a heavy bottomed saute pan over medium-high heat, add the bacon. Render the bacon until crisp. Remove from pan and reserve. Add the onion and saute until tender, about 3 minutes.
- Add the okra and tomatoes, making sure to add the reserved juice from the tomatoes to the saute pan. Season with salt and pepper and simmer for 15 minutes.
GRILLED OKRA WITH SUN-DRIED TOMATOES

- Toss 1 pound trimmed okra with 2 tablespoons oil from a jar of sun-dried tomatoes, 1/2 teaspoon each kosher salt, celery seeds and paprika, and a pinch of cayenne. Thread onto double metal skewers, adding sun-dried tomatoes to both ends of each. Grill over medium-high heat, turning occasionally, until tender and charred, 8 to 10 minutes.
GRILLED SAUSAGE OKRA AND TOMATO SALAD

Steps:
- Heat gas or charcoal grill.
- Brush sausages with oil, sprinkle with pepper; place on grill over medium heat. Cover grill; cook 12 to 14 minutes, turning occasionally until browned and heated thoroughly, set aside to cool, about 10 minutes. Cut diagonally into 1/2-inch slices.
- Meanwhile, in 2-quart saucepan, heat water and salt to boil over high heat; add okra. Cook 2 to 3 minutes or until crisp-tender. Drain; rinse with cold water to cool. Drain well.
- In medium bowl, toss okra, tomatoes in 1/2 cup of the dressing . Place vegetables in grill basket (grill "wok"), or place directly on grill rack; reserve dressing.
- Place grill basket on grill over medium heat; cover grill. Grill vegetables, brushing with reserved dressing after 5 minutes. Grill for an additional 5 to 10 minutes or until tender. Cool 10 minutes.
- Meanwhile, in 10-inch skillet, cook bacon over medium heat 8 to 10 minutes, stirring occasionally, until crisp. Drain on paper towels. Crumble bacon, set aside.
- On 4 individual serving plates, arrange salad greens. Top each with sausage and grilled vegetables. Drizzle with remaining 1/2 cup dressing. Garnish with basil, onions, bacon and pepper. Serve immediately.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.
- Remove bacon from pan and saute okra, onion, pepper and celery until tender. Add tomatoes, salt and pepper and cook until tomatoes are heated through.
- Garnish with crumbled bacon, if desired.

Steps:
- Trim stem ends of okra, wash and drain.
- In large frying pan heat oil and butter and saute scallions until they are soft. Add the okra and saute on all sides for 2 minutes. Using slotted spoon remove okra and onions from pan and reserve.
- Place tomatoes, parsley and garlic in pan and simmer a few minutes, just until ingredients are blended.
- Return okra to pan; cover and simmer until okra is crisp-tender, but not mushy.

SEARED OKRA AND TOMATOES
Steps:
- Heat 1 tablespoon of the olive oil in a medium skillet over medium-high heat. When the oil is hot, add the onion and garlic, and sauté for 2 minutes. Add the tomato paste, diced tomatoes, salt, pepper, rosemary, red-pepper flakes, bay leaves, and vinegar, and cook for 10 minutes, until the tomatoes start to break down and form a paste. Add the chicken stock, return to a simmer, and cook over low heat for 10 to 15 minutes, stirring occasionally.
- While the tomato sauce cooks, heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. When the oil is very hot and shimmering, sauté the okra for about 5 minutes, until lightly browned, then add the okra to the tomato sauce. Simmer the okra tomato mixture for 2 to 3 more minutes, remove the bay leaves, and then serve.

- Heat grill to medium heat.
- Brush sausage with olive oil and season with salt and pepper; grill, covered, turning occasionally, until browned and heated through, about 12 to 14 minutes.
- Let cool 10 minutes, then slice, on the diagonal, into 1/2 inch pieces.
- Meanwhile, in a 2 quart saucepan, heat salted water to a boil over high heat; add okra and cook until crisp tender, about 2 to 3 minutes; drain and rinse with cold water.
- In a medium bowl, toss together okra, tomatoes, and 1/2 cup of the dressing; grill vegetables, covered, about 5 minutes, brush with additional dressing, and grill until tender, about 5 to 10 minutes more; let cool 10 minutes.
- Cook bacon in a skillet, over medium heat, until crisp, about 8 to 10 minutes; drain on paper toweling.
- Arrange lettuce greens on individual serving plates, top with sausage, then grilled vegetables; drizzle with remaining dressing.
- Garnish with bacon, basil, green onions, and freshly ground black pepper.

SAUTéED OKRA AND TOMATOES
Steps:
- In a small bowl, combine the mustard seeds, cumin seeds, and coriander; set aside. Heat the oil in a large skillet set over medium heat. Add the onion, and cook, stirring, until soft, about 3 minutes.
- Raise heat to medium-high; add the spice mixture, okra, and 1/2 cup water. Cook, stirring, until the okra is bright green and just tender, about 6 minutes, adding more water if the skillet becomes too dry.
- Add the tomato wedges, and cook until just heated through, about 1 minute. Season with salt and pepper. Serve immediately.

CURRIED OKRA WITH TOMATO
If you like it hot, use as many of the hot chilies as you like, or leave them out. With some grilled chicken or fish or shrimp, makes a very nice meal. Cooking time does not include defrosting time if you have to use frozen okra.

Steps:
- If fresh okra is used, trim off tough stems.
- If frozen okra is used, defrost and drain.
- Put the tomatoes in a saucepan and bring to the boil.
- Cook, stirring often to prevent sticking, until the tomatoes are reduced to about two cups.
- Heat the oil in a saucepan over medium high heat and add onions and garlic.
- Cook, stirring, until the mixture is softened.
- Sprinkle with curry powder and ground coriander and cook briefly.
- Stir in the tomatoes and cook about five minutes; reduce heat if mixture is sticking.
- Stir in chilies and fresh coriander.
- Add the okra, chicken broth and salt and pepper to taste.
- Bring to a boil, reduce heat and simmer 15 minutes or until the okra is tender.
