TURNIPS/RUTABAGA SIMMERED IN DATE SYRUP (MAYE' AL-SHALGHAM)

We enjoy this delicious Iraqi recipe. It gives turnips/rutabaga/swedes a delicately sweet taste and a lovely hue. Modified from, Delights from the Garden of Eden by Nawal Nasrallah. NOTE: If using the small real white and purple type of turnip do not leave to soak in the water date syrup mixture after cooking as they may become waterlogged.

Turnips/Rutabaga Simmered in Date Syrup (Maye' Al-Shalgham) image

Steps:

  • Peel turnips and cut into thick wedges and then slice into each wedge sideways but not all the way through. (I say sideways yet you may not understand what I mean by that but I don't know the word for it!? Not vertical, not horizontal) This will be to let the date syrup soak in better.
  • Put them all in a medium pot, add date syrup and cover slightly with cold water.
  • Bring to a boil, lower heat and simmer for about 30-45 minutes depending on turnips age.
  • Serve warm, sprinkled with a dash of sea salt if wished.
  • If not eating right away see note in introduction.
  • Enjoy!

1 lb small turnip (by small I mean not the huge rutabagas, they are also called swedes in some European countries)
4 tablespoons date molasses, I like to add more to taste (also called date syrup or dibis tamar in Arabic, found in Middle Eastern stores)
sea salt, to taste
water, to cover

Roasted Parsnips, Turnips, and Rutabagas with Ancho-Spiced Honey Glaze image

Steps:

  • Stir 1/2 tablespoon melted butter, honey, lemon juice, garlic, thyme, ground chiles, cumin, cinnamon, and pinch of cayenne pepper in small bowl to blend. Season to taste with salt. Let glaze stand at least 45 minutes to allow flavors to blend. Do AHEAD: Can be made 2 hours ahead. Let stand at room temperature.
  • Preheat oven to 400°F. Line large rimmed baking sheet with parchment paper. Spread parsnips, turnips, and rutabagas evenly on prepared baking sheet. Drizzle remaining 1 1/2 tablespoons melted butter and olive oil over; sprinkle with salt and pepper and toss to coat well. Roast until vegetables are soft and browned in spots, tossing occasionally, about 50 minutes.
  • Pour glaze over vegetables; toss to coat evenly. Roast until glaze is absorbed and vegetables are browned, tossing occasionally, about 15 minutes longer. Serve warm.

1 1/2 tablespoons extra-virgin olive oil

Steps:

  • Heat oil in a large saucepan over medium heat. Add onion; cook and stir until soft, about 10 minutes. Stir in ginger-garlic paste and chile peppers; cook until fragrant, about 1 minute.
  • Stir tomatoes, coriander, cumin, turmeric, and salt into the saucepan; mix well. Add turnips and hot water; stir well. Cover and bring to a boil. Reduce heat and simmer until turnips are tender, 20 to 30 minutes. Add brown sugar and coarsely mash the turnips.
