Steps:

  • Heat gas or charcoal grill. In large bowl, mix all ingredients except buns and lettuce. Shape mixture into 8 patties, about 1/2 inch thick.
  • Place patties on grill. Cover grill; cook over medium heat 10 to 15 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F. Serve with lettuce in buns.

Everything Salmon Burgers with Scallion Sour Cream-Cream Cheese Sauce image

Steps:

  • Preheat outdoor grill if using to medium high. Prepare hot grill with cooking spray. Indoors, use a large skillet rather than a grill pan and preheat with a drizzle of extra-virgin olive oil to medium-high heat.
  • Place salmon in food processor and pulse to coarse grind meat to form burgers. Transfer fish to a mixing bowl and season with grill seasoning, poppy seeds, sesame seeds, and dill. Mix and form 4 patties. Drizzle the burgers with extra-virgin olive oil.
  • Cook burgers 3 minutes on each side for a pink center, 4 to 5 minutes on each side for fully cooked fish.
  • While burgers cook, combine in a bowl the cream cheese and the scallions and fold in sour cream and lemon juice.
  • Top the burgers with lettuce, tomato, onion and sauce on crusty, toasted buns.

  • Preheat a grill to medium high. Form ground beef (preferably chuck) into 6-ounce patties and make an indentation in each. Season the patties on both sides with salt and pepper. Steps:

  • Stir together 2 T sour cream, green onion, bread crumbs, salt and freshly ground pepper.
  • Add ground beef; mix well.
  • Shape the ground beef mixture into one 3/4-inch thick patty.
  • Place the patty in a small baking dish.
  • Loosely cover with clear plastic wrap or waxed paper.
  • Micro-cook, loosely covered, on 100% power for 1 1/2 to 2 minutes.
  • Turn patty over; rotate the baking dish a half turn.
  • Micro-cook, loosely covered, on 100% power for another 1 1/2 to 2 minutes or until done.
  • Drain off fat.
  • Serve on toasted bun with lettuce and tomato.
  • Dolop with additional sour cream, if desired.

  • Set oven control to broil.
  • Mix all ingredients except the English muffins.
  • Shape into 4 patties, each about 3/4 inch thick.

  • Gently massage ground beef, sour cream, thyme, rosemary, parsley, black pepper, and salt until just incorporated. Divide meat into four portions. Flatten each portion to 3/4-inch thick. Gently press center of patty down to create a slight depression, about 1/2-inch diameter. Cover and chill patties 1 hour and up to 8 hours.
  • Coat red onion slices with coconut oil and sprinkle with salt and pepper. Remove patties from refrigerator and grill to desired doneness. While the patties are grilling, also grill the onion slices until lightly charred.
  • Serve hamburger on whole wheat bun and topped with red onions and any condiments of your choice.
