Mary's Grilled Cheese Sandwich with Pepper Jack and Bacon Oil image

Steps:

  • Brush both sides of both slices of bread with the bacon oil. Place the cheese on top of one slice and top with the other slice of bread.
  • Heat a griddle on top of the stove over medium-high heat. Place the sandwich on the griddle and grill for about 1 minute on each side, or until the bread is golden brown and the cheese is melted. Slice the sandwich into 8 small serving pieces.

2 teaspoons bacon flavored oil
2 slices pepper jack cheese

Sauteed Spinach with Bacon and Onions image

Steps:

  • In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. Add the vinegar, crushed red pepper flakes, salt and pepper and stir; add the spinach and toss it around, cooking until it's just wilted, 1 to 2 minutes. Serve immediately so the spinach is wilted but not soggy.

1 tablespoon bacon grease
1/2 yellow onion, finely diced
3 cloves garlic, minced
1 tablespoon red wine vinegar
Pinch of crushed red pepper flakes (for a little spice because Trisha likes it)
Salt and ground black pepper

Hasselback Chicken -- Cajun With Pepper Jack & Spinach image

Steps:

  • Preheat the oven to 350 degrees. Using a sharp knife, make slits in the chicken breasts that are about 3/4 inches wide, making sure not to cut all the way down through the bottom of the chicken breast. You will have about 7 or 8 slits per chicken breast, depending on how large your chicken breasts are. Season the chicken with salt and pepper.
  • Place the spinach evenly in the slits of the chicken.
  • Combine the breadcrumb and Cajun seasoning in a small bowl. Sprinkle the mixture evenly over the chicken. Place the pepper jack slices in the slits of the chicken.
  • Place each chicken on its own lightly greased sheet of tin foil and make a "bowl", surrounding each chicken breast. This keeps the juices contained.
  • Bake in the preheated oven for 30 minutes, or until the chicken is cooked through. Remove each chicken breast from its tin foil "bowl" and place on a serving dish.
  • Enjoy!

Potato, Spinach and Red Bell Pepper Salad with Warm Bacon Vinaigrette image

Steps:

  • Steam potatoes just until tender, about 7 minutes. Transfer potatoes to large bowl. Char bell pepper over flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel, seed and chop pepper. Transfer to bowl with potatoes.
  • Sauté bacon in small skillet over medium heat until crisp, about 3 minutes. Using slotted spoon, transfer bacon to paper towel and drain. Whisk vinegar, oil and garlic in small saucepan. Stir over low heat just until warm, about 1 minute. Stir in bacon. Add warm vinaigrette to potato mixture. Mix in celery and spinach. Season to taste with salt and pepper and serve.

A friend made some grilled cheeseburger sandwiches and I decided to put my own little spicy spin on it. I use potato bread and cajun seasoned bacon. YUM!

Grilled Pepper Jack Bacon Burger Sandwiches with Jalapeños image

Steps:

  • Fire up grill. Mix burger ingredients until bacon is evenly distributed and meat soaks up liquid.
  • Grill until juices run clear or slightly pink. Cover burgers with foil to keep warm.
  • Spread butter, margarine or mayo on one side of each slice of bread. Place four slices of bread, butter side down in large fry pan. Put one slice of pepperjack on each slice of bread. Divide jalapenos into four portions and top each slice with jalapenos. Top jalapenos with rest of pepperjack. Add rest of bread, butter side up.
  • Fry on medium until cheese is melted.
  • Open up grilled cheese and jalapeno sandwich and place warm burger inside and close sandwich. Slice down the middle.
  • Enjoy!

Steps:

  • Cook bacon in a large skillet until crisp, then transfer with tongs to paper towels to drain. Reserve 3 tablespoons fat from skillet, discarding remainder. Crumble bacon.
  • Toast pecans in 2 teaspoons olive oil in skillet over moderate heat, stirring, until 1 shade darker, then transfer to paper towels to drain. Season nuts with salt and pepper and coarsely chop.

Steps:

  • Preheat a grill for medium heat.
  • While the grill preheats, place the bacon in a large skillet over medium-high heat. Cook until browned on both sides. Remove from the pan, and drain on paper towels.
  • Rub the poultry seasoning onto the chicken pieces, and place them on the grill. Cook for about 6 minutes per side, or until no longer pink in the center. Top each piece of chicken with 2 slices of bacon and 1 slice of pepperjack cheese. Grill for 2 to 3 more minutes to melt the cheese.
